- Preheat oven to 400°. In a shallow bowl, mix bread crumbs and seasonings. Place flour and egg in separate shallow bowls. Dip fish in flour to coat both sides; shake off excess. Dip in egg, then in crumb mixture, patting to help coating adhere., Place on a baking sheet coated with cooking spray; spritz with butter-flavored cooking spray. Bake 10-12 minutes or until fish just begins to flake easily with a fork, turning once.

PARMESAN FISH STICKS

- Preheat the oven to 450 degrees F.
- Rinse the salmon fillet and pat dry with paper towels. Cut the fish in half to make 2 fillets each about 4 by 4 1/2-inches in size. Starting on the longest edge, slice the fillets into 1/2-inch pieces. Lay the widest pieces, from the center, cut side down, and slice in half lengthways so all the pieces are equally about 1/2 by 1/2 by 4 1/2-inches in size.
- Place the flour in a medium bowl and season with the salt and pepper. Place the egg whites in another bowl and beat until frothy, about 30 seconds. Combine the Parmesan and bread crumbs in a third bowl.
- Coat the salmon pieces in the seasoned flour and pat to remove any excess flour. Dip the floured salmon in the egg whites and then into the Parmesan mixture, gently pressing the mixture into the fish. Place the breaded salmon pieces on a liberally oiled baking sheet. Drizzle lightly with the olive oil. Bake for 15 to 20 minutes until golden brown.
- For the Dipping Sauce:
- Mix the mayonnaise, yogurt, Dijon mustard, and parsley (or chives, if using) in a small dipping bowl.
- Arrange the fish sticks on a serving platter and serve with the dipping sauce.

PARMESAN FISH STICKS

- Preheat the oven to 450 degrees F. Grease a sheet pan with the olive oil.
- Cut the fish fillets into 2 1/2-inch-long and 1-inch-wide strips.
- Combine the flour, salt, and pepper in a shallow bowl. Set aside.
- Combine the breadcrumbs, parsley and butter with a fork in a separate shallow bowl. Add the Parmesan and stir to combine.
- Beat the eggs in a third bowl.
- Bread the fish by giving the strips a good coating of the seasoned flour. Tap off any excess. Dip in the beaten eggs until coated. Roll the egg-coated fish in the crumb mixture. If need be, press the breadcrumbs into the fish. Place on the oiled sheet pan.
- Bake for 10 minutes, then flip the fish sticks and continue cooking until the breading is deep golden and the fish is cooked through, about another 8 minutes.
- Serve with ketchup.
FISH STICKS
These homemade oven baked fish sticks are perfectly crispy and so easy to make! Cod strips are coated in seasoned panko breadcrumbs and they are ready to enjoy in less than 30 minutes.

- Preheat the oven to 400 F.
- Add panko breadcrumbs to a parchment lined large baking sheet and spread out in an even layer. Bake for 2 -3 minutes, then stir breadcrumbs and then bake for 2-3 minutes or until breadcrumbs are golden brown. (Watch them closely so they don't burn.) Immediately, remove breadcrumbs from the oven and the sheet. Add freshly grated parmesan cheese to the panko breadcrumbs.
- Season fish pieces with salt, pepper, paprika, onion, and garlic powder.
- Dip each fish stick in flour first, then egg mixture, and lastly breadcrumbs/parmesan mixture. Coat evenly, shake off excess. Set them on a parchment paper lined baking sheet. Repeat with all fish pieces.
- Bake fish sticks for 12 to 15 minutes. Remove from the oven and let them rest for about 5 minutes. Serve with chopped fresh parsley, a drizzle of lemon juice and tartar sauce.

PORK FISH STICKS
Steps:
- At Joe Beef, we smoke the pork butt for 10 hours for this recipe. If you have a smoking device (see page 146), we suggest you use it. But if not, no problem; just roast it in the oven as directed. When the pork is ready, shred it and set it aside; do not add the BBQ Sauce yet.
- Bloom the gelatin sheets in a bowl of cool water to cover for 5 to 10 minutes, or until they soften and swell. Meanwhile, heat the BBQ Sauce in a large saucepan over medium heat until warmed through. Remove the saucepan from the heat. Gently squeeze the gelatin sheets, add to the sauce, and whisk until completely dissolved. Add the shredded pork to the sauce and mix well. Stir in the shallots, taste, and correct the seasoning with salt and pepper.
- Line a rimmed baking sheet with plastic wrap. Transfer the meat mixture to the baking sheet and press well and evenly. Cover with plastic wrap and refrigerate for at least 2 hours or up to 4 days.
- To ready the breading, set up three bowls. In a shallow bowl, mix together the flour and the Old Bay seasoning. In a second bowl, whisk together the eggs, milk, and a pinch each of salt and pepper. Put the panko in a third bowl.
- Unmold the chilled meat mixture on a cutting board by turning the baking sheet upside down and using your fingers to gently remove the meat (it's okay if it breaks up a little as you can re-form it with your hands). Cut the meat into fish stick-sized sticks. Now, set up the bowl assembly line. Carefully toss the sticks in the fl our, then in the egg mixture, and then, with a clean hand, in the panko. If you feel unsure of the resistance of your breaded crust, you can repeat the egg and panko steps, hence doubling the crust. Lay the pork sticks on a clean baking sheet and refrigerate uncovered in a single layer for about 15 minutes to dry out a bit.
- Meanwhile, pour the oil to a depth of 3 inches (7.5 cm) into your deep fryer and heat to 350°F (180°C). Working in batches of 5 or 6 sticks, fry for 3 to 4 minutes, until golden and crisp. (Remember to let your fryer return to its initial temperature between batches; respect that little orange light!) Remove the sticks from the oil, pat dry with paper towels, and let cool for 3 or 4 minutes. Season to taste with salt and pepper and serve.
FISH STICKS WITH PEAS
Two childhood classics - fish sticks and green peas - find their rightful place back at the dinner table for eaters of all ages to enjoy in this wholesome weeknight meal. The fish stick, coined "the ocean's hot dog" by the historian Joseph Peterson, was first manufactured by Gorton's, the Massachusetts seafood company, in 1953. It soon became popular as a tasty and effortless family meal for Americans wary of cooking fresh fish at home. The key to flavorful homemade fish sticks is to season them well every step of the way. Here, turmeric provides the nostalgic yellow tint while adding a warm, earthy flavor to meaty cod fillets (or any firm white fish). The accompanying peas get a lift from tangy lemon zest and fresh mint, and red-pepper flakes provide just enough heat to liven up your taste buds and dinner plates. Serve with tartar sauce for dipping and lemon wedges.

- Prepare your dredging station and make the fish sticks: Place the flour, turmeric, onion powder, garlic powder, 1 teaspoon salt and 1/2 teaspoon black pepper on a large plate; stir to combine. In a pie plate or shallow bowl, beat the eggs with 1 tablespoon of water and sprinkle with a little salt. Place the bread crumbs and 3/4 teaspoon salt on another large plate and stir to combine. Place a baking sheet beside you.
- Dry the fish well with paper towels. Season the fish with 1 teaspoon salt and 1/4 teaspoon pepper, then cut into 1 1/2- to 2-inch strips. Dredge each piece of fish in the seasoned flour (shaking of any excess flour), then in the egg, then in the bread crumbs; place breaded fish pieces on the baking sheet.
- Pan-fry the fish sticks: In a large (12-inch) pan, heat the oil over medium-high. (To bake the fish sticks, see Tip.) When the oil is hot but not smoking, reduce the heat to medium and fry the fish sticks on all four sides until golden and crisped, about 4 minutes per side. You may need to do this in batches; add more oil if needed.
- While the fish fries, prepare the peas: In a large pan, heat the oil over medium-low. Add the garlic and cook, stirring continuously until fragrant, about 2 minutes, taking care not to burn it. Add the lemon zest and some red-pepper flakes, and cook, stirring, until fragrant, about 2 minutes. Add the peas and 1 1/2 teaspoons salt, stir to combine, then cook for 1 minute in the lemony oil. Add 1/4 cup water, increase the heat to medium and simmer, uncovered, stirring occasionally, until the peas are tender but not mush and most of the water has been absorbed, 5 to 7 minutes. Taste and adjust seasoning. Remove from the heat and stir in the mint.
- Serve the fish sticks with the peas and tartar sauce, plus some lemon wedges to squeeze over the fish.
