GRILLED PIZZA ON A STICK

6 tablespoons olive oil
1/2 teaspoon dried oregano
2 cloves garlic, smashed with the side of a knife
Kosher salt
One 13.8-ounce tube refrigerated pizza dough
3/4 cup shredded mozzarella
1 yellow bell pepper, cut into 1-inch pieces
24 slices pepperoni (about 3 ounces)
2 tablespoons grated Parmesan
1 cup warm marinara sauce

Steps:

  • Put the olive oil in a small saucepan with the oregano, garlic and a pinch of salt. Warm over medium heat just until the garlic turns golden, then turn off the heat and let steep while you prepare the dough.
  • Preheat an outdoor grill over medium heat.
  • Unroll the pizza dough and roll it out by about 1 inch in either direction. Slice into 6 equal pieces. Stretch and press each piece into an approximately 11-by-2-inch rectangle. Sprinkle 2 tablespoons of mozzarella down the center of each rectangle, then fold the dough over the cheese and pinch the seams to seal, making 6 cheese-filled dough "tubes."
  • Thread each tube onto a skewer like a snake, alternating after every turn with a slice of pepper and a folded slice of pepperoni. Lay the pizza sticks on a parchment-lined baking sheet and brush all over with the garlic-oregano oil.
  • Grill the pizza skewers uncovered, turning every couple of minutes so that all sides make contact with the grill, until the dough is fully cooked, 6 to 8 minutes. Transfer to a serving platter, sprinkle with the Parmesan and serve with warm marinara sauce on the side.

½ cup teriyaki sauce
½ cup honey
½ teaspoon garlic powder
½ pinch ground ginger
2 red bell peppers, cut into 2 inch pieces
1 large sweet onion, peeled and cut into wedges
1 ½ cups whole fresh mushrooms
1 pound beef sirloin, cut into 1 inch cubes
1 ½ pounds skinless, boneless chicken breast halves - cut into cubes

Steps:

  • In a large resealable plastic bag, mix the teriyaki sauce, honey, garlic powder, and ginger. Place red bell peppers, onion wedges, mushrooms, beef, and chicken in the bag with the marinade. Seal, and refrigerate 4 to 24 hours.
  • Preheat grill for medium-high heat.
  • Discard marinade, and thread the meat and vegetables onto skewers, leaving a small space between each item.
  • Lightly oil the grill grate. Grill skewers for 10 minutes, turning as needed, or until meat is cooked through and vegetables are tender.

2 tablespoons reduced-fat Italian dressing
1 teaspoon pizza seasoning
2 tablespoons grated Parmesan cheese
1/4 cup pizza sauce (from 14-oz jar)

Steps:

  • Heat gas or charcoal grill. On each of two 11-inch metal skewers, thread chicken, bell pepper and mushrooms alternately, leaving 1/2-inch space between each piece. Brush kabobs with dressing; sprinkle with pizza seasoning.
  • Cover and grill kabobs over medium heat 9 to 11 minutes, turning once, until chicken is no longer pink in center. Sprinkle immediately with cheese.

24 Totino's™ Pizza Rolls™ frozen cheese or pepperoni pizza snacks
1/2 medium red or green bell pepper, cut into 8 pieces
8 small fresh button mushrooms
8 canned pineapple chunks, drained
8 medium pimiento-stuffed olives
1 small zucchini, halved lengthwise, each half cut into eight 1/2-inch slices
3 tablespoons Italian or French dressing
1 jar (14 oz) pizza sauce, heated until warm

Steps:

  • Soak skewers in water at least 15 minutes; drain.
  • Meanwhile, place pizza snacks on microwavable plate. Microwave uncovered on High 30 to 40 seconds or until thawed. Set aside.
  • Heat oven to 425°F. On each skewer, thread 1 pizza snack and your choice of two other items. Brush vegetables with dressing; place on cookie sheet.
  • Bake 7 to 9 minutes, turning once, until pizza snacks are hot and vegetables are crisp-tender.
