EASY POLISH KIELBASA SAUSAGES AND POTATOES
Kielbasa and Potatoes are loaded with crispy potatoes and flavorful Kielbasa sausages. It's one of the best Polish sausage recipes that are easy to make at home.

- In a microwave-safe bowl, add the potatoes and water. Cover with a lid and microwave on high for about 4 minutes until the potatoes are tender. Place potatoes and water in a microwave-safe dish. Drain the water and set aside.
- In a small mixing bowl, whisk together brown sugar, vinegar, mustard and black pepper.
- Add oil to a large skillet over medium-high heat. Add kielbasa and onions. Sauté for a few minutes until the onion is tender.
- Add potatoes and the sauce. Bring to a boil and reduce the heat. Add spinach, and cook for about 2 minutes or until the spinach is wilted. Serve and enjoy!

Official Contest Entry: Simply Potatoes 5Fix. This recipe was given to me by my Polish in-laws and has become a staple in our house. The ingredients are easy to have on hand (thanks to Simply Potatoes), it is easy and quick to make, and the entire family loves it. The kids scarf it down and my husband fights them off in hopes of having leftovers for lunch the next day. I love it because it is a one dish meal and clean up is a breeze. Adjust dressing and cheese to taste--we like ours "dripping"!

- Heat 1/4 cup Italian dressing in skillet. Cook bag of Simply Potatoes according to package directions with dressing as substitute for oil, approximately 15 minutes.
- Slice sausage and add to potatoes. Cook on high heat until both are browned.
- Add 1/2 cup Italian dressing (more or less to preference) and cook 2-3 more minutes.
- Sprinkle shredded cheddar over top and allow to melt.
- Serve and enjoy!

POLISH SAUSAGE AND CABBAGE DINNER
This is a meal in one. This meal is great on a cold winter night. It even taste better the next day.

- Start by cleaning your vegetables. Cut the cabbage and onion into six lengthwise slices. Cut potatoes crosswise into two pieces.
- In a large pot layer your ingredients in this order: cabbage, potato and onion.
- Pour chicken broth over the top of ingredients. Add salt and pepper to taste.
- The final step is to add the polish sausage on top of the ingredients. Cover and cook over med. heat until desire tenderness.
- Stir the ingredients so that you do not break the cabbage apart too much. So just be careful in stirring.
POLISH SAUSAGE AND RICE "ONE DISH"
This is so easy and fast, we often pair it with a salad to have a delicious dinner on the table in under 30 minutes. This recipe came from Georgia Wamack, (my daughter's grandmother) whose cooking I literally crave. I am posting it so I don't forget how to make it. I don't get the opportunity to have her good country cookin' much these days.....(sigh).

- TO PREPARE RICE:.
- Put 3 cups of hot water into medium saucepan on high heat with lid on pot. As soon as water begins to boil, add rice stirring as you add rice and then immediately turn heat down to med-low and cover. Cook, covered (without stirring) for 18 minutes. Check at 18 minutes to see if you need to cook more of the water out or not, if so cook for 2 minutes longer or as needed until rice is done.
- meanwhile --.
- TO PREPARE SAUSAGE AND VEGGIE MIXTURE:.
- Meanwhile, saute' onions, green peppers and smoked turkey sausage in pan on medium heat with a little oil coating bottom of pan (I usually need about 1 1/2 TB of Olive oil) until onions and green peppers are tender-crisp and sausage pieces are getting brown edges. If using fresh mushrooms, add them just as sausage edges are getting brown and cook all for 2 more minutes.
- When veggies and sausage is cooked, add 2 cans of cream of mushroom soup (and canned mushrooms, if using). Stir often on med-low heat until hot.
- Serve over your hot rice.
