PINTOS AND PORK
Very easy and versatile. Makes the house smell delicious. Eat it with a tortilla or over corn chips with some shredded cheese on top.

Steps:
- Rinse beans and cover with water. Soak overnight OR bring to a boil and boil for two minutes, remove from heat. Cover and let stand for 1 hour.
- Drain beans.
- Cut roast in half and place in bottom of crock pot.
- Combine beans and remaining ingredients. Pour over roast.
- Cook on high for 3 hours then to low for 5.
- Remove meat, shred and return to the crock pot.

- In a stockpot, combine the first eight ingredients; cover with water. Bring to a boil. Reduce heat; simmer, covered, 3 to 4 hours or until meat and beans are tender., Remove pork; cool slightly. Stir carrots, celery and tomatoes into bean mixture; return to a boil. Reduce heat; simmer, covered, until vegetables are crisp-tender. Add zucchini; cook 8-10 minutes longer or until crisp-tender., Meanwhile, remove pork from bone; discard bone. Cut pork into bite-size pieces; return to pot and heat through. Serve with tortillas., Freeze option: Freeze cooled pork mixture in freezer containers. To use, partially thaw in refrigerator overnight. Microwave, covered, on high in a microwave-safe dish until heated through, gently stirring and adding a little broth or water if necessary. Serve with tortillas.

- Clean the beans over night, then place in a large stock pot and cook on stove or in a cooker. Place on Med. High on the stove if you use the stock pot. Then after the beans have cooked for about half an hour add the bacon, herbs and the pork chops. Cook until the beans lose their spots and the meat is tender and well cooked.
- You may have to continue adding water as you go.

PORK AND PINTO BEAN STEW(CROCKPOT)
This meal was born out of desperation! I hadn't been to the grocery and just had to cobble something together from what I had on hand. What I had was a small pork roast and half a bag of pinto beans! Desperation never tasted so good!

- 1. Heat oil in skillet and cook and stir cubes of pork until nicely browned on all sides.
- 2. Add pork, soaked and drained beans,water and all remaining ingredients(except fresh cilantro, if using) to crock. Cook on high 5 or six hrs. until beans are very tender. Stir in fresh cilantro
- 3. *to quick-soak beans: Place in pot with covering an inch above beans. Bring to a boil, turn off heat, cover and soak one hr. Drain. **When I have plenty of time for these to be in the crockpot(maybe 7 or 8hrs.), I sometimes omit the soaking.

- Preheat oven to 350°. In a Dutch oven, cook bacon over medium heat until crisp, stirring occasionally. Remove with a slotted spoon; drain on paper towels. Discard drippings, reserving 2 tablespoons in pan., Add onion to drippings; cook and stir over medium heat 6-8 minutes or until tender. Add garlic; cook 1 minute longer. EASY OVEN BAKED BEANS AND PORK CHOPS
This is an easy but really tasty pork chop dish --- purchase the thicker size pork chops or you may use 2-3 larger pork steaks, the thinner chops tend to fall apart when baked as they bake too fast, if desired you can top with shredded cheddar cheese the last 15 minutes of baking, also chopped fresh garlic may be added also to the bean mixture -- this may also be cooked in a crockpot, just brown the chops firstly in a skillet.

Steps:
- Set oven to 350 degrees.
- Brown the chops in a frypan on both sides with salt, pepper and garlic powder (if using); set aside.
- Grease an Dutch oven or a oven-proof casserole dish (large enough to hold the ingredients).
- In a bowl mix together the pork and beans, chopped onion, chopped green pepper, BBQ sauce, ketchup, brown sugar and cayenne pepper (if using).
- Layer HALF of the bean mixture on the bottom of Dutch oven.
- Lay the pork chops on top of the bean mixture.
- Top with remaining bean mixture.
- Bake covered or uncovered for about 1 hour and 15 minutes, or until the chops are tender (if you prefer a thicker sauce then bake covered for half the time then finish baking uncovered).
- DELICIOUS.
