- Sprinkle pork chops with salt and pepper. Heat a large nonstick skillet coated with cooking spray over medium heat. Brown chops on both sides in batches., Return all chops to pan. Add remaining ingredients; bring to a boil. Reduce heat; simmer, covered, 6-8 minutes or until thermometer inserted in pork reads 145°. Let stand 5 minutes before serving.

- For the pork and marinade: Rinse the chile pepper, cut in half lengthwise, remove seeds and white ribs, and chop. Peel and finely chop the garlic. In a bowl, stir the chile with the garlic, 2 tablespoons of the olive oil and the lemon juice.
- Rinse pork cutlets, pat dry, place in a baking dish and cover with the oil mixture. Marinade for 30 minutes. For the salsa: Blanch the tomatoes in a pot of boiling water. Peel, quarter, core and cut into cubes.
- In a bowl, stir the tomatoes with the cilantro, vinegar and chili sauce. For the pork: Heat 1 tablespoon of the oil in a skillet. Season with pork with salt and pepper to taste. Sear the pork until golden on both sides, about 1 minute. For serving: Serve the pork on warm plates with the salsa. Serve with chips if desired.

- Preheat an outdoor grill for medium-high heat. Lightly oil grate, and set 4 inches from the heat.
- To make the salsa, place the nectarines, tomato, onion, cilantro, lime juice, and red pepper flakes in a bowl; toss to blend. Season to taste with salt. Cover, and refrigerate 30 minutes to blend flavors.
- Stir the cumin, chili powder, salt, and pepper together in a small bowl. Place the olive oil in a small bowl. Brush the pork chops with oil, and season both sides evenly with the cumin mixture.
- Place pork loin chops on the preheated grill. Cook until lightly browned and juices run clear, about 4 minutes on each side. Place pork chops on serving plates, and top with a generous spoonful of salsa.

- Grate 1 tsp zest and squeeze 1 tsp juice from lime. For salsa, in bowl, combine tomatoes, 2 tbsp cilantro, Tabasco, lime juice, and ½ tsp zest; reserve. Stir remaining 1 tsp cilantro and ½ tsp zest into butter; reserve.
- In small bowl, combine cumin, onion powder, ancho pepper, and salt. Rub spice mixture over all sides of pork chops. Coat large nonstick skillet with cooking spray; heat over medium-high heat. Add pork chops; cook, turning once, until browned and no longer pink in centers, 6-7 minutes per side.
- Meanwhile, bring large pot of salted water to boil over high heat. Add corn; cook until just tender, about 5 minutes. Drain. Serve reserved butter mixture over corn with chops and salsa.
