ITALIAN BEEF PO' BOYS
Beef simmered overnight in the slow cooker, shredded and added back to the pot of juices for Italian Beef Po' Boy sandwiches.

Steps:
- Cut beef into large chunks, trimming away any large pieces of fat. Place in a slow cooker.
- In a bowl, whisk together seasoning packets, seasoned salt, black pepper and water.
- Pour liquid mixture over beef and toss gently to combine. Cook on low setting overnight (for 8-10 hours).
- Remove meat to cutting board and using two forks, shred meat. Skim fat from juices in slow cooker, return meat to juices and combine. Keep on low , or transfer to a dutch oven to reheat and serve. Serve on buns or rolls with plenty of optional toppings.

I love dad's Poor Boys! The only bad thing about them is I'm impatient when they are cooking! Use a crock pot and forget about them!

Steps:
- fill pan half full with water and let roast and onions cook for 5-6 hours.
- Shred meat and let sit in fridge over night.
- Next day add all other ingredients and cook again.
- We let it cook in a crock pot on low all day and it's ready when we get home from work!
- Sometimes I cheat and sneak home for lunch and make a sandwich.

CROCK POT PO' BOYS (OR ITALIAN BEEF) SANDWICHES
This dish smelled wonderful while cooking in the Crock Pot all day. It is a meal all by itself, and just a salad on the side is perfect.

- 1. At the beginning of the day, place roast in large Crock Pot with chunked onions, garlic, pepper and Italian seasoning and about 2 cups of water, and the juice from the pepperocini peppers. I've sliced the meat in thin slices prior to cooking, but I like the texture of the meat when pulled apart, and less work.
- 2. Cook on med-low most of the day until the roast starts falling apart and will easily pull apart with a fork. 8-9 hours until meat pulls apart with a fork.
- 3. Remove meat from Crock Pot, saving all the drippings.
- 4. In seperate bowl, mix the gravy packets with the water as directed; put meat back in crock pot with the drippings, the gravy mix, stir well and let simmer about 1/2 hour.
- 5. Tear apart meat with forks (shredding) and put it into the pot as you are tearing apart the meat. Discard all fatty parts.
- 6. Once meat is in the juices (should thicken up with the gravy packets) let cook about another hour.
- 7. Serve on harder long rolls...I prefer a French type, crusty on the outside and soft on the inside. The bread soaks up the gravy. It's especially good with some shredded mozzarella or provolone on the sandwich... serve the pepperocinis on the side or in the sandwich.
- 8. *A little more flavorful version is to put in the peppers (stems removed) during the cooking process.
THE ROAST BEEF PO'BOY (AND HOW TO MAKE ANY PO'BOY)
This version is VERY authentic. I'm talking the neighborhood poboy shops, not the fancy restaurants or the tourist traps in the Quarter. If you've ever been to Johnny's on St Louis in the French Quarter (which is NOT a tourist trap, though tourists and locals a like are always packing the place), this will take you back there babe! Whenever I really get home-sick (even though I was raised in MI, NOLA feels more like home)- I like to make these. The bread is KEY tho, you just can't get the same texture as down there anywhere else- but I try to get as close as possible. You want the bread to be crusty on the outside but soft with just a little tiny bit of chewiness when you bite down into it. The lettuce, pickle, mayo and tomato is what is called "dressed". You may add cheese or hot sauce. It's messy, but SO good!! Cook time does not include time it takes to make/cook roast beef.

- Heat oven to 400°F.
- Cut french loaf in half lengthwise and place in oven for 4-5 minutes or until LIGHTY toasted. Spread butter on both the inside halves of toasted bread. It should melt on hot bread.
- In a sauce pan whisk the vegetable oil with the flour on med-high heat for about 5 minutes or until just lightly browned. Add your beef au jus to your roux and whisk until it thickens slightly- about 1 minute. Should only be thick enough to lightly coat the back of a spoon, add more stock/au jus to thin out a bit if needed.
- Toss sliced roast beef with thin gravy until evenly coated and heated through.
- Spread mayo on top inside half of buttered and toasted french loaf.
- Place dill pickles on bottom inside half of toasted buttered french loaf.
- Evenly place roasted beef on top of dill pickles with tongs.
- Add lettuce and tomato.
- You may also add american or swiss cheese and or hot sauce.
- Cut into 1/4s. Serve with kettle chips such as Zapps.
- Hint- you can make ANY poboy be it fried oyster, fried shrimp, fried catfish, grilled chicken breast, french fries, chicken parm, meatloaf, hamburger, smoked sausage you name it! Just follow the bread toasting and buttering instructions, and make sure you "dress" it with lettuce, tomato, mayo and dill pickles! You can eat it "undressed" also. It's more about the type of bread and using cajun/creole recipes of fried seafood or meats in the main filling. The traditional cheeses used are swiss, american, and provolone. Hot sauce and cocktail sauce for fried seafood. Ketchup is often used as a condiment also.
