BEST PORK 'N BEANS AND HAMBURGER CASSEROLE
Adapted from an old Campbell's Pork 'N Beans recipe that was on the back of the can label. Since I couldn't find it, I found a different recipe that sounded similar and then tweeked it a bit. It makes a lot so you could easily reduce it half for an evening meal.

Steps:
- Brown ground beef in large skillet with diced onion and green pepper.
- Drain beef mixture and put into large dutch oven or large pot.
- Add all other in gredients and gently stir until everything is mixed together well.
- Cover and simmer over low heat for 1/2 hour.
- Serve warmed. Leftovers should be stored in covered container in refrigerator.

- In a large lidded skillet or dutch oven fry the bacon, ground pork and onion until browned. Drain and add in the minced garlic, fry for two more minutes.
- Stir in the pork and beans, then place the biscuits in a single layer on top of the beans.Cover and cook - if you have no lid use tinfoil and tent it over the skillet or pot. Simmer for 12-15 minutes or until the biscuits are done.
- Serve and enjoy!

Steps:
- Heat the oil in a medium heavy-based casserole, brown the prok in batched then set aside. Add the onion and celery and cook for 5 minutes until softened and lightly browned, then add the garlic and cook for another minute.
- Add the beans, stock and oregano to the pan, and return the pork. Bring to the boil then simmer for 1 hour 15 minutes or until tender.
- For the celeriac and apple slaw: Mix the celeriac, onion and sea salt and set aside in a colader to soften for 30 minutes. Mix the Dijon mustard with white wine vinegar and soya yoghurt and season with black pepper. Combine all the ingredients, along with the fennel seeds and caraway seeds, lightly toasted in a hot frying pan, in a large bowl. Stir in the apples and serve.

- Preheat the oven to 350 degrees F. Spray a 9- by 13- by 2-inch casserole dish with cooking spray.
- In a large saucepan, brown the ground beef, onions and bell peppers. Add the pork and beans, barbecue sauce, ketchup, mustard, Worcestershire sauce, soy sauce and brown sugar to the mixture. Hubby and I go grocery shopping only once a week because of the stay-at-home order due to the Coronavirus. We got lucky and found a 25-pound pork shoulder roast for $0.59 per pound! Though it's only the 2 of us at home, we could not pass up such a great bargain. We cut the roast up into 2-pound chunks and individually vacuum packed them with our FoodSaver. - Combine pork cubes, 1/2 cup water, and 1/2 teaspoon salt in a Dutch oven. Cover and cook over medium heat for 20 minutes, stirring every 5 minutes. Uncover, raise heat to medium-high, and cook, stirring constantly, until the water evaporates. Cook until pork starts to brown in its rendered fat, about 10 minutes. - Mix the crushed garlic, 1 tbsp of the oil and 1 tsp smoked paprika together in a shallow dish and turn the pork steaks over in the mix to coat them on both sides. Heat a large non-stick frying pan and fry the pork for about 4 mins on each side to part-cook and brown them, then remove them from the pan.
- Add the rest of the oil to the pan and fry the onions, carrots and sliced garlic, stirring frequently for 10 mins until the veg starts to caramelise a little. Pour in the sherry vinegar, allowing it to sizzle in the heat, then add the peppers, bouillon, rosemary, any juices left in the dish from the pork, the cherry tomatoes, tomato purée, remaining 3 tsp paprika and beans.
- Lay the pork steaks on top, then cover the pan and cook for 20 mins until the pork and vegetables are tender. The pork will be cooked and juicy, but not fall apart. Remove the pork from the pan, stir in the parsley and a squeeze of lemon juice, if using.
- If you're following our Healthy Diet Plan, eat two portions of the pork and beans now and chill the rest for another day. Will keep for up to two days. To serve the second night, just reheat in a pan.

- Brown ground beef; drain fat.
- Heat pork and beans in a medium saucepan. Add brown sugar and ketchup. (Start off with 1/2 tablespoon brown sugar and 1/2 tablespoon ketchup, gradually adding more until it suits your taste. I like mine a little on the sweet side.)
