PIZZELLE SHELLS WITH STRAWBERRY SALSA

Steps:
- Fill a medium saucepan with 2 inches of water and bring to a boil over high heat.
- Rest a large hand strainer or sieve on top edge of saucepan ensuring it does not touch the water. Place 1-2 pizzelle in strainer to soften the cookie, about 10-15 seconds. When cookie is pliable, quickly remove from strainer and form into desired shell shape (taco, cannoli, cone or flower). Hold for 5 seconds then use crinkled foil or shot glasses to help support shapes until hardened. If cookie has lost pliability before desired shape is achieved, simply place back into strainer to soften again. Repeat to make 20 shells.
- In a medium bowl, combine strawberries, cilantro, jalapeno, lime juice, oil, salt and pepper. Gently stir in avocado and feta. Spoon about 2 tablespoons of mix into each pizzelle shell.

PIZZELLE
Hailing from Abruzzo in Central Italy, pizzelle are crisp, flat waffle-esque cookies made in a special hot iron. Like mostaccioli, these cookies predate Christmas -- in fact, it is said that this is the oldest known cookie recipe on earth, dating back to the 8th century BC. In olden times, presses were made from cast iron and would be heated over a fire, or directly on the stovetop. You can still find those irons if you're up to the challenge, but electric irons are much easier to use, and very easy to find both online and at major retailers.

Steps:
- Whisk together the sugar, butter, milk, vanilla, anise extract if using and eggs in a large bowl. Add the flour, baking powder and salt, and continue to whisk until the batter is smooth. Allow to stand at room temperature for at least 1 hour so the batter can hydrate.
- Heat the pizzelle iron, and cook your pizzelles according to the manufacturer's directions.
JELL-O FRUIT FLAVOURED PIZZELLE
Steps:
- Beat eggs, adding sugar gradually, beat until smooth. Add cooled margarine & vanilla.
- Sift flour and baking powder. Blend into egg mixture until smooth. Add your choice of fruit flavored Jell-O powder straight from the box - continue mixing till blended.
- Dough will be sticky enough to be dropped by spoon onto pizzelle baker.
