This is one of my favorite slow cooker recipes. It's wonderful with rice or potatoes and any vegetable. It also reheats well for lunch the next day. -Ruth Chiarenza La Vale, Maryland

2 cups pineapple juice
1 can (8 ounces) unsweetened crushed pineapple, undrained
1/2 cup packed brown sugar
1/2 cup sliced celery
1/2 cup cider vinegar
1/2 cup reduced-sodium soy sauce
1 boneless pork loin roast (3 to 4 pounds)
1/2 teaspoon salt
1/4 teaspoon pepper
3 tablespoons canola oil
1/4 cup cornstarch
1/3 cup cold water

Steps:

  • Mix first six ingredients. Cut roast in half; sprinkle with salt and pepper. In a large skillet, heat oil over medium heat; brown roast on all sides., Transfer to a 5-qt. slow cooker. Pour pineapple mixture over top. Cook, covered, until a thermometer inserted in roast reads at least 145°, 3-4 hours., Remove roast from slow cooker; keep warm. Transfer cooking juices to a saucepan; bring to a boil. Mix cornstarch and water until smooth; stir into cooking juices. Return to a boil; cook and stir until thickened, 1-2 minutes. Serve with roast.

1 (20 ounce) can pineapple chunks, undrained
1 ½ cups chopped dried cranberries

Steps:

  • Rub the pork roast on all sides with salt and pepper, and place in a slow cooker. Pour in the pineapple chunks and juice, and sprinkle in the cranberries.
  • Cover, and cook 7 hours on Low.

1 teaspoon kosher salt
1 teaspoon ground black pepper
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
1/4 teaspoon dried thyme
1/4 teaspoon powdered ginger
3 lbs pork tenderloin
1 (20 ounce) can pineapple chunks in juice, undrained
1/4 cup light soy sauce
1 1/2 cups dried cranberries, chopped

Steps:

  • Combine salt, pepper, onion powder, garlic powder, thyme and ginger in a small bowl. Sprinkle all over pork tenderloin and rub in well.
  • Place pork in slow cooker. Add pineapple with juice, soy sauce and cranberries. Cook on low 6-8 hours or high 3-4 hours. Slice and serve with sauce.

1 (3 -4 lb) pork loin roast (trimmed)
2 teaspoons seasoning salt
1 teaspoon pepper
1 teaspoon garlic powder
1 teaspoon onion powder
1 (20 ounce) can pineapple chunks (drained)
1 (15 ounce) can whole berry cranberry sauce
1 onion, sliced into rings

Steps:

  • Pierce meat with a knife in several places.
  • Mix all of spices together and sprinkle over entire roast.
  • Place onions in the bottom of a roasting pan coated with cooking spray. Place roast on top of onions.
  • Mix cranberry sauce and pineapple together.
  • Pour over roast. Cover and bake at 350 about 1 to 1 1/2 hours or till internal temp reads 155.
  • Remove from oven for about 10 mins before slicing.
  • The last step is crutial. This brings the meat to proper temperature and allows for perfect slicing.

1 boneless rolled pork loin roast (2-1/2 to 3 pounds)
1 can (14 ounces) jellied cranberry sauce
1/2 cup sugar
1/2 cup cranberry juice
1 teaspoon ground mustard
1/4 teaspoon ground cloves
2 tablespoons cornstarch
2 tablespoons cold water
Salt to taste

Steps:

  • Place pork roast in a 5-qt. slow cooker. In a small bowl, mash cranberry sauce; stir in the sugar, cranberry juice, mustard and cloves. Pour over roast. Cover and cook on low for 6-8 hours or until meat is tender. , Remove roast and keep warm. Skim fat from juices. Pour into a 2-cup measuring cup; add water if necessary to measure 2 cups. Pour into a small saucepan. Bring to a boil over medium-high heat. Combine cornstarch and cold water until smooth; stir into pan juices. Bring to a boil. Cook and stir for 2 minutes or until thickened. Season with salt. Serve with sliced pork.

  • Remove any string that be tying the pork and pat the roast dry. Season the roast with kosher salt, pepper and garlic powder. (Get the seasoning in all the crevices). Place roast in the slow-cooker.
  • In a large bowl mix together pineapple, cranberry sauce, nutmeg, cloves and 1/2 teaspoon kosher salt. Pour mixture over the pork in the slow-cooker. Cover and cook for 7.5 hours on low.
