Years ago, my kids and I enjoyed a cookbook called "The Pooh Cook Book" by Virginia Ellison. Each recipe was accompanied by a line drawing and a quote from the original A.A.Milne books. We loved cooking together, and these recipes and pictures encouraged them to try reading themselves. This became one of our favorites for breakfast or lunch.

Number Of Ingredients 8

1 cup all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 tablespoon sugar
1 cup sour cream (or 1/2 cup sour cream and 1/2 cup milk) or 1 cup milk (or 1/2 cup sour cream and 1/2 cup milk)
2 eggs
2 tablespoons butter or 2 tablespoons margarine, melted
1/2 cup wild blueberries, canned and drained (optional)

Steps:

  • Sift together the flour, baking soda, salt, and sugar.
  • Whisk sour cream, milk, and eggs until smooth. Add the melted butter.
  • Mix the wet and dry ingredients together until smooth, using a whisk or electric mixer. Blueberries are optional. (Mini chocolate chips are sometimes a real treat).
  • If you like small, thin pancakes, add a very little more milk or water.
  • Pour 1-2 tablespoons of the batter onto a hot greased griddle. Bubbles should appear in less than a minute. When the pancake bubbles all over, flip it over & brown the underside.
  • Serve with any of the honey sauces (I'll post them separately), honey butter, plain honey, or syrup.

2 whole eggs
1/4 cup butter, melted
1 cup milk
1 1/4 cups all-purpose flour, sifted
1 tablespoon sugar
4 teaspoons baking powder
3/4 teaspoon salt
1/4 cup poi, frozen and crumbled
Coconut syrup (recommended, "Hawaii's Own Coconut Syrup")

Steps:

  • Beat eggs in a bowl and set aside. Melt butter in a saucepan with the milk. Let cool slightly before adding to egg mixture. In a separate mixing bowl, sift all the dry ingredients together. Add the eggs to this mixture, just to moisten. Do not over mix. Crumble the defrosted poi into the mix, to taste. The poi gets soft as the batter cooks, so too much will result in a "gooey" pancake. Make sure to add the poi just before you pour the pancakes. This will result in little "pudding pockets" in the cake. Heat the griddle, then spoon mixture onto griddle, and cook until bubbles form around the edges. Turn the cakes and cook for another 25 seconds or until the bottom is slightly browned. Top with coconut syrup.

1 cup plus 1 tablespoon cake flour
1 tablespoon baking powder
1 tablespoon sugar
Pinch of kosher salt
2/3 cup milk, plus more for thinning
1 teaspoon vanilla
1 large egg
1 tablespoon butter, plus more for the griddle
1/4 cup chopped strawberries (about 4)
1/4 cup chopped pecans
4 teaspoons cold maple syrup

Steps:

  • Mix together the cake flour, baking powder, sugar and salt in a large bowl. Mix together the milk, vanilla and egg in a separate bowl. Add the wet ingredients to the dry ingredients, stirring gently to combine. Melt the butter and add it to the batter, stirring gently to combine. Stir in more milk if needed for thinning.
  • Heat a griddle over medium-low heat. Once hot, grease the griddle with butter. Drop 2 circles of batter onto the griddle, about 2 tablespoons each, and cook until bubbles start to form, about 30 seconds.
  • Add 1 tablespoon of strawberries and 1 tablespoon of chopped pecans to each pancake and cook for about 20 seconds. Drizzle a teaspoon of cold pancake syrup over the strawberries and pecans, then top with 2 tablespoons of batter. Flip the pancakes and cook on the other side until golden and crispy, about 2 minutes. Continue to cook the remaining pancakes.
  • Serve immediately, or individually wrap in foil for a perfect meal on the go!

3 1/2 pounds russet potatoes, peeled
1 large sweet onion
1/2 cup all-purpose flour
2 large eggs, lightly beaten
3 tablespoons finely chopped chives
1/4 teaspoon baking powder
Kosher salt and ground black pepper
Canola oil, for frying
Unsalted butter, for frying

Steps:

  • Set a large strainer or colander over a bowl and line it with a clean kitchen towel. Using a box grater, grate the potatoes and onion into the strainer. Using the towel, squeeze as much liquid from the potatoes and onion as possible. Transfer the mixture to another bowl and stir in the flour, eggs, chives, baking powder, salt and pepper.
  • Coat the bottom of an 8-inch nonstick skillet with oil and add a couple of tablespoons of butter. Heat over medium heat until the butter foam subsides. Spoon about 1 3/4 cups of the potato mixture into the pan and press to fill the circumference. Fry over medium heat, flipping once, until the pancake is golden and crisp, 3 to 4 minutes per side. Drain the pancake on a paper towel-lined baking sheet. Repeat with the remaining batter.

1 medium onion, peeled
4 large russet or Idaho potatoes (about 3 1/2 pounds), peeled
2 large eggs
2 tablespoons all-purpose flour
6 tablespoons vegetable oil
6 tablespoons unsalted butter
Applesauce and/or sour cream, for serving

Steps:

  • Preheat oven to 200°F. Place 2 nonstick baking sheets in oven.
  • Using box grater or food processor fitted with grating disc, coarsely grate onion and place in colander set in sink. Coarsely grate potatoes, add to colander, and set aside to drain.
  • In large mixing bowl, lightly beat eggs, then whisk in flour.
  • Press potatoes and onion to extract as much liquid as possible, then add to egg/flour mixture. Season with salt and freshly ground black pepper. Using wooden spoon or hands, mix well, but do not overwork.
  • In heavy-bottomed, 12-inch skillet over moderately high heat, heat 1 tablespoon oil and 1 tablespoon butter until hot but not smoking. Drop 4 scant 1/4-cup portions of potato mixture into pan and flatten with spatula to form four 3-inch pancakes.
  • Fry until bottoms are golden-brown, 4 to 5 minutes, then turn over and fry until golden-brown and crisp, an additional 4 to 5 minutes. Transfer to paper towels to drain; season immediately with salt and pepper. Keep warm on baking sheets in oven while making remaining pancakes.
  • Using paper towels, carefully wipe out pan. Add 1 tablespoon oil and 1 tablespoon butter and fry 4 more pancakes. Repeat with remaining batter, wiping out pan and adding 1 tablespoon oil and 1 tablespoon butter before each batch.
  • Serve pancakes hot with applesauce and/or sour cream.

POFFERTJES (DUTCH MINI PANCAKES)

1 finely minced garlic clove
1 large egg yolk, lightly beaten

1 tablespoon minced fresh parsley
1 large egg white, beaten stiff
vegetable oil or peanut oil

Steps:

  • Finely grate potatoes and rinse with cold water 3 times till water runs clear. Add potato, onion in a large bowl with garlic. Drain and press out as much moisture as possible, using paper towels.
  • Add egg yolk, flour, salt, peppers and parsley. Mix thoroughly.
