Another of those country dishes that are always a pleasure to eat.

pork - 17.5 oz (500 g)
green beans - 4/5 cup (200 g) fresh
potatoes - 14 oz (400 g)
tomatoes - 1
onions - 1
paprika - 1 tsp
black pepper
savory
salt
flour - 3 - 4 tablespoons

Steps:

  • Chop the meat into bites or large pieces. Chop the onions finely. Peel the tomato and cut or grate it. Clean the potatoes , chop them finely.
  • Clean the green beans, wash, chop them and soak for 1-2 min. in hot water.
  • Braise the bits of meat. Add the chopped onions to them. Leave to saute well. Once the meat is nearly ready add the green beans .
  • Add the paprika and pour in a cup of water. Add the remaining spices.
  • Stir the flour with a little water and add to the dish. Top off with water and leave to boil until ready.

This is my family's version of a German recipe I came across years ago. The mashed potatoes are not inclued time and directions as I offten make them the day before and rewarm just before serving.

1 1/2 lbs boneless pork shoulder
4 cups chicken broth
1 1/2 lbs frozen green beans, cut
1/2 tablespoon sugar
1 1/2 teaspoons salt, adjust to taste
2 tablespoons vinegar, white
1/4 teaspoon savory or 1/4 teaspoon poultry seasoning
1/8 teaspoon pepper, adjust to taste
mashed potatoes, enough to serve 6
2 tablespoons minced fresh parsley

Steps:

  • Cut pork into 1 inch cubes and place in large pot with chicken broth. Cover and simmer for an 1 1/2 hours.
  • Add frozen green beans, recover and simmer an additional 30 minutes.
  • Add sugar, salt, vinegar, savory and pepper. Recover and simmer 10 more minutes.
  • Ladle into six bowls top each with a helping of mashed potatoes and sprinkle with parsley.

3 pounds boneless (farmer's style) pork spareribs, cut into 1 1/2-inch pieces
2 large onions, chopped
8 garlic cloves, minced
1 28-ounce can Italian plum tomatoes
1 14 1/2-ounce can low-salt chicken broth
1 cup dry white wine
1 teaspoon dried thyme, crumbled
1 teaspoon dried oregano, crumbled
3/4 cup hojiblanca, cacereña or Niçoise olives
1 pound green beans, cut into 2-inch lengths

Steps:

  • Heat 2 tablespoons olive oil in heavy Dutch oven over medium-high heat. Season pork with salt and pepper. Add pork to pot and cook until brown, stirring occasionally, about 8 minutes. Using slotted spoon, transfer pork to plate. Add remaining 2 tablespoons olive oil to pot. Add onions and sauté until very tender, about 12 minutes. Add garlic and cook 3 minutes. Return pork to pot. Add tomatoes with their juices, low-salt chicken broth, white wine, thyme and oregano. Bring to boil. Reduce heat to medium-low and simmer uncovered until pork is almost tender, about 1 hour. Add olives and continue cooking until pork is very tender and juices are slightly thickened, about 45 minutes.
  • Add green beans to stew. Cover and cook over low heat until beans are just tender, about 8 minutes. Season to taste with salt and pepper and serve.

6 Potatoes peeled and cubed
1 ts Gravy darkener; (Optional)
All-purpose Flour seasoned
1 1/2 lb Lean Pork; cut into small
1 md Onion; diced
2 lb Fresh Green Beans; trimmed

Steps:

  • Pre-heat oven to 300-F degrees. Warm canola oil in a 4-quart oven-proof stock pot or Dutch Oven over medium-high heat setting. While oil is warming, combine about a half-cup of flour with the seasonings and dredge the cubed pork in the mixture. Brown the pork well in the warm oil. When the pork is browned to your satisfaction, add onion and saute until softened, about 3 to 5 minutes. Add chicken broth. Cover pot; bake about 40 minutes, then add the green beans and potatoes and bake for another hour or more, until everything is nice and tender. Darken the gravy if you wish, and if the dish is a bit dry. add more broth. Season with salt and pepper to taste, and serve warm. 1 1/2 pounds pork sirloin chops or pork blade steaks, bones removed
1 1/2 cups jasmine rice, rinsed
Zest of 1 lemon, removed in wide strips with a vegetable peeler
Kosher salt and freshly ground pepper
1/4 cup vegetable oil
1 pound haricots verts, trimmed and halved
2 cloves garlic, finely chopped
1/2 red jalapeno pepper, seeded and finely diced
1 tablespoon grated peeled fresh ginger
1/3 cup packed dark brown sugar
1 tablespoon fish sauce
Chopped fresh cilantro and/or mint, for topping

Steps:

  • Put the pork in the freezer while you prepare the rice. Put the rice in a medium saucepan and add 2 cups water, the lemon zest and 1/2 teaspoon salt; bring to a boil. Stir, then cover and reduce the heat to low. Cook until the water is absorbed, about 10 minutes. Turn off the heat and let stand 10 minutes. Fluff the rice with a fork.
  • Meanwhile, cut the pork into 1 1/2-by-1/2-inch strips. Season with salt and pepper. Heat 2 tablespoons vegetable oil in a large nonstick skillet over high heat until very hot. Add half the pork and cook until browned, about 2 minutes per side. Remove to a large bowl; repeat with the remaining pork.
  • Add another 1 tablespoon vegetable oil to the skillet over medium heat. Add the haricots verts, 1/4 teaspoon salt and 1/3 cup water; cook, stirring, until the water evaporates and the haricots verts start browning, about 6 minutes. Add to the pork.
  • Add the remaining 1 tablespoon vegetable oil, the garlic, jalapeno and ginger to the skillet and cook, stirring, until golden, 1 minute. Add the brown sugar, fish sauce and 1/4 cup water; cook until the sauce is thick and bubbling, 1 to 2 minutes. Add the pork and haricots verts to the sauce and toss until glazed, about 1 minute; season with salt. Serve the stir-fry with the rice; top with cilantro and/or mint.

2 tablespoons vegetable oil
1 teaspoon minced garlic
1 large onion, chopped
1 (12 ounce) pork tenderloin, cut into 1/2 inch cubes
1 (19 ounce) can black beans, drained and rinsed
¼ cup water
1 ½ cups chicken stock
3 chorizo sausages, cut into 1/2 inch thick pieces
2 bay leaves
salt and pepper to taste

Steps:

  • Heat 1 tablespoon vegetable oil in a skillet over medium heat, stir in garlic and onion, and cook a few minutes until the onion softens and turns translucent. Remove the onion, and place into a saucepan. Pour the remaining 1 tablespoon vegetable oil into the skillet, and place over medium-high heat. Add cubed pork, and cook until well browned.
  • Meanwhile, pour 3/4 of the black beans along with 1/4 cup water into the bowl of a blender, and pulse until finely chopped, but not quite smooth. Pour whole beans and bean puree into saucepan along with pork cubes, chicken stock, chorizo, and bay leaves. Bring to a boil over medium-high heat, then reduce heat to medium-low, cover, and simmer 30 minutes. Season to taste with salt and pepper before serving.

1 (about 3/4 pound) pork tenderloin, trimmed of excess fat
Coarse salt
2 tablespoons soy sauce
1 tablespoon rice vinegar
1 teaspoon sugar
3 teaspoons vegetable oil
2 tablespoons minced, peeled peeled fresh ginger
1/8 to 1/4 teaspoon red-pepper flakes
1 pound green beans, trimmed and cut crosswise into 2-inch pieces
1 red bell pepper, ribs and seeds removed, cut into thin strips
1/3 cup dry-roasted peanuts, chopped
Cooked white rice, for serving (optional)

Steps:

  • Cut pork diagonally into 1/4-inch thick slices; cut each slice lengthwise in half. Season with 1/2 teaspoon salt. In a small bowl, mix soy sauce, vinegar, and sugar; set sauce aside.
  • Heat 1 teaspoon oil in a large skillet over medium-high. Add half the ginger, pepper flakes, and pork; cook, stirring, until pork is no longer pink, about 3 minutes. Transfer to a plate. Repeat, cooking remaining ginger, pepper flakes, and pork in another teaspoon oil; transfer to plate.
  • Meanwhile, cook green beans in a medium pot of boiling salted water until crisp-tender, about 4 minutes. Drain; dry with paper towels.
  • Add remaining teaspoon oil to the skillet. Add beans, bell pepper, and 2 tablespoons water; cook over high heat, stirring often, until peppers are tender, about 2 minutes.

1 pound white or cannellini beans, soaked overnight or quick-soaked
1 tablespoon olive oil
1 pound boneless pork butt, cut into 1-inch cubes
1 onion, sliced
12 to 15 peeled whole garlic cloves
1 cup chopped tomatoes
2 cups thinly sliced kale or mustard greens
2 tablespoons grainy mustard
2 teaspoons kosher salt
1 teaspoon black pepper
About 1 quart chicken stock

Steps:

  • Drain and rinse the soaked beans, then heat the oven to 350.
  • Heat the oil in a 6-quart Dutch oven or other large, heavy pot over medium-high until hot but not smoking. Add the pork and brown well on all sides, about 10 to 12 minutes. Remove the pork from the pot, add the onion and sauté, stirring occasionally until translucent, 5 to 7 minutes. Add the garlic and sauté, stirring frequently, 1 minute.

Providing all five of your 5-a-day, this flavour-packed butterbean stew pairs perfectly with lean pork shoulder steaks - perfect to enjoy after a workout

3 garlic cloves , 1 crushed, 2 sliced
2 tbsp rapeseed oil
4 tsp smoked paprika
4 lean pork shoulder steaks (525g), trimmed of any fat
2 large onions (340g), halved and sliced
325g carrots (about 6), diced
2 tbsp sherry vinegar
2 red peppers , deseeded and chopped
1 tbsp vegetable bouillon powder , made up to 500ml with boiling water
3 rosemary sprigs , leaves picked and finely chopped
200g whole cherry tomatoes
2 tbsp tomato purée
2 x 400g cans butter beans , drained
⅓ x 30g pack parsley , chopped
squeeze of lemon (optional)

Steps:

  • Mix the crushed garlic, 1 tbsp of the oil and 1 tsp smoked paprika together in a shallow dish and turn the pork steaks over in the mix to coat them on both sides. Heat a large non-stick frying pan and fry the pork for about 4 mins on each side to part-cook and brown them, then remove them from the pan.
  • Add the rest of the oil to the pan and fry the onions, carrots and sliced garlic, stirring frequently for 10 mins until the veg starts to caramelise a little. Pour in the sherry vinegar, allowing it to sizzle in the heat, then add the peppers, bouillon, rosemary, any juices left in the dish from the pork, the cherry tomatoes, tomato purée, remaining 3 tsp paprika and beans.
  • Lay the pork steaks on top, then cover the pan and cook for 20 mins until the pork and vegetables are tender. The pork will be cooked and juicy, but not fall apart. Remove the pork from the pan, stir in the parsley and a squeeze of lemon juice, if using.
  • If you're following our Healthy Diet Plan, eat two portions of the pork and beans now and chill the rest for another day. Will keep for up to two days. To serve the second night, just reheat in a pan.
