1 cup BAKER'S ANGEL FLAKE Coconut
1/4 cup pineapple preserves

Steps:

  • Heat oven to 350°F.
  • Prepare dough from Easy Cut-Out Cookies recipe.
  • Roll into 40 balls, using about 1 Tbsp. dough for each ball. Roll, 1 at a time, in coconut until evenly coated on all sides with coconut.
  • Place, 1 inch apart, on baking sheets sprayed with cooking spray. Use thumb to indent centers; fill with preserves, adding about 1/4 tsp. preserves to each indentation.
  • Bake 13 to 15 min. or until coconut is lightly toasted. Cool 3 min. Remove to wire racks; cool completely.

1 cup all-purpose flour
1 teaspoon baking powder
2 cans (8 ounces each) unsweetened crushed pineapple, drained
TOPPING:
1 tablespoon butter, melted
1 cup sugar
2 eggs
2 cups sweetened shredded coconut

Steps:

  • In a large bowl, beat butter and sugar. Beat in egg. Combine flour and baking powder; stir into egg mixture. Press into a 9-in. square baking dish coated with cooking spray. Spread pineapple over crust; set aside., For topping, in a small bowl, beat butter and sugar until blended. Beat in eggs. Stir in coconut. Spread over pineapple. Bake at 325° for 35-40 minutes or until golden brown. Cool on a wire rack before cutting.

My mother, Pauline, made really nice thumbprint cookies, but I never wrote down her recipe. I knew the ingredients, but unless you have the right proportions, you won't get that perfect melt-in-your-mouth texture. So, I did an image search and found a recipe that looked very similar, credited to a great-grandma named Mitzi. Since my last name is Mitzewich, that pretty much sealed the deal. In case you can't decide between a shortbread-focused cookie and a more jammy one, here's how to make both.

1 stick unsalted butter, at room temperature
⅓ cup unsifted powdered sugar
1 teaspoon vanilla extract
⅛ teaspoon almond extract
¼ teaspoon fine salt
1 large egg yolk
1 ¼ cups all-purpose flour
⅓ cup white sugar, or as needed
½ cup fruit jam, divided
1 cup powdered sugar, or as needed
1 tablespoon milk, or as needed

Steps:

  • Preheat the oven to 325 degrees F (165 degrees C).
  • Mix butter and powdered sugar together with a rubber spatula until creamy. Add vanilla extract, almond extract, salt, and egg yolk. Mix with the spatula. Add flour and blend until just combined.
  • Use a sorbet scoop to portion dough into 1/2-ounce (1-tablespoon) balls. Roll balls in a plate of white sugar to coat; roll again between your palms. Place several inches apart on a silicone-lined baking sheet. Flatten balls lightly with your fingers.
  • To make shortbread cookies with a little jam, poke a well into each cookie using the end of a thick wooden spoon dusted with powdered sugar or using one of your fingers. Fill cookies with fruit jam. Tap baking sheet against the counter to let jam settle.
  • Bake in the preheated oven until tops are barely blonde and bottoms are slightly golden, about 15 minutes. Let cool on a wire rack before icing.
  • Meanwhile, mix powdered sugar with a little milk until you have a consistency that will hold its shape when piped. Pipe icing on top of cookies in a zigzag pattern. Let sit for 15 minutes before serving.
  • For a more jam-forward cookie, press your thumb into the cookies to make large, shallow indentations. Spoon in jam. Tap baking sheet against the counter.
  • Bake until not quite golden brown, about 15 minutes. Let rest on pan for 5 minutes before transferring a wire rack. Dust with powdered sugar.

These cookies were always in great demand at our house whenever I made them. Our 5 children loved the pineapple-coconut combination. The only problem was, I couldn't keep them on hand very long. I found this recipe in an Albuquerque newspaper sometime in the '60's and have made them many times since then.

1/2 cup shortening
1/2 cup brown sugar, firmly packed
1/4 cup white sugar
1 egg, beaten
1/2 teaspoon vanilla

3/4 cup crushed pineapple, drained
1/2 package coconut

Steps:

  • Cream shortening and sugars.
  • Add beaten egg mixed with vanilla.
  • Sift flour with soda and salt.
  • Add to mixture alternately with the pineapple and coconut.
  • Mix all items together--well, till it makes a soft batter.
  • Drop by rounded teaspoon onto greased cookie sheets.
  • Leave space for spreading.
  • Bake at 375°F for about 10 minutes or until done.
  • Be careful not to overbake this cookie.

10 tablespoons unsalted butter, at room temperature
1/3 cup packed light brown sugar
1/3 cup plus 2 teaspoons granulated sugar
1 large egg
1 tablespoon fresh lemon juice
1/2 cup dried pineapple chunks, finely chopped, plus more for topping
1/3 cup canned crushed pineapple in juice
1 1/2 ounces cream cheese
1/4 teaspoon pure vanilla extract
1/4 teaspoon finely grated lemon zest
Milk, for brushing

Steps:

  • Whisk the flour, baking powder and salt in a medium bowl. Beat the butter, brown sugar and 1/3 cup granulated sugar in a large bowl with a mixer on medium speed until light and fluffy, about 3 minutes. Beat in the egg, then the lemon juice. Reduce the mixer speed to medium low; mix in the dried pineapple, then the flour mixture until combined. Cover and refrigerate until firm, about 30 minutes.
  • Meanwhile, combine the crushed pineapple, cream cheese, the remaining 2 teaspoons granulated sugar, the vanilla and lemon zest in a bowl with a rubber spatula, breaking up any large pineapple pieces. Refrigerate until slightly firm, at least 30 minutes.
  • Position racks in the upper and lower thirds of the oven; preheat to 350 degrees F. Line 2 baking sheets with parchment paper. Roll the dough into 1-inch balls; arrange 2 inches apart on the baking sheets. Indent each with the back of a floured 1/4 teaspoon measuring spoon; brush with milk.
  • Bake, switching the pans halfway through, until the cookies are slightly puffed, 10 to12 minutes. Remove from the oven andre-indent; spoon in the filling. Return to the oven until lightly browned, 6 to 8 more minutes. Let cool 5 minutes on the baking sheets; transfer to racks to cool completely. Top with dried pineapple.

  • Preheat oven to 350 degrees F (175 degrees C).

I originally got the recipe from foodnework.com but I made a few changes. And a batch goes a long way (you'll like that) ;) Enjoy!

1 1/2 cups granulated sugar
8 ounces unsalted butter (2 sticks, softened)
2 large eggs
1/2 tablespoon coconut extract
1 cup of fine-flaked coconut
1/2 cup of chopped sweetened pineapple (caramelized) or 1/2 cup dried pineapple
2 1/2 cups all-purpose flour
1/2 teaspoon salt
2 tablespoons water
2 teaspoons baking soda

Steps:

  • Soften butter at room temperature.
  • Preheat oven to 400 degrees F.
  • Shred pineapple chunks into smaller bits.
  • Cream butter and sugar until smooth.
  • Add eggs 1 at a time until mixture is fluffy.
  • Beat in coconut extract.
  • Add water.
  • Add the pineapple and coconut.
  • In a separate bowl sift together the flour, baking soda and salt.
  • Stir the flour mixture into the butter mixture.
  • Form cookie dough into a ball and wrap in plastic.
  • Chill for 2 hours.
  • Roll dough into by the 1/4 into balls.
  • Lightly flatten top.
  • Lay balls an inch apart and bake for 7 minutes.

After baking, simply dollop your favorite preserves in their centers and round up your closest mates for tea.

1 stick unsalted butter, softened
1/3 cup sweetened condensed milk
1/2 teaspoon pure vanilla extract
1/2 teaspoon kosher salt (we use Diamond Crystal)
1/4 teaspoon baking powder
1 cup unbleached all-purpose flour
1/2 cup unsweetened finely shredded coconut
4 ounces semisweet baking chocolate, such as Baker's, chopped
1/2 cup orange marmalade or other flavor jam, such as pineapple or strawberry, or a combination

Steps:

  • In a bowl, whisk together butter, condensed milk, vanilla, salt, and baking powder until thoroughly combined. Add flour, stirring with a spoon until a dough forms. Cover and refrigerate until firm enough to handle but still tacky and not too stiff, about 30 minutes.
  • Preheat oven to 350°F. With dampened hands (to prevent sticking), roll level tablespoons of dough into balls. Toss in coconut, pressing gently to adhere. Transfer to a parchment-lined baking sheet, spaced 1 inch apart. Press each center with a thumb or finger to create a deep indentation.
  • Bake until cookies are just set and golden on bottoms but still soft, about 10 minutes. Press down centers again, if needed. Let cool completely on sheet. Melt chocolate in a bowl set over a double boiler, or in a microwave on low. Dip bottoms of cookies in chocolate and return to parchment-lined sheet, bottom-sides down.
  • Bring marmalade to a boil in a small saucepan; strain. While still warm, spoon about 3/4 teaspoon into center of each cookie. Refrigerate until chocolate and marmalade are set, at least 30 minutes. Set cookies can be refrigerated in an airtight container up to 3 days.
