16 Nature Valley™ granola bars Oats and Honey, crushed
1/3 cup toasted coconut
1/2 cup butter, melted
2/3 cup sugar
2 blocks (8 oz each) cream cheese, softened
1 can (14 oz) sweetened condensed milk
1 package (3.4 oz) coconut cream pudding mix
1 container (8 oz) extra creamy whipped topping
1 can (8 oz) crushed pineapple
Nonstick spray

Steps:

  • In a large bowl, stir together crushed granola bars, toasted coconut, melted butter and sugar until well mixed. Press half of the mixture into a 9x9-inch baking pan that has been generously sprayed with nonstick spray.
  • In a stand mixer, beat together cream cheese, sweetened condensed milk, pudding mix and whipped topping until smooth. Fold in the pineapple, mixing well. Spread whipped mixture on top of crust.
  • Top with remaining granola bar mixture.
  • Cover with plastic wrap and freeze until firm, about 4-6 hours. For best results, remove the cake from the freezer about 10 minutes before serving. To serve, slice and share.

1 (15.25 ounce) package white cake mix with pudding (such as Duncan Hines®)
1 cup water
3 large egg whites
⅓ cup vegetable oil
1 (10 ounce) can pina colada mix
1 (14 ounce) can sweetened condensed milk
1 (12 ounce) container frozen whipped topping, thawed
½ cup sweetened flaked coconut

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Spray a 9x13-inch baking pan with cooking spray.
  • Blend cake mix, water, egg whites, and oil in a bowl using an electric mixer until moistened. Pour batter into the prepared pan.
  • Bake in the preheated oven until a toothpick inserted into the center of the cake comes out clean, 23 to 28 minutes.
  • Poke holes into the hot cake. Pour in pina colada mix and sweetened condensed milk. Let cool completely, at least 2 hours.
  • Spread whipped topping over cake. Sprinkle coconut on top. Refrigerate until ready to serve.

1 (18 1/4 ounce) box white cake mix or 1 (18 1/4 ounce) box yellow cake mix
2 eggs
1/3 cup oil (or as called for by your cake mix)
1 1/3 cups water (or as called for by your cake mix)
1 (15 ounce) can cream of coconut
1 (13 ounce) can condensed milk, sweetened
1 (8 ounce) container prepared topping, whipped
1 1/2 cups coconut flakes

Steps:

  • Preheat oven to 350 degrees.
  • Grease and flour a 9x13-inch pan.
  • Prepare cake as directed on package, but use 2 eggs instead of the number the recipe calls for.
  • Bake as directed.
  • While cake is baking, combine cream of coconut and sweetened condensed milk.
  • When the cake is done, remove from oven and, while it is still hot, punch holes in the top (the handle of a wooden spoon works well). Pour the cream of coconut/condensed milk mixture over top and into all the holes.
  • Let cake cool thoroughly (can be refrigerated to cool). When ready to serve, cover cake with whipped topping and sprinkle coconut flakes on top.
  • Serve thoroughly cooled.

2 cups sugar
6 large eggs, room temperature
1 teaspoon coconut extract
3 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1 cup sour cream
1 can (8 ounces) crushed pineapple, undrained
FROSTING:
1 cup butter, softened
4 cups confectioners' sugar
2 teaspoons coconut extract
3 to 4 tablespoons water
FILLING:
1 jar (18 ounces) pineapple preserves
Dried pineapple slices and toasted sweetened shredded coconut, optional

Steps:

  • In a large bowl, cream butter and sugar until light and fluffy, 5-7 minutes. Add eggs, 1 at a time, beating well after each addition. Beat in extract. Combine the flour, baking powder and baking soda; add to the creamed mixture alternately with sour cream, beating well after each addition., In a food processor, cover and pulse pineapple until almost smooth. Stir into batter. Transfer to 3 greased and floured 9-in. round baking pans. Bake at 350° until a toothpick inserted in the center comes out clean, 20-25 minutes., Cool for 10 minutes before removing from pans to wire racks to cool completely., For frosting, in a large bowl, beat butter until fluffy. Beat in the confectioners' sugar, extract and enough water to achieve a spreading consistency., To assemble, place 1 cake layer on a serving plate; spread with half of the preserves. Repeat layers. 15.25 ounces yellow cake mix (1 box)
1 cup water ((called for on box))
3 eggs ((called for on box))
½ cup vegetable oil ((called for on box))
15 ounces crushed pineapple (1 can, (drain and reserve juice))
14 ounces sweetened condensed milk (1 can)
8 ounces cream of coconut
1½ cups shredded sweetened coconut
2 cups whipping cream
½ cup powdered sugar

Steps:

  • Spray the bottom of a 9 x 13 inch baking dish with non stick cooking spray.
  • Make the yellow cake according to directions on the box.
  • When it is done baking, remove from oven and poke holes all over the entire top of the cake with the other end of a wooden spoon. Do this while the cake is still hot. Pressing the holes about halfway through the baked cake.
  • Mix together the pineapple juice reserved from the crushed pineapple, sweetened condensed milk and cream of coconut together. Whisk until well stirred.
  • Spoon the mixture over the top of the cake trying to pour it into the holes.
  • Let the cake cool completely.
  • Top the cake with the well drained crushed pineapple.
  • In another bowl mix the sweetened whipped cream by beating the whipping cream and powdered sugar in a bowl until thick and it can stand on it's own.
  • Spread carefully over the crushed pineapple.
  • Top with shredded coconut.
  • Store in the fridge until ready to serve.
