ROASTED EGGPLANT WITH SICHUAN-STYLE PORK



Roasted Eggplant with Sichuan-Style Pork image

Our chopped challenge this week was ground pork. We wanted to infuse with as much flavor as possible so we cooked it Sichuan-style and paired it with sweet Japanese eggplant. Chopped Basket Ingredient: ground pork

6 medium Japanese eggplants (about 1 pound), tops trimmed, halved lengthwise
1/4 cup canola oil
Kosher salt and freshly ground black pepper
1 pound ground pork
1 bunch scallions, thinly sliced, white and green parts separated
6 cloves garlic, minced
One 2-inch knob ginger, peeled and finely grated
2 to 4 tablespoons chili-garlic sauce or sambal oelek
1/4 cup soy sauce
1/4 cup balsamic vinegar
Steamed white rice, warm, for serving

Steps:

  • Preheat the oven to 425 degrees F with a rack set on the middle shelf.
  • Use a sharp paring knife to lightly score the flesh of each eggplant 6 to 8 times. Place the on a baking sheet and toss with 2 tablespoons of the oil and season liberally with salt and pepper. Place the eggplant, cut-side down, and bake until the eggplant starts to soften and the skin starts to brown, about 15 minutes. Use a large offset spatula to gently flip the eggplant over and bake until the flesh is completely softened and light golden brown, about 15 more minutes.
  • Meanwhile, make the pork: Heat the remaining oil over medium-high heat in a large saute pan. Add the pork and 1/4 teaspoon salt. Cook, breaking up the meat, until lightly browned and no longer pink, about 5 minutes. Add the scallion whites, garlic and ginger and cook for 2 minutes, stirring constantly. Stir in the chili-garlic sauce, soy sauce, vinegar, 1/2 cup water and half of the scallion greens. Simmer over medium-low heat for 10 minutes, stirring occasionally.
  • To serve, spoon the pork over the roasted eggplant and garnish with the remaining scallion greens. Serve with steamed rice.

salt and pepper
3 cups crushed tomatoes
2 ounces tomato paste
2 cups chicken broth
1/2 cup dry white wine
4 garlic cloves, minced
1 red pepper, diced
1 onion, diced
1 large eggplant, peeled and diced
1 tablespoon rinsed capers
1/4 cup pitted black olives, quartered
2 teaspoons oregano
salt and pepper
2 tablespoons chopped fresh parsley

Steps:

  • Trim fat from pork and brown on all sides in a dutch oven.
  • Combine remaining ingredients And bake in a 325 degree oven for 4 hours.
  • Skim any fat and serve with your favorite pasta.

2 large eggplants
4 egg whites
1/4 teaspoon sea salt (regular can be substituted)
2 cups breadcrumbs
1/3 cup grated parmesan cheese (recommend using a mix of parmesan and romano)
1 head garlic
2 minced garlic cloves
2 teaspoons dried basil
2 teaspoons olive oil
4 cups tomato sauce (any brand will due, but I recommend my zesty tomato sauce!)
1 (14 ounce) can white beans
1 1/2 cups low fat mozzarella

Steps:

  • Preheat oven to 350.
  • in a flat bottom bowl, whisk egg whites, salt, 2 cloves garlic.
  • in another bowl, mix bread crumbs, basil, and parmesean/romano mixture.
  • lightly spray two baking sheets with olive oil and drizzle a small amount on the whole garlic head.
  • cut eggplant into 1/2 inch rounds and dip into egg mixture then batter in bread crumbs.
  • place eggplant and garlic head on baking sheets.
  • cook until tender (about 20 min on each side for the eggplant and 20-30 min total for garlic head).
  • drain and rinse white beans.
  • in 2 8x11 baking dishes, put a thin layer of tomato sauce.
  • when garlic head is finished and cool enough to touch, peel out the cloves and mash them into the white beans to make a paste.
  • put a layer of eggplant rounds on top of the tomato sauce.
  • spread bean/garlic paste evenly on rounds.
  • add half the cheese and a cup of sauce.
  • place the rest of the eggplant in a second layer.
  • add any leftover bread crumbs, sauce and cheese.
  • bake 25 min until cheese is bubbly.

I adjusted this recipe, after seeing one with similar ingredients that had far more steps and ingredients. Using salsa in place of canned tomatoes and chopped onions not only saves time, but also offers the ability to add spice, by using medium or hot salsa. I make this in both the slow cooker and oven.

  • Place roast into the slow cooker; add bay leaves to bottom of slow cooker. Pour beans, salsa, and beer over and around roast.

2 tablespoons snipped fresh rosemary or 2 tsp. dried rosemary, crushed
1 tablespoon extra virgin olive oil or olive oil
3 cloves garlic, minced
1/2 cup extra virgin olive oil or olive oil
2 white eggplants, halved lengthwise (8 to 10 oz. each) or 2 small eggplants
8 ounces baby yellow pattypan squash, halved or yellow summer squash, cubed
1 15 ounce can cannellini beans (white kidney beans), rinsed and drained
1 cup chicken broth or dry white wine
2 tablespoons snipped fresh sage or 2 tsp. dried leaf sage, crushed
1/2 teaspoon finely shredded lemon peel
Salt and ground black pepper

Steps:

  • 1. In a shallow pan rub roast with rosemary, the 1 tablespoon olive oil, and garlic. Cover; refrigerate overnight. 2. Preheat oven to 325 degrees F. Place meat, back-bone side down, in a shallow roasting pan. Insert meat thermometer. Roast pork for 1-3/4 to 2-1/2 hours or until thermometer registers 155 degrees F. Remove roast from oven; cover with foil, let stand 15 minutes before carving. (Meat temperature will rise 5 degrees F while standing.) 3. In a 12-inch skillet heat 1/2 cup olive oil over medium-high heat. Add eggplant to skillet, cut side down; cook about 10 minutes or until eggplant flesh is darkened and tender, adding pattypan squash to skillet the last 5 minutes of cooking. Stir in beans, broth, sage, and lemon peel. Cook, covered, 5 minutes more or until squash is tender. Season to taste with salt and pepper. Serve pork with eggplant mixture. Roast: 1 hr 15 mins 325°F

Have we cheesed you out? Take a cheese break and try this straight vegetable-bean puree with nutty sweet garlic and smoked paprika. It may not be the lead-off dish to a night of Crock Dogs, but it fashionably introduces dressier barbecue dinners. We especially like it with Tandoori BBQ Chicken Thighs (page 96), Cider-Soy Pork Tenderloin (page 79), House Lamb Shanks (page 128), and Ultimate Cheater Oven-Smoked Salmon (page 132).

Yield makes about 3 cups

Number Of Ingredients 9

2 whole garlic heads
1 medium eggplant
One 19-ounce can cannellini beans, drained and rinsed (you can use any white beans)
2 to 3 tablespoons fresh lemon juice (or the juice of 1 lemon)
2 teaspoons smoked paprika, plus more for garnish
Kosher salt
Pita bread
Olive oil
Chopped fresh parsley

Steps:

  • HEAT the oven to 450°F.
  • SLICE off the stem of the garlic, revealing the tops of the cloves. Place the garlic and whole eggplant in a covered casserole (ceramic or enamel-coated cast iron).
  • COVER and roast until the eggplant is very soft when pierced with a fork and the garlic looks golden brown, about 30 minutes.
  • REMOVE the casserole from the oven, uncover, and cool the vegetables enough to handle.
  • CUT open the eggplant, scrape out the flesh, and place it in a food processor. Discard the eggplant skin.
  • SQUEEZE the roasted cloves from the garlic skins and place them in the bowl with the eggplant. Add the beans, lemon juice, paprika, and salt to taste and process until smooth.
  • CUT the pita bread into triangles. Lay them on a baking sheet and toast in a hot (450°F) oven until lightly browned.
  • DRIZZLE the spread with olive oil, sprinkle with parsley and additional paprika, and serve with the pita.
