1/4 cup chopped prunes
1/4 cup toasted slivered almonds, chopped, plus more for garnish
3 tablespoons lemon olive oil
4 pork loin rib chops, 1 1/2 inches thick
Course salt and freshly ground black pepper
2 ounces goat cheese

Steps:

  • In a bowl, mix the prunes and almonds with 1 tablespoon of lemon olive oil.
  • Cut a pocket on the side of each pork chop from the fat side to the bone. Season the outside of each chop with salt and pepper, to taste. Stuff each chop with 1/2-ounce of goat cheese, pushing it to the bottom of the opening, then stuff with the prune mixture. Secure with toothpicks.
  • Heat the remaining 2 tablespoons lemon olive oil in a large shallow Dutch oven over medium-high heat. Sear the chops on both sides until golden brown. Add water to come 1/4 of the way up the side of chops. Cover and simmer until the chops are cooked, about 15 to 20 minutes. Remove chops to a serving platter and simmer the liquid and any stuffing drippings until reduced to a thick sauce. Pour the sauce over the chops and serve garnished with toasted almonds.

6 center-cut pork chops (1 1/2-inch thick)
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1 tablespoon olive oil
1 tablespoon olive oil
1 small apple, peeled, cored and diced
1/2 cup diced onion
1/2 cup diced celery
1 1/2 cups fat-free chicken broth
1/4 cup Fisher Dried Sweetened Cranberries, chopped
1 (6 ounce) package seasoned stuffing mix
1/4 cup Fisher Chef's Naturals Chopped Pecans
2 tablespoons fresh flat-leaf parsley, chopped

Steps:

  • Preheat oven to 350°F.
  • For stuffing, heat oil in large skillet over medium heat 1 minute until hot. Add apple, onion and celery. Cook and stir 3 to 4 minutes until softened.
  • Add chicken broth and cranberries; cook 3 to 4 minutes until mixture begins to bubble. Stir in stuffing mix, pecans and parsley. Remove from heat; set aside.
  • For pork chops, lightly spray 9 x 13-inch baking dish with vegetable oil spray; set aside.
  • Place pork chops on work surface. Cut a slit horizontally in each pork chop forming pocket. Spoon stuffing into pocket of each pork chop. Secure pork chops using toothpicks. Sprinkle with salt and pepper.
  • Heat oil in large skillet over medium-high heat 1 minute until hot. Add pork chops; cook 2 to 3 minutes per side until deep golden brown.
  • Transfer pork chops to baking dish. Bake 15 to 20 minutes until internal temperature reaches 155°F to 160°F on instant-read thermometer inserted in pork.
  • Remove from oven to cooling rack; loosely cover with aluminum foil. Allow pork chops to cool for 8 minutes before serving.

1 cup Fisher® Pecan Halves, toasted and coarsely chopped
1/2 cup Panko breadcrumbs, toasted
4 Tbsp. unsalted butter, melted
2 tsp. grated lemon zest
1/4 tsp. kosher salt
The pork chops:
1 Tbsp. vegetable oil
4 center-cut bone-in pork chops, preferably with the bone still attached, 1 to 1½ inches thick
2 Granny Smith apples, cored, halved and cut into ½-inch thick slices
1 teaspoons honey
1 tsp. lemon juice

Steps:

  • 1. Preheat the oven to 350 degrees F.
  • 2. Nut Crust: Stir all ingredients together in a small bowl; set aside.
  • 3. Pork Chops: Heat a large skillet over medium heat and add oil. When the oil begins to smoke lightly, season the pork chops on both sides with salt. Arrange them in a single layer in the skillet. Cook for 2 to 3 minutes, or until browned. Turn over and cook for an additional 2 to 3 minutes. Transfer to a baking sheet. Top each pork chop with reserved crust. Bake for 15 to 20 minutes or until nut crust browns and pork reaches an internal temperature of 145 degrees F.
  • 4. Meanwhile, cook the Granny Smith apple slices with the honey in the pan where the pork chops were cooked over medium heat. Stir occasionally, until tender, 5-8 minutes. Stir in the lemon juice, set aside.
  • 5. Arrange the pork chops on a platter on top of the apples. Serve immediately.
