PINEAPPLE BREAD SOUFFLE
So simple and so delicious you'll want to make an extra one for the next day. It's always the requested dish to bring to parties, from picnics to Thanksgiving. You don't know whether to eat it as a side dish or dessert, but it will be gone either way. My mom calls it 'white trash souffle' because it's best made with that long-lasting, favorite white bread! If desired, garnish with pineapple slices or maraschino cherries.

Steps:
- Make waffle batter:
- Stir together yeast, warm water, and 1 teaspoon sugar in a small bowl and let stand until foamy, about 5 minutes. (If mixture doesn't foam, discard and start over with new yeast.)
- Whisk together eggs, buttermilk, and oil. Sift together flour, baking powder, baking soda, salt, and remaining 2 tablespoons sugar into a large bowl. Add egg mixture and whisk until combined but still lumpy. Add yeast mixture and whisk until combined but still lumpy. Chill batter, covered, at least 8 hours. Bring batter to room temperature, then stir in 1 cup finely chopped pecans.
- Prepare pineapple topping while batter comes to room temperature:
- Melt butter in a 12-inch heavy skillet over low heat and scrape seeds from vanilla bean into butter (save pod for another use). Increase heat to moderately high, then cook pineapple, stirring occasionally, until heated through, 8 to 10 minutes. Keep warm, covered.
- Cook waffles:
- Preheat oven to 250°F and preheat waffle iron.
- Brush waffle iron lightly with vegetable oil and spoon batter into iron, using about 1 1/2 cups for 4 (4-inch) square Belgian waffles and spreading evenly. Cook according to manufacturer's instructions, then transfer directly onto oven rack to keep warm. (Don't stack waffles; they will stay crisp if kept in 1 layer.)
- Serve waffles topped with pineapple and sprinkled with remaining 1/2 cup (coarsely chopped) pecans.

- Optionally rub both sides of apple slices with sugar and cinnamon. This isn't necessary (the apples are plenty sweet), but it does make them look better because the sugar caramelizes and the cinnamon just works perfectly with apples.

- Add Pineapple Coconut Syrup ingredients to a medium saucepan. Cook over medium high heat, stirring occasionally, until the sugar dissolves and the mixture comes to a boil. As soon as mixture boils, reduce heat to medium low and simmer for 10-15 minutes, uncovered, or until it thickens into syrup consistency, stirring occasionally. Syrup will continue to thicken as it cools. Set aside. (Note: Syrup bubbles up quite high while cooking)
- Meanwhile, dry roast macadamia nuts (for waffles and topping) in a skillet over medium heat, stirring occasionally until toasted. Remove to a cutting board (or food processor) and chop when cool enough to handle. Don’t skip this step – this MAKES the macadamia nuts!
- Mix the dry ingredients in a medium bowl. Mix the wet ingredients in another medium bowl, stirring in the pineapple last. Gently whisk wet and dry ingredients together until barely combined. It will have a "pebbled" look. Add additional coconut milk if consistency is too thick (will depend on coconut milk you use).
- Proceed to cook waffles in waffle iron (sprayed with non-stick cooking spray) per manufacturer’s directions.
