Time 50m

Yield 4

Number Of Ingredients 9

1 ½ cups whole grain polenta
1 cup whole grain buckwheat flour
3 ½ cups water
1 cup vegetable broth
1 teaspoon salt
¼ cup unsalted butter, at room temperature, cubed
6 ounces Taleggio cheese at room temperature, cubed
1 large head radicchio
1 teaspoon olive oil

Steps:

  • Whisk polenta and buckwheat flour together in a bowl.
  • Combine water, broth, and salt in a large pot and bring to a boil over medium-high heat. Sprinkle polenta mixture into the water little by little, whisking constantly to avoid clumping. Immediately reduce heat and simmer, stirring often to avoid scorching, for about 15 minutes.
  • Set aside 4 Taleggio cheese cubes. Add butter and remaining Taleggio cheese to the polenta, stirring often until melted and the polenta is thick and creamy like grits, about 10 minutes.
  • Meanwhile, heat a griddle or skillet over medium heat. Remove the outer leaves of the radicchio and cut the head into 4 equal wedges. Drizzle oil onto the griddle and cook the radicchio on each side until heated and slightly charred and just beginning to wilt.
  • Distribute equal portions of polenta onto plates and top with a cube of Taleggio and a wedge of grilled radicchio. Serve immediately.

HARD POLENTA CAKES WITH TALEGGIO AND CHERRY TOMATOES

Hard Polenta Cakes with Taleggio and Cherry Tomatoes image

Provided by Anne Burrell

Categories     appetizer

Time 1h45m

Yield 4 servings

Number Of Ingredients 12

3/4 cup whole milk, plus more if needed
Pinch cayenne pepper
1 bay leaf
Kosher salt
1/2 cup polenta
1/4 cup mascarpone
1/4 cup freshly grated Parmigiano-Reggiano
4 ounces taleggio cheese, rind removed and cut into 1/2-inch cubes
2 cups cherry tomatoes, halved lengthwise
Extra-virgin olive oil
Coarse sea salt, for finishing
1 bunch fresh chives, finely chopped

Steps:

  • Combine the milk, 1/2 cup water, the cayenne and bay leaf in a medium saucepan. Bring to a boil and season generously with salt. You want to take the seasoning to the edge of too salty in this case; to do this you MUST taste as you go! Polenta acts like a "salt eraser"; if you don't salt abundantly in this early step, you'll never recover.
  • When the liquid comes to a boil, gradually sprinkle in the polenta, whisking constantly. Once the polenta is combined, IMMEDIATELY switch over to a wooden spoon and stir frequently until the polenta thickens, 30 to 35 minutes. Taste the polenta to see if it's cooked through. If it still feels mealy and grainy, add some more milk or water and continue to cook for another 10 minutes. Repeat this process as needed until the polenta feels smooth on your tongue. Remove the bay leaf and stir in the mascarpone and Parmigiano-Reggiano, then remove from the heat.
  • Line a 7-inch square baking pan with plastic wrap. Pour the polenta into the pan and cover with plastic, pressing down so the plastic sits on the surface of the polenta. Chill until set, at least 45 minutes. (All of this can totally be done ahead of time, like yesterday!)
  • Preheat the oven to 400 degrees F.
  • Cut the cooled polenta into 1-inch squares. Place the squares on a baking sheet and top each with a piece of taleggio. Put the cherry tomatoes on a separate baking sheet and toss them with olive oil. Bake both the polenta squares and the tomatoes for 10 minutes. The tomatoes should be hot, starting to relax and getting a little squishy, and the taleggio should be nicely melted. Place the polenta cakes on a serving dish, top each square with a tomato half, and garnish each with a little sprinkey-dink of coarse sea salt and chives.

POLENTA TARAGNA ALLA VALTELLINESE

Polenta Taragna alla Valtellinese image

Provided by Food Network

Time 40m

Yield 6 servings as a side dish

Number Of Ingredients 6

3 1/2 cups water
1/2 teaspoon salt
1 cup Polenta Taragna
6 tablespoons unsalted butter, cut into pieces
4 ounces Tallegio cheese, sliced
Freshly ground black pepper, to taste

Steps:

  • Bring the water and salt to a boil in a large saucepan. Reduce the heat to moderately low so that the water comes to a simmer.
  • Begin pouring in the polenta taragna by the handful, in a thin stream, very slowly, and stir constantly with a long handled wooden spoon to avoid lumps. Keep the mixture at a bare simmer and stir frequently. (It is not necessary to stir constantly if the polenta is cooked on low heat.) After all the polenta is added, stir in 3 tablespoons of the butter and cook the polenta for 20 to 25 minutes. As it cooks, the polenta will thicken considerable; just keep stirring, and crush against the side of the pan any lumps that might form. The polenta is done when it comes away effortlessly from the sides of the pan.
  • Remove the pan from the heat and stir in half of the cheese, the remaining 3 tablespoons butter, and pepper. Season to taste. Add remaining cheese and stir quickly, leaving some of the cheese unmelted. Transfer the polenta to a serving platter and serve immediately.

Prosciutto, Taleggio and Radicchio Panini image

If you press it in the heated pan until it's just barely warm and melty, you'll be rewarded with a bite that yields the best flavor from all the ingredients. PANCETTA AND TALEGGIO LASAGNA WITH TREVISO

Pancetta and Taleggio Lasagna with Treviso image

Provided by Cristina Ceccatelli Cook

Number Of Ingredients 17

3 tablespoons extra-virgin olive oil
8 ounces thinly sliced pancetta (Italian bacon), chopped
2 cups thinly sliced celery hearts
1 2/3 cups chopped onion
1 pound Treviso radicchio or red endive (4 medium heads), quartered lengthwise, cored, then cut on diagonal into thin strips (about 6 cups), divided
3 teaspoons chopped fresh thyme, divided
1 garlic clove, finely chopped
9 lasagna noodles (each 7 x 3 inches)
1/4 cup (1/2 stick) unsalted butter
2 1/2 tablespoons all purpose flour
2 cups whole milk
Pinch of ground nutmeg
Pinch of ground white pepper
12 ounces Taleggio cheese,* rind removed, cheese cut into 1/2-inch cubes
1/2 cup finely grated Parmesan cheese, divided
2 tablespoons coarse dry breadcrumbs (preferably from crustless Italian bread)
Olive oil

Steps:

  • Heat oil in heavy large skillet over medium heat. Add pancetta, celery, and onion. Sauté until vegetables are soft but not brown, about 12 minutes. Transfer 1/2 cup sliced Treviso to small bowl and reserve for topping. Add remaining Treviso, 2 teaspoons thyme, and garlic to skillet. Toss until Treviso wilts, about 3 minutes. Season filling with salt and pepper.
  • Cook lasagna noodles in large pot of boiling salted water until just tender but still firm to bite, stirring occasionally. Drain noodles. Arrange noodles in single layer on large sheet of plastic wrap; cover with second sheet to avoid drying. DO AHEAD: Filling and pasta can be made 2 hours ahead. Let stand at room temperature.
  • Melt butter in heavy medium saucepan over medium-low heat. Add flour and whisk until roux is pale gold color, about 2 minutes. Gradually whisk in milk; add nutmeg and white pepper. Increase heat to medium and cook until sauce thickens and boils, whisking often, 2 to 3 minutes. Reduce heat to low. Add Taleggio cheese in 4 batches, whisking to melt before adding more, about 4 minutes. Season sauce to taste with salt and pepper.
  • Spoon 1/2 cup sauce into 13 x 9 x 2-inch glass baking dish; spread to cover bottom thinly. Arrange 3 noodles, crosswise and side by side, in dish; trim ends if necessary to fit. Transfer 3/4 cup filling to another small bowl and reserve for topping. Spoon half of remaining filling over noodles. Drizzle with 2/3 cup sauce; sprinkle with 1/4 cup Parmesan cheese. Repeat with noodles, filling, sauce, and Parmesan. Top with third layer of noodles; drizzle with 2/3 cup sauce. Spoon reserved 3/4 cup filling down center of lasagna lengthwise in 2-inch-wide strip. Drizzle strip with remaining sauce, then top with breadcrumbs. DO AHEAD: Can be made 1 day ahead. Cover and chill. Let stand at room temperature 1 hour before continuing.
  • Preheat oven to 375°F. Bake lasagna uncovered until heated through and sauce is bubbling, about 35 minutes. Remove from oven; let cool 15 minutes.
  • Toss reserved Treviso in small bowl with splash of olive oil and sprinkle of salt and pepper. Sprinkle over strip of filling. Sprinkle with remaining 1 teaspoon thyme.

Categories     Side Dish     Grain Side Dish Recipes     Polenta Recipes

Time 1h10m

Yield 6

Number Of Ingredients 12

3 teaspoons olive oil, divided
1 ½ cups vegetable broth
1 ½ cups water, divided
¾ cup unsweetened oat milk
1 ½ cups medium grind, whole-grain cornmeal (such as Bob's Red Mill®)
½ cup sliced yellow onion
½ cup shredded carrot
1 medium head radicchio, cored and thinly sliced
½ teaspoon coarse ground black pepper
½ teaspoon ground turmeric
3 (1 ounce) slices vegan smoked Gouda
3 ½ ounces vegan shredded mozzarella

Steps:

  • Preheat the oven to 355 degrees F (180 degrees C). Grease an 8x8-inch baking pan with 1 teaspoon olive oil.
  • Combine vegetable broth and 1 cup water in a large pot and bring to a boil over high heat. Reduce heat to medium and keep at a low boil. Pour in unsweetened oat milk and bring to a boil. Sprinkle in cornmeal, whisking constantly to avoid clumps from forming. Reduce heat to medium-low and continue stirring until polenta begins to thicken. Add more water if needed. Stir until polenta has softened and thickened, about 20 minutes.
  • Meanwhile, heat remaining 2 teaspoons olive oil in a skillet. Add onion and carrot. Saute until vegetables have just begun to soften. Add radicchio and saute until wilted. Season with pepper and turmeric. Cook until vegetables are tender and cooked throughout, about 5 minutes.
  • Spread out 1/2 of the polenta in the greased baking dish. Evenly layer 1/2 of the vegan Gouda and 1/2 of the vegan mozzarella on top. Top with 1/2 of the radicchio mixture. Repeat layers with remaining polenta, cheeses, and radicchio mixture.
  • Bake in the preheated oven until cheese has melted and is bubbling, about 20 minutes. Allow to rest for 5 minutes before serving.
