1/4 cup plus 6 tablespoons extra-virgin olive oil
1 shallot, sliced
3 cloves garlic, minced
4 ripe beefsteak tomatoes, cored and chopped
2 tablespoons mirin
4 center-cut pork chops (about 1/2-inch thick)
Kosher salt and freshly ground pepper
1 leek (white portion only) thoroughly washed

Steps:

  • 1. Preheat the oven to 400 degrees F. Heat 1/4 cup olive oil in a skillet. Add the shallots and garlic and cook until translucent, about 3 minutes.
  • 2. Stir in the tomatoes and mirin; cook over medium heat until the mixture is almost dry, about 15 minutes.
  • 3. Heat 2 tablespoons oil in a large skillet. Sprinkle the chops with salt and pepper. Sear the chops until brown, about 1 1/2 minutes on each side. Transfer to the oven and cook until an instant-read thermometer reaches 145 degrees F, about 5 minutes.
  • 4. Add the remaining 4 tablespoons olive oil to the pan. Thinly slice the white portion of the leek. Add the leeks to the hot oil and fry until crispy.

4 bone-in pork chops (1/2 to 3/4 inch thick; about 8 ounces each)
1 teaspoon fennel seeds, lightly crushed
Kosher salt and freshly ground pepper
2 tablespoons unsalted butter
6 wide strips lemon zest (removed with a vegetable peeler), plus 1 tablespoon juice
3 cloves garlic, smashed
2 sprigs rosemary
2 large leeks (white and light green parts only), halved lengthwise and cut into 1- to 1 1/2-inch pieces
1 bulb fennel, sliced 1/4 to 1/2 inch thick, fronds chopped
1 cup apple cider
2 tablespoons extra-virgin olive oil

Steps:

  • Season the pork chops on both sides with the fennel seeds and a few pinches each of salt and pepper. Set aside while you prepare the vegetables.
  • Melt the butter in a large wide pot or Dutch oven over medium heat. Add the lemon zest strips, garlic and rosemary and cook, stirring, until the garlic is softened, 1 to 2 minutes. Stir in the leeks, sliced fennel, 1/2 teaspoon salt and a few grinds of pepper. Pour in the cider, cover and reduce the heat to medium low. Cook, stirring occasionally, until the leeks and fennel are tender but not browned, 15 to 20 minutes.
  • Meanwhile, heat the olive oil in a large skillet over medium-high heat. Working in two batches if necessary, add the pork chops and cook until well browned but still rosy near the bone, 4 to 5 minutes per side. Transfer to a plate and let rest 5 minutes.
  • Discard the rosemary from the leeks and stir in the lemon juice and 1/4 cup fennel fronds; season with salt and pepper. Divide among plates and top with the pork. Drizzle with any accumulated juices from the pork plate and sprinkle with a few more fennel fronds.

3 tablespoons olive oil
1 large onion, halved lengthwise, then thinly sliced lengthwise
1/2 teaspoon salt
ground pepper, to taste
4 pork loin chops, 1 inch thick
1 pint red grape tomatoes or 1 pint cherry tomatoes, halved lengthwise
1/2 yellow pepper, thinly sliced
2 1/2 teaspoons balsamic vinegar

Steps:

  • Heat 2 tablespoons oil in a 12-inch heavy skillet over moderately high heat until hot but not smoking. Saute onion and yellow pepper with salt, stirring occasionally, until golden brown, about 8 minutes. Transfer to a bowl.
  • Pat pork chops dry and season with salt and pepper. Heat remaining tablespoon oil in skillet over high heat until just smoking, then saute chops until browned and just cooked through, about 3 minutes on each side. Transfer chops to a platter and keep warm, covered.
  • Return onion and yellow pepper to skillet and add tomatoes. Saute over moderately high heat, stirring, until tomatoes are slightly wilted, about 2 minutes. Remove from heat and stir in vinegar and salt and pepper to taste.
  • Serve chops topped with onion, peppers and tomato.

1 large onion, halved and thinly sliced
4 pork loin chops, 1 inch thick
salt to taste
black pepper to taste
1 pinch garlic powder to taste

1 tablespoon dried basil
2 ½ teaspoons balsamic vinegar

This is from the May 2009 bon appetit magazine. They did a story about heritage pork which is tastier, smaller and marbled better. I"ve just been using regular chops when I make this but if you have access to heritage pork, I'm sure it would take this recipe to a higher level. I posted this just the way it was written in the magazine but I always cook my chops for longer than this recipe says. There's just no way to get them fully cooked in that short amount of time. I basically double their times for the chops. You can figure on this taking a good 40 minutes if you're using the thick chops that are called for.

4 bone-in heritage pork rib chops (1 1/2 to 2 inches thick)
2 teaspoons coarse kosher salt
2 teaspoons chopped fresh thyme
1 teaspoon finely chopped fresh rosemary
1 teaspoon fresh ground black pepper
2 bacon, slices coarsely chopped
olive oil (optional)
4 cups thinly sliced leeks (white and pale green parts only, about 3 large)
3 garlic cloves, minced
1/4 cup brandy
1 cup low sodium chicken broth
2 teaspoons finely ichopped fresh sage
2 tablespoons Dijon mustard
1/3 cup creme fraiche or 1/3 cup sour cream

Steps:

  • Pat chops dry with paper towels. Mix 2 teaspoons coarse salt, thyme, rosemary, and 1 teaspoon pepper in small bowl. Sprinkle seasoning mixture on both sides of chops. Let stand at room temperature 1 to 2 hours or wrap and chill up to 1 day.
  • Heat heavy large skillet over medium heat. Add bacon and sauté until crisp and lightly browned. Using slotted spoon, transfer bacon to small bowl. Increase heat to medium-high. Add chops to skillet. Sear until brown, 4 to 5 minutes per side. Transfer chops to small baking sheet.
  • Pour off all but 3 tablespoons drippings from skillet (or add olive oil to make 3 tablespoons). Add leeks and sauté until soft, about 7 minutes. Add garlic and stir 1 minute. Add brandy, then broth and bring to boil, scraping up browned bits. Return bacon to skillet; add sage and stir to blend.
  • Nestle chops in leeks in skillet. Reduce heat to medium-low. Cover; simmer 3 minutes. Turn chops over. Cover; simmer until thermometer inserted into thickest part of chops registers 140°F to 145°F, about 3 minutes longer. Transfer chops to platter. Tent loosely with foil to keep warm.
  • Spoon off any fat from cooking liquid in skillet. Boil until all liquid evaporates, about 3 minutes. Whisk in mustard, then crème fraîche; do not boil. Season with salt and pepper. Spoon over chops.

1 (8 ounce) can tomato sauce
2 fluid ounces water
1 teaspoon Worcestershire sauce
salt and pepper to taste

Steps:

  • Heat the oil in a skillet over high heat, and quickly brown the pork chops on both sides. Transfer chops to platter, and keep warm.
  • Reduce skillet heat to medium, and cook the onion until tender. Mix in the sugar, chili powder, fennel, red pepper flakes, and oregano. Stir in the tomato sauce, water, and Worcestershire sauce, and bring to a boil.
  • Return the pork chops to the skillet. Cover, reduce heat to low, and cook 10 minutes. Remove cover, and continue cooking 15 minutes, or to desired doneness.
