Steps:
- Whisk together first four ingredients. Place pork chops in a 3-qt. slow cooker; top with cranberry mixture. Cook, covered, on low until meat is tender, 4-5 hours., Remove chops; keep warm. Strain cooking juices and transfer to a small saucepan. Mix cornstarch and water until smooth; stir into cooking juices. Bring to a boil; cook and stir until thickened, 1-2 minutes. Stir in salt and pepper. Serve with chops.

Steps:
- Mix brine ingredients and stir well. Place chops and bring in food storage bag and refrigerate 12 - 24 hours.
- In small pan, add sauce ingredients and mix well heat until warm. Reserve one half cup sauce for plating.
- Grill for 8 minutes on each side. During the last 3-minutes of cooking, baste both sides of chops well with sauce. Internal temperature of chops should reach 150 to 155 F prior to removing from grill.
- Drizzle reserve sauce over chops when serving or serve warm on the side.

PORK CHOPS WITH CRANBERRY APPLE RELISH
The cranberry apple relish is the star of this dish. We could eat it off a cracker on its own. It's tart, sweet and lightly spiced with the cinnamon. There's a delightful crunch from the walnuts. Simply superb! We taste-tested with pork chops, but turkey or chicken breasts would be great with this too.

Steps:
- 1. Combine cranberries, apples, brown sugar and water in a large saucepot.
- 2. Simmer over medium heat for 15 minutes, stirring frequently.
- 3. Stir in cinnamon and walnuts.
- 4. Cook 5 minutes.
- 5. While relish is cooking place 4-6 pork chops in a large frying pan and cook until just shy of done.
- 6. Pour cranberry-apple relish over the pork chops and simmer about 10 minutes to allow flavor to penetrate the meat.
- 7. When plating, place a pork chop on plate and spoon relish over top. Let rest for about 2 minutes. Serve.

- Preheat oven to 350 degrees F (175 degrees C).
- In a Dutch oven, melt 1 tablespoon butter over medium heat. Cook onion in butter until the onions are very soft and begin to brown. Remove from heat. Stir in apple, celery, and dried cranberries. Season with salt.
- Lay each chop flat on cutting board, and with a sharp knife held parallel to the board, cut a pocket into the pork, leaving three sides intact. Stuff each chop with apple-cranberry mixture.
- Melt remaining butter in the Dutch oven over medium heat. Pan-fry chops in butter for two minutes on each side. Cover, and bake in preheated oven for 45 minutes.
- Transfer chops from pan to a plate, and cover with foil. Place the Dutch oven back on the stovetop over medium heat. In a small bowl or measuring cup, stir together apple juice, cornstarch, and brown sugar; pour into Dutch oven. Reduce liquid volume by half, stirring frequently. Season to taste with black pepper. Serve this apple glaze over pork chops.

- Rub chops with garlic (I use garlic powder), and sprinkle with salt and pepper to taste.
- Heat butter in skillet and brown chops well on both sides.
- Add apple juice; cover and simmer for 1 hour or until pork is fork tender.
- Place chops on a broiler pan and set aside.
- Drain pan juices into a bowl through a strainer and stir in the cranberry sauce, apple sauce and cloves and beat with a whisk until well blended.

- Heat 1 tablespoon olive oil in skillet over medium heat.Stir in the onion and apple; cook and stir for 5 minutes.Stir in the cranberries and balsamic vinegar and continue cooking until the apple and onions have softened, about 5 minutes more.Season to taste with salt and pepper.Remove to plate and let cool.
- Preheat oven to 350 degreesF.(175 degrees C.) Lightly grease a small baking dish.
- Cut a large pocket into the pork chops using a sharp , thin bladed knife.Stuff the cooled apple mixture into the pork chops and secure with toothpicks if needed. Heat olive oil in a large skillet over med- high heat. Season the pork chops with salt and pepper to taste, and place in the hot skillet. - In a large skillet, heat butter over medium heat.
- Add onions and sauté for 4 to 6 minutes, until lightly browned.
- Remove onions to a plate and set aside.
- Add vegetable oil to the skillet.
- Sprinkle pork chops with salt and pepper then dredge in flour.
- Brown the pork chops for about 2 minutes on each side.
- Return the onions to the skillet making a layer over the chops.
- Meanwhile, combine chopped apples with lemon juice, apple cider, brown sugar, and cinnamon.
- Pour the apple mixture over the pork chops and onions and bring to a simmer.
- Reduce heat to medium-low and simmer, uncovered, for 5 minutes.
- Cover and simmer for 20 minutes.
- Stir in cranberries and continue cooking for 2 minutes longer.
