Poor Man's Prime Rib, Eye of Round Roast Recipe - (3.9/5) image

1(3 pound)1 (3 pound) beef eye of round roast
Salt and pepper, to taste

Steps:

  • Preheat oven to 500°F. Season roast with salt and pepper and place in a roasting pan or baking dish. Do not cover or add water. Place in preheated oven. Reduce the temperature to 475°F. Roast 21 minutes (seven minutes per pound) then turn off the oven and let the roast sit in the hot oven for 2 1/2 hours. Do not open the door at all during this time! Remove roast from the oven; the internal temperature should have reached at least 145°F. Carve into thin slices to serve.

1 tsp. garlic salt
1 tsp. celery salt
1 tsp. onion salt
1 tsp. Lawry's seasoned salt
1 tsp. pepper
1 tsp. meat tenderizer
1 tblsp. Worcestershire sauce
1/2 cup water

Steps:

  • Place meat in a seal able plastic bag with seasonings and water. Leave to marinate for 6 or more hours. Bake at 500 degrees for 7 minutes per lb. Turn oven off for 1 hour and 45 minutes. Should be medium in center. Serve with Au jus. 4 lb. roast bakes for 7 minutes.
