500 grams pork belly
2 tablespoons cooking oil
150 grams garlicky sausages sliced into rings
1/3 cup finely chopped onion
1 teaspoon minced garlic
1 bay leaf
1 sprig oregano stripped
2 cups chopped tomatoes
patis (fish sauce) to taste

  • Pour in the chopped tomatoes and soy sauce. Stir.
  • Bring to the boil, lower the heat and simmer for 45 minutes or until the pork is tender.

  • Cover the pan and simmer for another 15 minutes.
