This bread machine pizza dough will make pizza night your favorite meal of the week! Perfectly crispy, chewy, yet pillowy soft this homemade pizza dough beats anything you'll ever get at the store. Plus, it's super simple!

4 cups bread flour (or all-purpose flour)
1 tbsp kosher salt ((reduce by 1/3 if using table salt))
1 3/4 cups warm water ((100°F or less))
1 tbsp granulated sugar
1 tbsp Active Dry Yeast (or Instant Dry Yeast)
4 tbsp olive oil

Steps:

  • Add all ingredients to the bread machine's baking pan in the order listed (4 cups flour, 1 3/4 cups water, 1 tbsp salt, 1 tbsp sugar, 1 tbsp dried active yeast, 4 tbsp oil). Close the lid and turn the bread maker to the "leavened dough" cycle which typically runs for 1 hour 30 minutes. After about 20 minutes of the cycle check on the dough to make sure that all flour is incorporated and you have a smooth soft ball. If the dough looks too runny, add a little more flour, one table spoon at a time, until the dough comes into a soft ball. Do not add too much flour or the pizza will be doughy and dense.
  • Preheat oven: Meanwhile, place the baking rack in the top 1/3rd of the oven, then put the baking stone or steel on top. Preheat the oven to 550F or as high as your oven will allow for 1 hour before baking.
  • Divide and Shape balls: Once the dough cycle is complete turn the dough out onto floured surface and divide into 4 equal pieces, use a kitchen scale if you prefer to be precise.Shape each piece into a taught ball. To do so, flatten the ball into a patty, then fold it in half, then in half again. Continue folding in half until it is too hard to fold it in half again. Now tuck all ends under until you have a smooth, taught ball. Set aside, smooth side up to rest on floured surface for about 15 - 20 minutes, spacing them about 4 inches. Lightly sprinkle with flour and cover with a tea towel to prevent a crust from forming. (See Note 1)
  • Prepare the toppings: depending on your preference prepare the toppings & sauce for the pizza.
  • Stretch: flour your work surface well, then add 1 dough ball while keeping the remainder of the pizza balls covered. Now, gently press in the middle of the pizza with the flat part of your fingers working around a circle from the inside towards the outer edges to stretch the ball into a 10" - 12" without deflating 1 inch of the outer edge. Tip: Avoid using a rolling pin to roll the pizza dough, while a simpler and quicker method this will deflate the dough, and the pizza will not be as airy and light as it would be if you stretch the pizza.Transfer the pizza dough onto parchment paper (my preferred method), pizza pan (I use this one, but you can use any) or a wooden or metal pizza peel generously sprinkled with semolina.
  • Add toppings: add about 1/4 cup of pizza sauce and spread it around evenly, staying off the edges. Then add about 1 1/3 cups of grated mozzarella cheese (full fat) followed by toppings of choice. If using a wooden pizza peel to transfer the pizza make sure to shake the pizza on the peel back and forth every so often as you're adding toppings to make sure the pizza does not stick to the pizza peel.
  • Bake: slide the pizza onto the hot stone/steel and bake for about 7 minutes per pizza, or until the edges of the pizza are well browned and the cheese in the middle bubbles, keeping a close eye to make sure that it does not burn. Note the bake time and set the timer for the second pizza for that time. Using a timer is very helpful at preventing the pizza from burning.If baking inside a pizza pan with no pizza stone/steel bake for about 13 minutes or until the edges are well browned and the cheese is bubbly in the middle.
  • Remove from the oven: my favorite way to get the pizza out of the oven is to use a metal pizza peel, it slides under the parchment or pizza easily and is easy to clean and maintain.Transfer to a wooden board, cut into wedges and serve immediately.

2 cup flour (I like to use bread flour but all purpose and even a combination of AP and wheat flour works)
1 tbsp butter (softened)
1 tbsp sugar
1 tsp yeast
1 tsp salt
1/2 cup water (105-110 degrees)
2 tbsp water (additional)
4 cups flour
2 tbsp butter (softened)

Steps:

  • Add all ingredients into your bread machine in the order recommended by the manufacturer. Make sure that the water is warm enough to proof the yeast (about 105-110 degrees).
  • Turn your bread machine to the dough setting and let 'er go! After a couple minutes check on your dough. Make sure that the ingredients are thoroughly combined and that the dough is not too wet or too dry. Depending on where you live and the flour you use there can be some variances in the dough. If it's too dry, add 1 tsp of water at a time. If the dough is too sticky, add 1 tsp of flour at a time.
  • The dough will raise nicely during the dough cycle. Isn't it pretty? It never ceases to amaze me what a little yeast can do :)
  • After the bread machine is done (mine takes about 90 minutes on the dough cycle) - dump the dough out onto a lightly floured surface and work it until you achieve your desired shape.
  • Depending on the size of pizza pan or pizza stone you are using, you may not need all of the dough.
  • I like to lightly grease my pizza pan and dust with cornmeal. Make up your pizza and bake at 400-425 degrees for 18-25 minutes. You are looking for bubbly cheese and lightly browned crust. If you like a crunchier crust, brush some olive oil on the crust before baking.

  • Add ingredients in the order reccommended for your bread machine and set to dough cycle.
  • After it's finished, transfer dough to lightly oiled pan.
  • For a thick crust, cover and allow to rise for about 20 minutes; for thin, bake right away.
  • Heap with toppings of your choice and bake in 450F oven for about 20 minutes (I sometimes put the crust in for about 5 minutes before adding toppings to speed it up a little bit and to prevent a soggy crust).

1 cup water
1 tablespoon extra virgin olive oil
3/4 teaspoon salt
3 cups bread flour
2 teaspoons sugar
1 teaspoon bread machine quick-acting active dry yeast
2 teaspoons dried herbs (basil, rosemary, oregano, parsley, etc.) (optional)
1 teaspoon semolina (or yellow cornmeal) (optional)

Steps:

  • Add ingredients to pan in order listed, set bread machine on"dough" and walk away.
  • After the cycle is completed, lightly coat dough ball in flour and roll or slap out to desired size.
  • Top with desired sauce, cheeses, meats and/or veggies and bake at 450° until cheese is golden brown.
  • Will make a 9-10" pizza of average thickness, or a 13-14" thin crust pizza.
  • For best results, bake on a preheated baking stone sprinkled with corn meal.
  • Notes: You may substitute beer for all or part of the water. I've used 3/4 cup flat beer and 1/4 water with excellent results. A teaspoon of semolina may be added as well -- it provides a nice crunchiness to the dough when baked. Corn meal can be substituted for the semolina (and likewise, semolina can be used to dust the pizza peel and/or baking stone).

1 tablespoon olive oil
1 teaspoon salt
2 1/2 cups bread flour

  • MEASURE all ingredients except cornmeal into bread pan in order listed; Select dough setting.
  • REMOVE dough to lightly floured surface and cover with plastic wrap; Let rise in a warm place for 30 minutes.
  • SPRINKLE cornmeal on large 16 inch pizza pan or on a pizza stone and press dough into pizza shape; Cover with a towel and let rise for another 30 minutes.
  • SPREAD with desired sauce, seasonings and toppings.
  • BAKE at 425F for 20-30 minutes; I like to partially bake the pizza on a pan for about 8 minutes and then transfer it to a hot pizza stone sprinkled with the cornmeal for the remainder of the cooking time.
  • I find by baking it initially on the pan it is easier to transfer to a pizza stone thus maintaining its large size.

Steps:

  • Add ingredients to machine in the order listed.
  • Set to "Dough" mode and let the machine run through its cycle.
  • Once completed, place in greased pan to rise about 20-30 min, and split in half.
  • If you aren't going to use the dough right away, fear not. Simply divide the dough and place in ziplock bags, then stack flat to be used as needed.
  • When the special day arrives, slap it on a cornmeal/floured surface, and roll flat, If you're fortunate enough to have a wife who doesn't mind you twirling it in her kitchen (like me -- as long as I clean up my own messes) -- have fun with it before going for the big-bake!
  • Add light layer of sauce and pre-bake your crust at 400 degrees for 5-7 minutes.
  • Believe me--you'll want to follow this step (thank me later).
  • Remove from oven and add toppings of your choice.
  • Bake in oven at 400F degrees until done(approx 20 minutes, depending upon topping thickness).
