A scrumptious pineapple and bread cube stuffing that is great as a side dish with ham. I often make this dish for the holidays.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Grease a 9 inch baking pan.
- In a mixing bowl, cream margarine and sugar. Beat in the eggs one at a time, then add the pineapple and bread cubes.
- Bake in a 350 degree oven for one hour. Let sit a few minutes to firm up before serving

HAWAIIAN HAM AND PINEAPPLE STUFFING

Steps:
- Position racks in the upper and lower thirds of the oven; preheat to 250 degrees F. Spread out the bread on 2 baking sheets. Bake, rotating the pans and stirring halfway through, until lightly toasted, 1 to 1 1/2 hours.
- Increase the oven temperature to 375 degrees F. Butter a 3-quart baking dish. Melt 4 tablespoons butter in a large pot or Dutch oven over medium-high heat. Add the ham, onion, celery, jalapeño, thyme, sage, 1 teaspoon salt and a few grinds of pepper; cook, stirring occasionally, until softened, about 6 minutes. Add the chicken broth and bring to a simmer, then remove from the heat. Let cool slightly.
- Whisk the eggs in a large bowl. Stir in the bread and ham mixture. Transfer the stuffing to the prepared dish. Dot with 2 tablespoons butter. Cover with foil and bake 30 minutes.
- Meanwhile, heat the remaining 1 tablespoon butter in a medium skillet over medium-high heat. Add the pineapple and cook until lightly browned, about 3 minutes. Add the brown sugar and stir until just dissolved, about 30 seconds.
- Uncover the stuffing and scatter the pineapple on top. Bake until golden brown, 20 to 30 minutes.
PINEAPPLE STUFFING
This baked pineapple stuffing is so good with a ham dinner! Made with soft bread, sweet pineapple, butter, and eggs. It'll be the highlight of your Easter!

Steps:
- Preheat the oven to 350 degrees F and lightly mist a 1.5-quart baking dish with non-stick spray.
- Place the butter, sugar, and salt in a large bowl and cream together with an electric mixer until very pale and fluffy (about 5 minutes on high speed).
- Whip in the eggs, one at a time, allowing each one to fully incorporate before adding the next.
- Scrape the bottom and sides of the bowl with a silicone spatula, and fold in the pineapple and it's juice.
- Tear the bread into 1-inch pieces and fold it into the pineapple mixture.
- Transfer the mixture to the prepared baking dish and bake for 1 hour, or until bubbly and beginning to turn golden.
- Serve warm.

- Place ham in roasting pan. Score the surface with shallow diagonal cuts, making diamond shapes; insert cloves into diamonds. Cover and bake at 325° for 1-1/2 hours. Drain pineapple, reserving 1/4 cup of the juice. Combine brown sugar and reserved pineapple juice; pour over ham. Arrange pineapple slices and cherries on ham. Bake, uncovered, 30-45 minutes longer or until a thermometer reads 140° and the ham is heated through.

- Preheat the oven to 350 degrees F. Spray an 11-by-7-inch baking dish with cooking spray.
- Arrange the bread cubes in an even layer on a sheet pan. Bake until the bread is just beginning to dry but not browned, about 5 minutes. Set aside.

HAWAIIAN PINEAPPLE STUFFING
This is my take on pineapple stuffing (or pineapple filling). I had another recipe and I've tweaked it to my liking so it's not as sweet but still just as delicious! I started making this just for Easter but now it is requested ths I bring it to all holiday meals because it's like getting to eat a dessert with dinner! It's a very dense dish and definitely not for the faint of heart. It's also good served with a scoop of vanilla ice cream on top.

- Preheat oven to 350.
- Cream butter and white sugar in a large bowl.
- Beat in eggs and vanilla.
- Stir in crushed pineapple.
- Fold in bread cubes, taking care to make sure that all pieces are covered with the pineapple mixture.
- Pour stuffing mixture into a greased 9x13 glass baking dish.
- Sprinkle brown sugar over the top (use more or less to taste).
- Bake, uncovered, for 45-55 minutes until the center is firm and springs back when touched and the brown sugar is nice and crunchy.
- If the brown sugar starts burning before the center is set, cover it with tinfoil and continue baking.

PINEAPPLE STUFFING
SO EASY!! I originally got the recipe from "At Home with Arlene Williams"...after playing with it, my mom and I tweaked it and made it exactly how we like it! Everybody LOVES it, and it has become a staple with any holiday meal that we serve ham (and my favorite dish!). I usually add a little more sugar than the 1/2 cup called for, but the original recipe called for 1 cup and it was WAY too sweet! :)
