1 ¼ cups jasmine rice
2 cloves garlic, peeled and minced
1 piece ginger, peeled and minced
8 oz sugar snap peas
8 oz mayonnaise
2 oz sweet thai chili sauce
16 oz steak, diced
4 oz ponzu sauce
2 tablespoons butter
4 teaspoons cooking oil
2 ¼ cups water
salt
pepper

Steps:

  • Melt butter in a small pot over medium high heat. Add garlic and half of the ginger and cook, stirring, until fragrant, 30 seconds.
  • Stir in rice, water, and a big pinch of salt. Bring to a boil, then cover and reduce heat to low. Cook until tender, 15-18 minutes.
  • In a separate small bowl, combine mayonnaise with half the amount of chili sauce. Stir in 1 tsp of water at a time until the mixture reaches a thin consistency that can be drizzled. Season the mixture with salt and pepper.
  • Heat oil in a large pan over medium high heat. Add snap peas OR green beans; cook, undisturbed, until charred on one side, 1-2 minutes. Continue cooking, stirring occasionally, until charred all over, 1-2 minutes more. Transfer to a small bowl and season with salt and pepper. Cover to keep warm.
  • In the same pan, heat oil to high. Add steak and cook, stirring occasionally, until browned and cooked to desired doneness, 2-3 minutes. Add remaining ginger; cook until fragrant, 30 seconds. Stir in ponzu and remaining chili sauce until coated. 1-2 minutes. Remove from heat and season with salt and pepper.
  • To serve, fluff rice and season with salt and pepper. Add to a bowl and top with steak and snap peas OR green beans. Drizzle chili mayo on top.

2/3 cup mirin
1/2 cup sake
1/4 cup soy sauce
2/3 cup mayonnaise
2 tablespoons finely grated ginger, with juices
1 tablespoon wasabi paste
1 teaspoon wasabi paste
1/4 cup prepared japanese sesame dressing
1/4 cup prepared ponzu sauce (citrus-soy sauce)
6 cups Baby Spinach
1 tablespoon mirin
1 tablespoon sake
1 tablespoon soy sauce
3 tablespoons miso
2 1/2 lbs ground chuck
1/3 cup sliced green onion
2 teaspoons finely grated ginger, with juices
2 tablespoons minced garlic
2 teaspoons fresh coarse ground black pepper
1 teaspoon sea salt
vegetable oil, for brushing on the grill rack
6 hamburger buns with sesame seeds, split

Steps:

  • Prepare a medium fire in a charcoal grill with a cover, or preheat a gas grill to medium.
  • For the glaze:.
  • Mix the mirin, sake, and soy sauce in a small, heavy fire-proof saucepan. Place the pan on the grill rack, bring the mixture to a simmer, and cook until reduced to a slightly thicker consistency, 15 to 20 minutes. Set the glaze aside (it will thicken slightly as it cools).
  • For the mayonnaise:.
  • To make the mayonnaise, mix all of the ingredients in a small bowl. Cover and refrigerate until serving.
  • For the spinach:.
  • Mix the sesame dressing and ponzu sauce in a small bowl. Place the spinach in a large bowl and toss lightly with the dressing. Cover and refrigerate until serving.
  • For the patties:.
  • Mix the mirin, sake, and soy sauce in a small bowl. Stir in the miso and blend evenly. Spread the chuck out in a large, shallow pan. Distribute the miso mixture over the meat and sprinkle evenly with the green onion, ginger, garlic, pepper, and salt. Handling the meat as little as possible to avoid compacting it, mix well. Divide the mixture into 6 equal portions and, with cupped hands, toss 1 portion of the meat back and forth from hand to hand to form a loose ball. Pat the meat portion lightly on a flat surface to form a patty to fit the buns. Press the center of the patty down with your fingertips to create a slight indention in the center of the patty. Repeat with the remaining meat portions.
  • When the grill is ready, brush the grill rack with vegetable oil. Place the patties on the rack and baste each patty with the glaze. Cover and cook until browned on the bottom, 3 to 4 minutes, basting each patty again with the glaze. Turn the patties and brush the cooked side with the glaze. Cook, brushing frequently with the glaze, until done to preference, 4 to 5 minutes longer for medium. During the last few minutes of cooking, place the buns, cut side down, on the outer edges of the rack to toast lightly.
  • To assemble the burgers, place an equal portion of the spinach on each bun bottom and top with a patty. Spread the mayonnaise over the cut sides of the bun tops. Add the bun tops and serve.

4 fillet of tenderloins or other thick cuts of steak
1 Tbs Brown sugar
1 Tbs Mirin(Japanese sweet cooking wine)
3 Tbs Ponzu sauce
1 Tbs Rice vinegar
1 Tbs Soy Sauce
1 Tbs Oyster sauce
1/4 cup Red wine
1 Tbs of oil to brown the meat

Steps:

  • Mix all ingredients except wine in a bowl. Use half of the mixture to marinade the meat for 15 minutes on each side. Save the other half for the sauce. Heat oil in a large saute pan over medium high heat then add steaks to the pan. Cook 4 minuets on each side for medium rare. (Do not move the meat around once you put them in a pan as you want to have a good crust on them) Remove the meat and cover with foil, set aside to rest for at least 10 minuets. Add the reserved marinade liquid and red wine to the pan, scrape all the meat dripping off the bottom with wooden spoon, and let the sauce reduce until thick over low-medium heat, about 10 minutes. Coat the steak with the glaze and serve.
