SPAGHETTI SAUCE
I do not know where this recipe came from. A friend gave it to me. This is THE BEST SAUCE I've ever had!! We use to like dining out at Italian places but not now. Not after eating this sauce. I don't think there is any sauce that will taste as good as this. My Husband eats this stuff by the spoonful. It is that good!! (I don't claim it is Italian, I just know my family loves it!) I am sad to see that this recipe isn't liked by all. My sister said it was too sweet as well. I guess you just have to have a sweet tooth to enjoy. I hope you try it a different way to satisfy your taste buds. If it is not Italian enough for you, then maybe try adding more Italian seasoning and leaving out the sweets and maybe trying Italian Sausage in addtion to or instead of the polish sausage. For the other person: if it is too sweet, next time, just don't add all the molasses and or brown sugar or take one of them out and add all of the other. Sorry you had to toss it. You could have frozen it and fixed it next month or 6 months from now. It freezes well!

Steps:
- Put tomato sauce in large stock pot 8quarts or larger.
- Brown hamburger, drain (I like using paper towels to pat grease out as much as possible).
- Add to pot.
- Brown the chopped polish sausage.
- add sausage to pot.
- KEEP grease.
- In grease from sausage, cook onion, green and red peppers until tender.
- I like them browned.
- Add to pot.
- Start simmering Sauce in the stock pot.
- Now add the remaining ingredients.
- Let simmer on low heat at least an hour (or longer).
- Stirring occasionally.
- I usually divide this into 1 quart containers and freeze until ready to use.
- I usually have 6 quarts to freeze.
- I usually thaw in microwave a bit them simmer more while cooking spaghetti.

Simple and tasty! I came up with this when I was short on time and long on craving spaghetti. This freezes well, so you can serve 1 or 2 and save some for the next time you're in a real hurry.

Steps:
- Sauté onion and garlic in butter just until softened.
- Add ground round and brown slowly, breaking up to a fine crumble.
- Add wine and simmer for about 20 minutes until it is reduced by half.
- Add tomato soup, broth, and seasonings, stir well and bring to boil.
- Cover and simmer for 1 hour. If sauce is not thick enough for you, uncover and simmer for another 10 to 15 minutes.
- Serve over your favorite pasta.

BOLOGNESE MADE BY A POLISH GIRL !
This sauce can be divided into single servings, frozen for future use. When reheating go ahead and add some VODKA and cream for a great vodka meat sauce (here's the Polish part)! I made this with only 1 tablespoon Olive oil and lean meats trying to keep the fat down and didn't lose anything in taste! Delicious in a meat lasagne or a baked ziti dish. Top a pizza or go a whole different way and place in a pie dish and top with mashed potatoes for a Italian shepherds pie! Now that's South meets East meets Western Europe! ;) Enjoy!

Steps:
- In a large heavy bottom pot on medium heat, heat up the olive oil, add the garlic, onion, pepper, carrot, celery, and mushrooms cook allowing them to soften about 5 minutes.
- Add Chianti and simmer for 5 minutes.
- Add 1/2 the parsley, meats, mix everything together breaking up and cook over a gentle flame until the meat has changed color.
- Add Worcestershire sauce, Italian seasonings, red pepper flakes, basil, tomato puree, diced tomatoes, and paste.
- SIMMER gently for half an hour and season to taste with salt and black pepper. Be sure to stir not to burn this rich thick sauce.
- If the mixture is dry add a little more olive oil, some vodka, or tomato puree. Serve over pasta, topped with parmesan cheese and remaining fresh parsley to garnish.

- In a hot skillet, saute bell pepper and onion on medium-high for 5 minutes. Add garlic and saute one more minute. Stir in tomatoes and chicken broth. Remove from heat.
- Place mixture in blender and blend until the desired level of chunkiness is achieved. Return to medium-low heat. Stir in tomato paste one tablespoon at a time until desired level of thickness is reached. Cook for 20 minutes, stirring occasionally.

A simple, slow cooked, authentic spaghetti sauce, as good as the restaurants serve...or better! The secret ingredient is baking soda, but do not taste the sauce right after adding it. Wait a while, and this sauce will not disappoint you. It is good right from the stove, but the flavors blend overnight. Best served with your favorite meatball recipe, where the meatballs cook in the sauce the last half hour. Be prepared to take a nap after eating.

- Mix together whole tomatoes, tomato sauce, tomato paste, water, mushrooms, onions, garlic, sugar, salt and pepper, basil, and 1 pinch of baking soda in a large saucepan. Bring to a boil, stirring. Reduce to a simmer, and cook for 4 hours minimum.
- Stir in another pinch of baking soda; the sauce will foam. Simmer, stirring occasionally, until thick and almost brown. Make sure to scrape the sides of the pan in to the sauce.
- After the sauce is fork consistency, stir in Parmesan cheese. Watch that the cheese does not burn. Taste sauce. If it is too tangy or acidic, add another pinch of baking soda and simmer another 1/2 hour.
- Cool, cover, and refrigerate overnight. The next day, reheat and serve.
