3 (20 ounce) cans unsweetened pineapple chunks
1 cup shredded cheddar cheese
1/2 cup butter or 1/2 cup margarine, melted
70 butter flavored crackers, crushed

Steps:

  • In a bowl, combine flour and sugar.
  • Drain the pineapple, reserving 1 1/2 cups of juice.
  • Add juice to flour mixture; mix well.
  • Stir in the pineapple and cheese.
  • Pour into a greased 13x9 inch baking pan.
  • Cover and bake at 350 degrees for 30 minutes.
  • Uncover and stir; bake 10 minutes longer.
  • Combine melted butter and cracker crumbs; sprinkle over the pineapple mixture.
  • Return to the oven for 10-15 minutes or until tests clean.

2/3 cup sugar
2 cups sharp cheddar cheese, grated
1 sleeve Ritz cracker, crushed

Steps:

  • Preheat oven to 350 degrees Fahrenheit.
  • Combine the first four ingredients in a 9x9 dish.
  • Combine the melted butter and the crushed crackers.
  • Spread cracker mixture evenly over the top.
  • Bake for 25 minutes.

1/2 cup sweetened condensed milk
2 tablespoons dark rum
1 large ripe pineapple, leaves intact, quartered lengthwise

Steps:

  • Preheat oven to 350 degrees. Stir together coconut, cookie crumbs, and nuts; set aside. Whisk together sweetened condensed milk and rum; set aside.
  • Cut core from each pineapple quarter; discard. Cut between skin and flesh of each quarter to separate. Arrange, skin sides down, on a rimmed baking sheet. Drizzle with half of the sweetened-condensed-milk mixture. Sprinkle with coconut mixture; drizzle with the remaining sweetened-condensed-milk mixture.
