CARNE GUISADA
While living away from Texas for a while, my boyfriend and I grew homesick for the spicy flavors of home. We've made this recipe a few times now, and it goes really well with homemade flour tortillas. We love it over rice, too. -Kelly Evans, Denton, Texas

Steps:
- In a 4- or 5-qt. slow cooker, mix first 13 ingredients and, if desired, liquid smoke. Stir in pork, potatoes and onion. Cook, covered, on low until pork is tender, 7-9 hours., Discard bay leaf; skim fat from cooking juices. Shred pork slightly with 2 forks. Serve with remaining ingredients as desired.

PORK CARNE GUISADA

Steps:
- In a cast iron or heavy bottom skillet, heat 2 tablespoons olive oil and brown the pork on medium high heat until the sides of the meat have a caramel color. Do not overcrowd the pan; work in batches.
- Remove meat from skillet and place in the bowl of a slow cooker.
- Add 2 more tablespoons of olive oil and saute the onions and peppers over medium high heat for about 10 minutes or until the onions are translucent and softened.
- With a slotted spoon, strain and scoop out the onions and peppers and place them with the meat in the bowl of the slow cooker.
- Add the Masa, stirring to combine and cook over medium heat for about 1 minute, stirring often.
- Add the garlic and cook for another minute.
- Add the beer and water and whisk to smooth out any lumps.
- Whisk in the tomato sauce, cumin, chili powder, salt and pepper.
- Pour gravy over meat, stirring to combine.
- Cover and set slow cooker to low. Cook for about 6 hours or until meat is tender.
- Serve hot with warm tortillas, diced onion, chopped fresh cilantro, sliced avocado and lime wedges.
CARNE GUISADA
Steps:
- In a large saute pan over medium heat add the cubed meat and cook until browned. Add the chopped bell pepper, onion, tomato, garlic, cumin, black pepper and 1-ounce water and stir to combine. Add 1 quart water and bring everything to a boil. Turn the heat down and add the roux. Cook the mixture until it thickens and season with salt, to taste. Transfer to a serving bowl or platter and serve.
CARNE GUISADA III
The Perfect Puerto Rican Meal. Everywhere you go this is the one of the main dishes that is served. It goes very well served over steamed rice.

- In a large pot, combine tomato sauce, sofrito sauce, sazon seasoning, adobo seasoning, oregano, and salt. Simmer over medium low heat for 5 minutes. Add meat, and cook until evenly browned. Stir in just enough water to cover meat. Cover, and simmer for about 1 hour. Add potatoes, and cook for about 30 minutes or until potatoes are tender.

CARNE GUISADA
Tex-Mex style beef stew. Great all by itself, with rice, tortillas and sliced avocados. Perfect over the top of cheese enchiladas. Use leftovers over nachos. You can added Jalapenos or other chilis if you want more kick, but the rotell tomatoes add a little kick already. Serve with some sour cream to cut the heat.

Steps:
- cut roast up into bite-sized chunks, discarding fat.
- brown beef well in oil on all sides.
- chop onion and peppers, and add to pot. Cook 7 min or so, until softened.
- Add all spices and flour, and stir. Mixture will be thick. Cook 2 minutes.
- Combine can of tomatoes in measuring cup with water to equal 2 cups, then add to pot.
- Bring to boil.
- Turn to simmer, cover and cook 2 hours, stirring occasionally.
- Add 4oz tomato sauce and cook another 15 minutes.
- Dish is finished when beef is very tender, and flakes with fork.

AUTHENTIC CARNE GUISADA
A mexican style beef stew. You can also serve this over rice or noodles, but I prefer it on tortillas like a burrito. This doubles and freezes well.

Steps:
- Brown beef well in a large cast iron dutch oven, a heavy stainless steel pot can be used with good results.
- Add onion and garlic and cook until onions are translucent.
- Add stock, chili powder, comino, salt, and pepper.
- Bring to a simmer and cook for 2-3 hours or until beef is very tender.
- In a separate skillet mix flour and oil together to form a roux.
- Cook over medium high heat until a dark beige color, about 5 minutes.
- Be careful not to let it burn.
- Carefully add roux to stewed beef.
- Be very careful because it can splatter.
- Bring back to a simmer and thicken, simmer for 5-10 minutes to allow flavors to meld.
- Serve like a soft taco on flour tortillas with fresh cilantro, chopped onions, shredded cheese and sour cream for garnish.
EASY SLOW COOKER CARNE GUISADA
Carne guisada is a hearty Mexican-style beef stew. It is excellent with tortillas or cornbread, and is also great as a burrito filling.

- Combine beef, potatoes, onion, peppers, and garlic in a large bowl. In a small bowl, mix together the flour, chili powder, cumin, and salt. Toss the beef mixture with the flour mixture until evenly coated. Place the mixture into a slow cooker, and pour in enough beef broth to barely cover the meat. If you don't have quite enough, you can fill the rest of the way with water.

- In a 6-qt. electric pressure cooker, mix first 13 ingredients and, if desired, liquid smoke. Stir in pork and onion. Lock lid; make sure vent is closed. Select manual setting; adjust pressure to high and set time for 45 minutes. Quick release the pressure; add potatoes. Lock lid in place and cook an additional 5 minutes. When finished cooking, allow pressure to naturally release for 10 minutes and then quick release any remaining pressure according to manufacturer's instructions., Discard bay leaf; skim fat from cooking juices. Select saute setting and adjust for normal heat; bring a to boil. Combine flour and 1/4 cup water; stir into simmering sauce. Cook until thickened and boiling, 1-2 minutes Shred pork slightly with two forks; toss with sauce. Serve with remaining ingredients as desired.

- Heat 1 tablespoon of the oil in a dutch oven on medium-high heat. Brown the cubed pork loin in batches removing the browned pork to a plate when finished cooking. Add more oil as needed.
- While the pork is browning, rough chop the peppers, onion, tomato and garlic. When the pork has been browned, add the rest of the oil and saute the vegetables in the pot. Add the chile powder, cumin, garlic powder, 2 cloves, half of the salt and the bay leaf. Saute until fragrant and then add the chicken broth, and browned pork loin with juices. Simmer for 1 1/2 - 2 hours, until the pork is tender. At the last 20 minutes of cooking, add the cinnamon stick. Don't forget to remove the cinnamon stick and bay leaf before serving!
- While the Pork Carne Guisada is simmering, cut up the cauliflower and grate it in a food processor, or by hand. This will be your low carb cauliflower "rice". Put the raw, grated cauliflower rice in a microwave proof glass bowl and add 2-3 tablespoons of water. Cover with plastic wrap. When you are ready for dinner, microwave the cauliflower rice on high for 3-5 minutes depending on your desired texture. Carefully pour out the extra water. Add the ghee, chopped cilantro and salt and pepper to taste. Mix.
- I like to cook my pork garne guisada until the sauce is almost thick enough to eat in tortillas. Then, I add the thickener as a slurry. This is a personal preference. Others like their Pork Carne Guisada more like a stew. That's how I like my Beef Carne Guisada - more like a stew.
