CHARMING CHOCOLATE CUPCAKES
Cupcakes are great. They're easy to make, portable, and take the formality out of cake. It doesn't matter whether you serve them out of a plastic container or off a silver plate-- your guests will love them. (This recipe is from the cookbook "How It All Vegan.")

Steps:
- Preheat oven to 375 degrees F.
- In a small saucepan, whisk together the molasses, 1/2 cup of the milk, and the chips.
- Cook on medium heat until chips have melted, stirring constantly with a spoon.
- Add the oil, vanilla, cornstarch, and stir well until mixed.
- Remove from heat and set aside.
- In a medium bowl, sift the flour and baking soda together.
- Add the remaining milk and the chocolate mixture and stir.
- Spoon into cupcake paper liners and bake for 15-20 minutes.
- Test with a knife to see if done.
- Once cooled, you can frost with icing.

HOT CHOCOLATE CUPCAKES
This cupcake is great for when you want some awesome hot chocolaty goodness. Goes great with a marshmallow frosting for Christmas.

- Preheat the oven to 350 degrees F (175 degrees C). Line two 12-cup muffin tins with paper liners.
- Combine water, butter, oil, and chocolate in a large saucepan. Heat over medium heat until melted and fully combined.
- Whisk flour, sugar, cocoa, baking soda, and salt together in a large bowl. Pour in hot chocolate mixture and whisk until combined. Whisk in eggs, one at a time. Whisk in buttermilk and vanilla extract.
- Spoon batter into the prepared muffin cups, filling each 2/3 full.
- Bake in the preheated oven until a toothpick inserted into the center comes out clean, 17 to 22 minutes. Cool for 10 minutes.

RICH CHOCOLATE CUPCAKES
My mom made wedding cakes throughout my whole childhood. People would always tell her that her cakes were not only beautiful, but the best tasting cakes they have ever tasted. Her secret was to combine a good scratch recipe with a boxed cake mix. It would make a light, moist cake which held up well when stacked. I have never strayed from her recipes and use them every time!

- Preheat the oven to 375 degrees F (190 degrees C). Line 24 cupcake cups with paper liners.
- Sift cake mix, flour, sugar, cocoa, baking soda, baking powder, and salt into a large bowl.
- Mix coffee, oil, buttermilk, eggs, and vanilla extract together in another bowl. Gradually add to flour mixture, scraping down sides occasionally; mix well. Fill the prepared cupcake cups 2/3 full with batter.
- Bake in the preheated oven until tops spring back when gently touched, 20 to 25 minutes. Cool on a wire rack.

- Preheat the oven to 350°F and line a muffin tin with cupcake wrappers
- Whisk together flour, baking powder, and salt in a medium bowl.
- In another medium bowl, beat the eggs and sugar with an electric mixer until light and fluffy, about 2 minutes.
- While beating the eggs, gradually pour in the softened butter and vanilla. Continue to mix slowly and add half the flour mixture.
- Add the milk, followed by the rest of the flour mixture, cocoa powder and chocolate chips.
- Bake for 18-20 minutes, or until a toothpick comes out cleanly.
- Cool for 10 minutes in the muffin tins then transfer to a wire rack to cool completely and decorate as desired.
