PORK ROULADE WITH BROCCOLI RABE AND SAUSAGE STUFFING AND MUSTARD MASHED POTATOES



Pork Roulade with Broccoli Rabe and Sausage Stuffing and Mustard Mashed Potatoes image

1/2 cup pine nuts
Kosher salt
1 bunch broccoli rabe, stems removed
1 pound sweet Italian sausage, casing removed
1/3 cup freshly grated parmesan cheese
1/3 cup plain breadcrumbs
1 egg
1/4 teaspoon crushed red pepper
Extra-virgin olive oil, for the pan
2 boneless pork loin chops, each 1 1/2 inches thick
4 ounces caul fat
4 ounces prosciutto, cut into long slices
1 shallot, minced
1/4 cup white wine
1 cup chicken stock
Mustard Mashed Potatoes, recipe follows
1 pound Yukon gold potatoes (about 4 potatoes), peeled and cut into a large dice
2 cups heavy cream
5 tablespoons cold, unsalted butter, diced
2 tablespoons whole-grain mustard
1 tablespoon Dijon mustard
Kosher salt

Steps:

  • For the roulade: Preheat the oven to 375 degrees F. Spread the pine nuts onto a small sheet tray and place in the oven to toast, 5 to 7 minutes.
  • Set up a large pot of well-salted boiling water. Set up a large bowl of well-salted ice water. Blanch the broccoli rabe for 1 minute until bright green and tender, but still crisp. Remove from the boiling water and plunge immediately into the ice bath. Once cool, remove from the ice bath and use your hands to squeeze out excess water. Finely chop the broccoli rabe and add to a large bowl with the sausage, pine nuts, parmesan, breadcrumbs, egg and crushed red pepper. Sprinkle with salt.
  • Heat a small saute pan over medium-high heat with a little olive oil. Take a small amount of filling and cook a small tester patty to test for seasoning. Adjust the seasoning on the remaining raw mixture if needed.
  • Trim any excess fat from the pork chops. Cut the pork lengthwise to butterfly, then pound to an even thickness of 1/4 to 1/2 inch. Lay a large piece of caul fat out on a large, flat work surface. Place 4 slices of prosciutto over the caul fat, followed by the pounded pork loin on top of the prosciutto. Set half the broccoli rabe and sausage filling on top of the pork loin and shape into a thin log. Wrap the prosciutto and pork loin around the filling and roll into a tight log. Wrap the caul fat around the stuffed pork, cutting off any excess from the ends, making sure the caul fat is in one even layer around the pork. Tie with butcher's twine to secure and trim any excess string. Repeat with the remaining pork and filling.
  • Heat a large saute pan with olive oil over high heat. Sear the roulades, turning on all sides, until golden brown, 5 to 7 minutes. Transfer the pork to a sheet tray and place into the oven and reserve the pan that the pork was cooked in. Roast the pork at 375 degrees F for 15 to 20 minutes, or until an instant read thermometer registers 150 degrees F. Let rest for 5 to 10 minutes, then remove the string.
  • Place the pan that the pork was cooked in back onto medium-high heat and drain off any remaining fat. Add the shallot and cook for 2 minutes until tender. Deglaze the pan with the white wine and stir, making sure to scrape the bits from the bottom of the pan. Cook until almost all of the liquid has reduced, then add half the chicken stock. Continue to cook until the liquid has reduced by half, then add the remaining chicken stock. Cook until slightly reduced then remove from heat.
  • Slice the pork into 1/2-inch-thick rounds. Plate alongside the mashed potatoes and a drizzle of sauce over the pork.
  • Place the potatoes in a large saucepan. Add cold water to cover the potatoes by 1 to 2 inches and generously season with kosher salt. Bring the pot of water to a boil and cook until the potatoes are fork-tender, 20 to 25 minutes.
  • Meanwhile, heat the heavy cream in a small saucepan over medium-low heat. Drain the potatoes and add back to the large saucepan. Using an electric hand mixer, mix the potatoes and gradually add the butter and warmed heavy cream, alternating, until the potatoes reach a creamy and silky consistency. You may not need to use all the heavy cream. Add the whole-grain mustard, Dijon mustard and kosher salt to taste and mix thoroughly to combine. Makes 4 servings

2 tablespoons whole black peppercorns
3 1/2 teaspoons kosher salt
5 garlic cloves
2 tablespoons unsalted butter, softened
1 (3 1/2-lb) center-cut boneless pork loin roast (4 to 5 inches in diameter), trimmed, leaving a 1/4-inch layer of fat if possible
3 tablespoons black truffle butter*, softened
1/2 lb thinly sliced mortadella
4 lb small (2-inch) boiling potatoes (preferably yellow-fleshed)
3 tablespoons extra-virgin olive oil
1 tablespoon chopped fresh rosemary
1/4 teaspoon black pepper
For sauce
3/4 cup chicken broth
1/4 cup water
1 1/2 teaspoons cornstarch
1 tablespoon black truffle butter
Special Equipment
a mortar and pestle; kitchen string; a 17- by 11-inch flameproof roasting pan with an adjustable V-rack; an instant-read thermometer

Steps:

  • Prepare pork:
  • Preheat oven to 450°F.
  • Coarsely crush peppercorns and 2 teaspoons kosher salt with mortar and pestle, then add garlic and mash until a paste forms. Stir in unsalted butter.
  • If pork loin has been tied, discard strings. Put loin, fat side down, on a cutting board lined with plastic wrap. Butterfly pork in a spiral cut: Find beginning of a flap on 1 long side of loin (where bone was removed). Starting at inside edge of flap, make a long cut lengthwise down side of loin with a very sharp boning or paring knife, stopping 1 inch from bottom (this is beginning of spiral). Turn knife parallel to bottom of loin and begin to cut your way inward (parallel to bottom), keeping thickness of meat as even as possible, using your other hand to gently lift and pull top portion of meat away from knife, until loin is 1 long flat piece of meat.
  • Cover pork with a sheet of plastic wrap and pound to 1/2 inch thick with a smooth meat pounder or rolling pin. Remove plastic wrap and spread 1 tablespoon truffle butter over pork. Top with half of mortadella, slightly overlapping slices. Spread 1 tablespoon truffle butter over mortadella, then top with remaining mortadella and spread with remaining tablespoon truffle butter. Beginning with end that was interior of loin, roll up loin tightly and arrange, seam side down (fat side up), on cutting board. If fat layer is 1/4 inch thick, make very close crosswise cuts in it (about 1/8 inch apart; do not cut through to meat), then tie with kitchen string at 1-inch intervals. Rub roast all over with peppercorn butter, covering fat layer well.
  • Put pork, fat side up, on oiled rack in roasting pan and roast in middle of oven 20 minutes.
  • Prepare potatoes:
  • While pork is roasting, peel and halve potatoes. Parboil potatoes in a 5- to 6-quart pot of boiling salted water 5 minutes. Drain in a colander 5 minutes, then toss with oil, rosemary, remaining 1 1/2 teaspoons kosher salt, and pepper in a large bowl.
  • Remove pork from oven and reduce oven temperature to 325°F. Add potatoes to roasting pan, turning them in pan juices to coat, then roast pork with potatoes until thermometer inserted diagonally 2 inches into meat registers 155°F, 45 to 55 minutes. Transfer pork to a platter and let stand 25 minutes.
  • Increase oven temperature to 450°F and remove rack from roasting pan. Spread potatoes out in pan and roast in middle of oven, stirring every 5 minutes, until golden brown, about 20 minutes more. Transfer to a serving bowl and keep warm.
  • Make sauce:
  • Skim as much fat as possible from pan juices. Straddle roasting pan across 2 burners, then add broth and deglaze pan by boiling over high heat, stirring and scraping up brown bits, 1 minute. Stir together water and cornstarch, then add to broth mixture and boil, whisking, 1 minute. Remove from heat and whisk in truffle butter.
  • Discard string, then slice pork and serve with sauce and potatoes.

1 head roasted garlic (recipe included)
2 1/2 lbs yukon gold potatoes, peeled and cut into 1 inch pieces (5 medium)
1 1/2 teaspoons salt, divided
1/2 cup whipping cream or 1/2 cup half-and-half
1/2 cup milk
2 tablespoons butter
1 tablespoon minced fresh rosemary or 1 teaspoon dried rosemary
1/8 teaspoon white pepper

Steps:

  • Prepare Roasted Garlic.
  • Place potato pieces in medium saucepan; add water to cover and 1 teaspoon salt.
  • Bring to a boil.
  • Reduce heat; simmer, uncovered, 12 to 15 minutes or until potatoes are tender.
  • Drain potatoes; set aside.
  • Place cream, milk, butter and rosemary in small saucepan; heat over medium-high heat about 3 minutes or until butter melts and mixture simmers, stirring often.
  • Mash potatoes with potato masher until smooth.
  • Add roasted garlic and milk mixture; beat with electric mixer until smooth.
  • Beat in remaining 1/2 teaspoon salt and pepper.
  • Serve hot.
  • Roasted Garlic: Cut off top third of 1 large garlic head to expose cloves; discard top.
  • Place head of garlic, trimmed end up, on 10-inch square of foil.
  • Rub garlic generously with olive oil and sprinkle with salt.
  • Gather foil ends together and close tightly.
  • Roast in preheated 350 degree oven 45 minutes or until cloves are golden and soft.
  • When cool enough to handle, squeeze roasted garlic cloves from skins; discard skins.

Steps:

  • Scrub and pierce potatoes. Bake at 400F for 45-55 minutes or until tender.
  • Meanhwile, remove papery outer skin from garlic bulb (do not peel or separate cloves); cut top off bulb. Place on a piece of heavy-duty foil; drizzle with 1/2 teaspoons of oil. Wrap foil around bulb. Bake at 400F for 30 to 35 minutes or until softened. Cool for 10 minutes.
  • Squeeze softened garlic into a large mixing bowl. Cut potatoes in half; scoop out pulp and add to garlic. Discard potato skins. Mash potatoes.
  • In a small saucepan, saute rosemary in remaining oil for 2 minutes; add to potato mixture.
