CILANTRO PORK TENDERLOIN
I found this recipe in a magazine, then added extra cumin and mustard to satisfy my family's taste for spicy foods. I like to serve pork frequently.

- In a large resealable plastic bag, combine the first seven ingredients; add pork. Seal bag and turn to coat; refrigerate overnight. , Drain and discard marinade. Prepare grill for indirect heat. Grill, covered, over indirect medium-hot heat, for 20-27 minutes or until a thermometer reads 145°. Let stand for 5 minutes before slicing.

GLAZED PORK LOIN WITH CILANTRO AND GARLIC

- 1. Place the pepper flakes in a small bowl and pour the boiling water over them. Let sit for 1 to 2 minutes to rehydrate the flakes. Combine all the brine ingredients in a blender, or in a large bowl using an immersion/stick blender. Stir in the pepper flakes and the soaking water.
- Place the loin in an extra-large resealable plastic bag, pour the brine over the top, squeeze out any excess air from the bag, and close. Roll the bag to evenly coat the meat. Refrigerate for at least 6 hours, or up to 12.
- 2. Preheat an indirect barbecue with a drip pan and fruitwood (preferably apple), a ceramic cooker with deflector plate and fruitwood (preferably apple), or a charcoal or gas grill with a box or packet of fruitwood (preferably apple) to 250°F.
- 3. Combine all of the seasoning blend ingredients.
- Place all of the glaze ingredients in a jar with a tight-fitting lid and shake to combine. Set aside.
- 4. Remove the loin from the brine and lightly pat dry with paper towels.
- Sprinkle the rub evenly on all sides.
- Using your hands or a brush, evenly, but lightly, coat the loin with canola oil.
- Insert a remove thermometer into the center of the meat.
- 5. Place the loin in the cooker and cook until the internal temperature reaches 135°F, about 1 hour and 15 minutes.
- 6. Give the glaze a quick shake to reincorporate any ingredients that may have settled. Brush the loin with the glaze and return to the cooker until the internal temperature reaches 145°F, about 15 minutes. At this point the meat will be slightly pink in the center; cook for an additional 5 to 10 minutes for more well-done.
- 7. Pour about half of the remaining glaze on a cutting board and top with the loin. Let rest for 10 minutes.
- 8. Slice the meat into 1/4-inch slices. Dredge the slices in the glaze, adding additional as needed to coat the exposed sides. Sprinkle with fleur de sel and pepper.
ROAST PORK LOIN WITH SOUR CITRUS SAUCE

- Mix all ingredients except 1/2 cup orange juice and pork until thoroughly combined. Add pork loin and turn to coat thoroughly. Place in refrigerator and let marinate at least 1 hour and up to 24 hours.
- Heat oven to 450 degrees F and arrange rack in middle. Remove pork from refrigerator and let rest at room temperature while oven heats up. When oven is heated, remove pork from marinade, strain marinade and discard solids and reserve juices. Season pork well with salt and freshly ground black pepper. Place pork in a roasting pan and roast until skin is golden-brown and internal temperature registers 145 to 150 degrees F on an instant-read thermometer, about 50 to 55 minutes.
- Remove pork to a cutting board and let rest at least 10 minutes before slicing.
- Meanwhile, combine reserved marinade juices and remaining 1/2 cup orange juice in a small saucepan and bring to a boil over medium heat. Skim sauce let cook until mixture is reduced by 2/3, about 10 minutes. Taste and adjust seasoning, as necessary. When pork is ready, slice thinly and serve with orange sauce over top.

- In a small bowl, combine the first six ingredients. Set aside 1 tablespoon marinade; cover and refrigerate in a small bowl. Pour remaining marinade into a large bowl. Add pork chops; turn to coat. Cover and refrigerate for 20 minutes., Drain and discard marinade from pork. In a large skillet over medium heat, cook chops in oil for 8-10 minutes on each side or until a thermometer reads 160°. Remove and keep warm. , In a small bowl, combine cornstarch and reserved marinade until smooth. Stir in the broth, orange juice and honey; add to skillet. ROAST PORK WITH SWEET-AND-SOUR CHILE CILANTRO SAUCE

- Prepare pork loin:
- Preheat oven to 400°F.
- Coarsely crush coriander seeds with a mortar and pestle or an electric coffee/spice grinder, then stir together with bread crumbs, oil, pepper, and salt in a small bowl.
- Turn pork so a long side is closest to you and season with salt and pepper. Pat one third of seasoned crumbs onto pork, leaving a 2-inch border along top edge. Starting with side nearest you, roll meat into a cylinder and tie securely with kitchen string. Coat pork with remaining crumbs.
- Roast pork on a rack in a roasting pan in middle of oven 15 minutes. Reduce temperature to 325°F and roast until an instant-read thermometer diagonally inserted at least 2 inches into meat registers 155°F, 1 to 1 1/4 hours more. Let pork stand, loosely covered, 10 minutes.
- Make sauce while pork roasts:
- Simmer bell pepper, caribe, honey, lime juice, and salt in a 1-quart heavy saucepan over moderate heat, stirring occasionally, until sauce is slightly thickened, about 30 minutes. Cool sauce to warm or room temperature, then stir in cilantro just before serving.
- Slice pork and serve with sauce.

- Season meat with salt and pepper to taste.
- In a large skillet, heat butter and olive oil over medium heat. When skillet is hot, place sliced pork loin into skillet; cook until browned, turning once. After both sides have browned nicely, add chicken stock ,and cook until liquid thickens.

- If you have a pork tenderloin, cut it into diagonal slices about 1/2 inch thick.
- Make a marinade by adding the cilantro, scallions, ginger, garlic, lemon zest, chile, and lemongrass into a food processor and whiz till you have a paste. Put in a bowl and add in the rest of the marinade ingredients. If using a blender just blend everything together. Place the pork in a dish and mix through the paste and leave to marinade for half an hour or even overnight.
- Heat a frying pan with no oil and add the pork (keep any remaining marinade) in a single layer, or as close as you can to a single layer, for a minute or two each side until golden. Don't worry about the marinade getting all burned and sticky in the pan! When the pork is golden remove from the pan and keep warm.
- While the pork is cooking, place reserved marinade in a small saucepan. Add in the coconut milk, bring to a boil and boil uncovered for about 5 minutes, until it has thickened a bit. Add the fish sauce, lemon juice and chopped cilantro. Season to taste with more lemon juice and fish sauce if needed.
- Add the pork back into the sauce and heat through for a few minutes. Serve with jasmine rice and a little cilantro on top!

- Mix lime juice, soy sauce, garlic, tamarind paste, sugar, and sambal oelek together in a bowl. Whisk for 1 minute. Poke pork tenderloin with a fork or knife and place in a large resealable plastic bag. Pour marinade into the bag and seal while pressing out the air. Marinate in the refrigerator 8 hours to overnight for best results.
- Preheat an outdoor grill for high heat and lightly oil the grate.

- Trim fat from pork. Place pork loin directly on rosemary and roast in a 325 degree oven for 45 minutes per pound or until meat thermometer reads 160 degrees.
