6 1" thick bone in pork chops
4 cloves garlic
4 large cherry peppers
1/4 cup parsley
3/4 cup dry white wine
3/4 cup low sodium chicken stock
1/4 cup vinegar from cherry peppers
1 tsp kosher salt
1/2 tsp black pepper
1/4 cup olive oil

Steps:

  • Pat dry and season pork chops on both sides with total of 1 tsp kosher salt and 1/2 tsp black pepper evenly. Chop 4 cloves garlic and quarter 4 vinegar peppers removing seeds.
  • Heat a large pan to medium-high and sear pork chops in 1 Tbsp olive oil on both sides for 2-3 minutes. Remove chops and set aside.
  • Lower pan heat to medium and saute the garlic in the remaining olive oil for 2 minutes. Next, add the cherry peppers and give the pan a stir. Add the wine, stock and vinegar to the pan and turn heat to high. Bring the sauce to a boil for 2 minutes then lower heat down to medium-low.
  • Place all the pork chops into the sauce spreading around evenly. Cover and let simmer for 1-1 1/2 hours or until the pork is very tender. Every 30 minutes, turn the chops over to achieve even cooking.
  • Mix the parsley into the sauce. Serve the pork with sauce spooned over the top of each chop. Enjoy!

4 pork chops, 1 inch thick
salt & fresh ground pepper
2 cloves garlic, minced
2 cups sliced mild pickled peppers (plus 2 T. juice)
3 -5 hot pepperoncini peppers (optional)

Steps:

  • Heat the oil in a large skillet over medium high heat.
  • When hot, pat chops dry, sprinkle with salt and pepper and add to skillet.
  • Cook chops, turning once for about 5 minutes on each side, or until brown.
  • Lower the heat to medium and scatter garlic around chops.
  • Cover and cook 5 to 8 minutes more.
  • Check for doneness.
  • Remove to a plate and keep warm.
  • Add the peppers and juice to the skillet.
  • Cook, stirring for 1-2 minutes or until the peppers are heated through.
  • Spoon the peppers over chops and serve immediately.

1/2 cup table salt
Four (7-to 9-ounce) bone-in pork rib chops (each 3/4 to 1 inch (18 to 24 mm) thick)
Ground black pepper
2 tablespoons olive oil
1 large onion (chopped fine (about 1 1/4 cups))
1 large red bell pepper (stemmed, seeded, and cut into 1/4-inch-wide (6-mm) strips (about 1 1/2 cups))
1 large yellow bell pepper (stemmed, seeded, and cut into 1/4-inch-wide (6 mm) strips (about 1 1/2 cups))
2 anchovy fillets (minced (about 2 teaspoons))
1 sprig rosemary (about 5 inches (13 cm) long)
2 medium garlic cloves (minced or pressed through a garlic press (about 2 teaspoons))
3/4 cup water
1/2 cup white wine vinegar (plus optional 2 tablespoons to finish sauce)
2 tablespoons (1 oz) unsalted butter (cold)
2 tablespoons chopped flat-leaf parsley leaves

Steps:

  • In a large container, dissolve the sugar and salt in 2 quarts water. Add the pork chops and refrigerate for 30 minutes.
  • Remove the chops from the brine and thoroughly pat dry with paper towels. Season with 3/4 teaspoon pepper.
  • Heat the oven to 400°F (200°C) and adjust an oven rack to the middle position.
  • Heat the oil in an ovensafe, 12-inch, nonreactive skillet over medium-high heat until the oil almost begins to smoke. Tilt the skillet to coat the skillet with the oil.
  • Place the pork chops in the skillet and cook, using a spoon or spatula to occasionally press down on the center of the chops to aid in browning, until well browned, 3 to 4 minutes.
  • Using tongs, flip the chops and brown lightly on the second side, about 1 minute. Transfer the chops to a large plate.
  • Set the skillet over medium-high heat. Add the onion and cook, stirring occasionally, until just beginning to soften, about 2 minutes. Add the sweet peppers, anchovies, and rosemary. Cook, stirring frequently, until the peppers just begin to soften, about 4 minutes. Add the garlic; cook, stirring constantly, until fragrant, about 30 seconds.
  • Add the water and 1/2 cup vinegar and bring to a boil, scraping up the browned bits with a wooden spoon. Reduce the heat to medium; simmer until the liquid is reduced to about 1/2 cup, 6 to 8 minutes. Take he skillet off the heat and discard the rosemary.
  • Return the pork chops, browner-side up, to the skillet; nestle the chops in the sweet peppers, but do not cover the chops with the peppers. Add any accumulated juices to the skillet; set the skillet in the oven and cook until the center of the pork chops registers 135°F to 140°F (57°C to 60°C) on an instant-read thermometer, 8 to 12 minutes (begin checking the temperature after 6 minutes).
  • Using potholders, carefully remove the skillet from the oven (the handle will be very hot) and cover the skillet with a lid or foil; let stand until the center of the chops registers 145 to 150 °F (65°C) on an instant-read thermometer, 5 to 7 minutes.
  • Transfer the pork chops to a platter or individual plates. Swirl the butter into the sauce and the sweet peppers in the skillet; taste and stir in the optional 2 tablespoons vinegar, if desired, and the parsley. Adjust the seasonings with salt and pepper, then pour or spoon the sauce and peppers over the chops. Serve immediately.

1 yellow bell pepper, seeded and sliced

  • Heat a large skillet over medium high heat. Season chops with salt and pepper. Add 1 tablespoon extra-virgin olive oil to pan -- 1 turn of the pan. Add chops and cook 5 minutes on each side. Transfer to a platter and cover with foil. Return pan to heat and add more extra-virgin olive oil and bell peppers. Saute, stirring frequently, 5 minutes. Steps:

  • Heat the oil in a heavy large skillet over medium heat. Sprinkle the pork chops with salt and pepper. Add the pork chops to the skillet and cook until they are brown and an instant-read meat thermometer inserted horizontally into the pork registers 160 degrees F, about 3 minutes per side. Transfer the pork chops to a plate and tent with foil to keep them warm.
  • Add the onion to the same skillet and saute over medium heat until crisp-tender, about 4 minutes. Add the tomatoes with their juices, herbes de Provence, and 1/4 teaspoon red pepper flakes. Cover and simmer until the flavors blend and the juices thicken slightly, stirring occasionally, about 15 minutes. Season the sauce, to taste, with salt and more red pepper flakes. Return the pork chops and any accumulated juices from the plate to the skillet and turn the pork chops to coat with the sauce.
  • Place 1 pork chop on each plate. Spoon the sauce over the pork chops. Sprinkle with the parsley and serve.

PORK CHOPS IN CHERRY-PEPPER SAUCE

You can use this sauce - spicy and fragrant and slightly syrupy, what the Italians call agrodolce - on pork chops as I call for here, or on veal chops, on steaks, on chicken. I bet it'd be good on grilled seitan or drizzled over tofu. The recipe is reminiscent of the cooking at red-sauce emporia like Bamonte's in Brooklyn, Rao's in Manhattan, Dominick's in the Bronx and, I hope, Carbone in Greenwich Village, where I first learned how to put it together at the elbow of the chef Mario Carbone. Serve with spaghetti dressed in butter and Parmesan, with garlic bread, with a spoon so you can slurp what's left on the plate. "It's a flavor that's purely Italian-American," Carbone told me. "You won't find it in Italy, no way."

1 (16-ounce) jar pickled hot cherry peppers
3 tablespoons olive oil
3 garlic cloves, peeled and thinly sliced
1 cup dry white wine

1 tablespoon neutral oil, like canola or grapeseed
2 tablespoons cold salted butter

Steps:

  • Make the sauce: Drain the cherry peppers, reserving 1 cup brine, then stem, halve, core and seed them. Place a large skillet over medium-high heat, and swirl the olive oil into it. When the oil begins to shimmer, add the garlic, and sauté, stirring frequently, until it begins to color, 1 to 2 minutes. Add the peppers, the reserved brine and the white wine, and bring to a boil over high heat. Cook until the liquid has reduced by slightly more than half, 10 to 15 minutes. Season to taste with salt and pepper, and remove from the heat. (The sauce can be made a few hours ahead of time.)
  • When you're ready to cook the meat, season it aggressively with salt and pepper. Place a large, heavy-bottomed skillet over medium-high heat, and swirl the neutral oil into it. When the oil begins to shimmer, place the meat in the pan, working in batches if needed, and sear until the meat has browned, formed something of a crust and cooked through to medium-rare, 5 to 6 minutes on each side. Transfer the chops to a warmed platter.
  • Add the sauce to the large, heavy-bottomed skillet in which you seared the meat, and warm over medium-low heat. Whisk the butter into the sauce until evenly distributed and the sauce develops a velvety sheen. Spoon sauce over chops, and garnish with parsley.

4 hot cherry peppers (or can use recipe #475540) or 4 sweet red cherry peppers, pickled and sliced (or can use Pickled Cherry Peppers - Canning)
1/2 cup pickling brine from cherry pepper
1 garlic clove, minced
salt and pepper

Steps:

  • Remove stems and seeds from cherry peppers. Slice the peppers into 1/4" strips. Lightly salt and pepper the pork chops on both sides.
  • Place a heavy bottom skillet over medium high heat and add the olive oil. When the oil is very hot and shimmering, add the pork chops. Sprinkle 1/2 of the minced garlic on the chops and cook for about 2 minutes.
  • Add the sliced cherry peppers and cook for another minute or two. When chops are golden brown on the bottom turn them over. Add the rest of the minced garlic and continue cooking for another minute, then add the brine. Turn heat up to high and finish the chops to your taste, just don't overcook.
  • Remove the chops to a warm plate and reduce the pan sauce by half. Spoon the cooked peppers over the chops and pour the pan sauce over all.

This is one of those one pot meals that bring spice and a lot of flavor to the table. It is a traditional method of cooking and combining ingredients, especially in southern Italy, and many restaurants have it on their menus, especially those in the Little Italys across America. This method of adding the cherry peppers, potatoes, and vinegar can be used with chicken or rabbit, too. The spice gives the dish its "capricious" name.

Six 8-ounce bone-in pork loin chops, about 1 to 1 1/2 inches thick
2 1/2 teaspoons kosher salt
All-purpose flour, for dredging
2 tablespoons extra-virgin olive oil
2 tablespoons unsalted butter
4 garlic cloves, crushed and peeled
6 pickled hot cherry peppers, halved and seeded (or leave some seeds in for more heat)
1 1/2 pounds russet potatoes, peeled and cut into 2-inch chunks
2 sprigs fresh rosemary
2 red onions, peeled and cut into eighths
1/2 cup white-wine vinegar

Steps:

  • Season the pork chops all over with 1 teaspoon salt. Spread the flour on a plate, and dredge the chops in flour, tapping off the excess.
  • Heat the oil and butter in a large skillet. When the butter melts, slide in the chops and brown on one side, about 3 to 4 minutes over medium heat. Turn the chops, and plop the garlic cloves in the spaces between them in the pan. When the garlic starts to sizzle, drop in the pickled cherry peppers, and let sizzle until the chops are browned on the second side, another 3 to 4 minutes.
  • When the chops are browned, push them to one side of the skillet and add the potatoes. Season the potatoes with 1 teaspoon of the salt, and sprinkle in the rosemary needles and the red onions. Cover the skillet, and cook, gently turning everything occasionally, until the onions and potatoes are almost tender, about 12 to 15 minutes.
  • Pour the vinegar into the skillet. Cook, covered, until the potatoes and onions are tender and the chops are cooked through, about 5 minutes more. Uncover, and season with the remaining 1/2 teaspoon salt. If the sauce is too liquid, remove chops to a plate, increase heat to high, and boil until the sauce is thickened to your liking. Pour the sauce over the chops.
