HOMEMADE CHICKEN CORDON BLEU

- Flatten chicken to 1/4-in. thickness; top each with ham and cheese. Roll up and tuck in ends; secure with toothpicks., Place butter in a shallow bowl. In another shallow bowl, combine the bread crumbs, salt and paprika. Dip chicken in butter then roll in crumb mixture., Transfer to a greased 8-in. square baking dish. Bake at 350° for 40-45 minutes or until chicken is no longer pink. Discard toothpicks.

POOR MAN'S CORDON BLEU
Steps:
- For each turkey roll, lay out 2 turkey slices, overlapping ends by 2 to 3 inches. Add a ham slice, centered on turkey slices. Place 2 cheese slices on top, with ends barely touching. Roll up, starting on one short side. Repeat with remaining ingredients to make 8 rolls. Dip rolls into water to dampen, and coat in bread crumbs, reserving 1/4 cup bread crumbs for topping. Place rolls, seam side down, in a greased 13 by 9 inch baking pan. Sprinkle reserved crumbs on top. Bake, uncovered, at 350 degrees for 15 to 20 minutes until lightly golden and cheese is melted.

Steps:
- Preheat oven to 350. Line a baking sheet with a silicon liner or whatever you like to use.
- Rinse and pat dry breasts. Layout breast, 1 slice of cheese, 1 slice of ham, then roll from larger end towards pointy end and close with one toothpick. Set aside until all chicken is done up to this point.
- In a small dish or bowl, slightly beat an egg and set aside.
- In another small dish or bowl, mix together breadcrumbs, seasoned salt and butter.
- Dip rolled up chicken in egg, then breadcrumb mixture and place on baking sheet - repeat with rest of chicken.
- Lay one slice of cheese over each coated chicken breast.
- Bake approx 20 min, use a thermometer to measure internal temp to be safe.
CHICKEN CORDON BLEU I
This entree is easy and delicious! It's one of my husband's favorites! Try to use the largest chicken breasts you can find so you'll be able to roll them easier.

- Preheat oven to 350 degrees F (175 degrees C). Coat a 7x11 inch baking dish with nonstick cooking spray.
- Pound chicken breasts to 1/4 inch thickness.
- Sprinkle each piece of chicken on both sides with salt and pepper. Place 1 cheese slice and 1 ham slice on top of each breast. Roll up each breast, and secure with a toothpick. Place in baking dish, and sprinkle chicken evenly with bread crumbs.
- Bake for 30 to 35 minutes, or until chicken is no longer pink. Remove from oven, and place 1/2 cheese slice on top of each breast. Return to oven for 3 to 5 minutes, or until cheese has melted. Remove toothpicks, and serve immediately.
