This is a not too sweet, not too tart pineapple lemonade - thus the name "just right pineapple lemonade". Feel free to use store-bought lemonade for even faster preparation.

Ingredients

8 cups water, divided
¾ cup white sugar
1 fresh pineapple
1 ½ cups fresh squeezed lemon juice

Steps:

Combine 1 cup water and sugar in a saucepan and bring to a gentle simmer over medium-high heat, stirring often. Simmer until sugar is dissolved. Remove from heat and allow simple syrup to cool.
Cut off pineapple crown and remove the outer skin. Cut pineapple flesh into chunks and add to a high-capacity blender (such as Vitamix®). Pour in 2 cups water and blend until liquefied.
Pour liquefied pineapple juice into a pitcher. Add remaining water, lemon juice, and simple syrup. Stir before serving.

1 fresh pineapple
4 cups water
½ cup freshly squeezed lemon juice
1 packet sweetener of your choice, or to taste
2 cups ice cubes

Steps:

Core pineapple using a pineapple corer or slicer. Break up into chunks and measure out 2 cups. Save juices.
Combine 2 cups pineapple and juices, 2 cups water, and lemon juice in a blender. Blend until smooth. Pour into a pitcher. Add remaining 2 cups water and sweetener. Stir and serve over ice.

8 ounces pineapple divided into 8 pieces (4 to be muddled, 4 for garnish)
8 teaspoons honey simple syrup, recipes follows
4 heaping teaspoons chopped mint leaves, plus 4 sprigs for garnish
Ice
2 lemons, juiced
16 ounces seltzer
4 ounces limoncello, optional
4 tablespoons water
4 tablespoons honey

Steps:

Add a piece of pineapple, 2 teaspoons simple syrup, and 1 teaspoon chopped mint to each of 4 tall glasses and muddle. Fill half of each glass with ice.
In a pitcher, mix together the lemon juice, seltzer and limoncello, if using. Divide the mixture among the glasses and garnish with fresh pineapple and mint sprigs.
Heat the water and honey in a small pot over low heat. When the mixture is hot remove it from the heat and let cool.
