This fruit salsa served with tortilla chips is great for summer barbecues. It can also be served alongside fish and chicken entrees. -Mary Gloede, Lakewood, Wisconsin

1 cup chopped peeled mango
1 cup pineapple tidbits
1/2 cup diced sweet red pepper
1 plum tomato, seeded and chopped
3 tablespoons minced fresh cilantro
2 green onions, sliced
2 tablespoons lime juice
1 tablespoon lemon juice
1 jalapeno pepper, finely chopped
Tortilla chips

Steps:

  • In a large bowl, combine the first nine ingredients. Cover and refrigerate for 1 hour or until chilled. Serve with tortilla chips.

This salsa is so easy to make and versatile too. Add what you like, leave out what you don't like. It should taste as fresh as summer! Great with fish, chicken, pork, chips, or just with a spoon! This is a do ahead recipe for sure. It taste better the next day. Play with this salsa, I have added grapes, apples, dried cranberries, cantaloupe, honeydew melon, watermelon; just balance sweet with acid of lime or lemon. Have fun with it!

3 slices fresh pineapple
1 red bell pepper
1 jalapeno pepper
2 large mangos - peeled, seeded, and diced
1 small red onion, diced
¼ cup chopped cilantro
1 lime, juiced
½ teaspoon lime zest

Steps:

  • Preheat an outdoor grill for medium-high heat; lightly oil the grate.
  • Cook the pineapple, red bell pepper, and jalapeno pepper on the preheated grill, turning frequently, until the pineapple has mild grill marks and the peppers are browned on all sides, about 3 minutes for pineapple and 5 to 7 minutes for peppers. Carefully remove from grill and place peppers in paper bag to cool.
  • After peppers are cool, rub skins off gently with paper towels, cut in half, and remove and discard seeds. Cut the cooled pineapple and peppers into a small dice and place into a bowl. Add the mango, red onion, cilantro, lime juice, and lime zest; stir to combine. Cover the bowl with plastic wrap and refrigerate for 8 hours to 1 day before serving.

1 small mango, diced
1/4 cup Equal sugar substitute

Steps:

  • Boil 1 cup water with 2 tbsp sugar. Add tapioca and cook for 35 minutes. Drain. Set aside.
  • Boil agar agar in 1-1/2 cups water with pineapple syrup for 5 minutes. Strain over bowl. Add tapioca, mango and sugar. Stir. Arrange each slice of Pineapple into desired individual mold. Pour 1/4 cup tapioca mixture. Cover and chill until set.

1 ½ cups mango, diced
1 cup water
1 cup sugar
1 ½ cups mango, diced

Steps:

  • Combine water, sugar, and mangoes in a pot over medium heat. Once the sugar has dissolved, simmer for 30 minutes and reduce.
  • Pour simple syrup through a strainer and remove excess liquid, then let it cool to room temperature.
  • In a blender, combine simple syrup, pineapple, and the remaining mango. Blend until well-combined.
  • Pour into an 8×8 inch (20x20 cm) baking dish and freeze for at least 12 hours.
  • Take out of the freezer and let sit for 5-10 minutes before scooping.
  • Serve.

3 fresh honey mangoes, peeled and chopped
½ cup evaporated milk
3 tablespoons white sugar

Steps:

  • Combine 4 cups water and sago pearls in a saucepan; bring to a boil. Cook and stir for about 3 minutes, remove saucepan from heat. Cover and let stand until sago pearls are semi-transparent, 2 to 3 minutes.
  • Drain hot water from sago pearls in a strainer and rinse under cold running water until water runs clear.
  • Blend 2 cups water, mangoes, evaporated milk, and sugar in a blender until thick and smooth; pour into a bowl and stir in sago pearls. Refrigerate until chilled, at least 30 minutes.
