CHEDDAR SCALLOPED POTATOES

- Preheat oven to 350°. In a heavy saucepan, mix flour, salt and milk until smooth. Add garlic and butter; bring to a boil. Cook and stir until thickened, 1-2 minutes. Remove from heat; stir in cheese until melted., In a greased 8-in. or 1-1/2-qt. baking dish, layer onion and potatoes. Top with sauce., Bake, covered, 25 minutes. Uncover; bake until potatoes are tender, 40-45 minutes.

EASY MICROWAVE SCALLOPED POTATOES
This came from a recipe book given to me by my grandmother-in-law. I like it because it cooks in about 1/2 the time of regular (oven) scalloped potatoes, and tastes basically the same. Great for weeknights when time is at a premium, or if you have no room in the oven. (Note, I noticed other recipes for scalloped potatoes call for cheese or other ingredients - this is scalloped potatoes like my mom used to make, basically just white sauce and potatoes. We always eat ours with lots of ketchup on top!)

Steps:
- Put margarine (or butter) into LARGE glass bowl, and microwave on High for 1 minute, or until melted. (If you really like cleaning your microwave, feel free to use a smaller bowl.).
- Blend in flour, salt & pepper. Gradually stir in milk.
- Microwave on High 8-10 minutes, stirring after 4 minutes.
- Layer half the potatoes and onion in a greased 2-quart casserole dish. Top with half the prepared sauce, then the rest of the potatoes and onion, then the rest of the sauce.
- Cover and microwave on High 20 minutes, or until done. (Cooking times will depend on the strength of your microwave; I think ours is in the 1,200-watt range, and 20 minutes usually works just fine for us).

- Place potatoes, onion, and butter in a large microwave-safe dish.
- Mix flour and salt in a bowl; sprinkle over potatoes and gently toss until vegetables are coated.
- Pour milk over the potatoes.
- Cook in the microwave on high setting until potatoes are tender, about 15 minutes, stirring every 5 minutes.
- Allow potatoes to rest for 5 minutes before sprinkling with parsley and paprika for serving.

MICROWAVE BAKED POTATOES WITH CHEDDAR CHEESE AND BACON
Quick and easy microwave bacon potato topped with cheddar cheese and bacon bits. Great side dish and a sure man-pleaser.

Steps:
- Clean un-peeled potatoes under water to remove any dirt.
- Poke them all over with a fork to vent while cooking.
- Rub vegetable oil on potatoes and season with salt.
- Microwave for 5 minutes, turn potatoes over, and microwave for an additional 5 minutes.
- While potatoes are cooking, cut across bacon and then lengthwise to create small bits. ( I use frozen bacon) Cook in a skillet until crispy and set aside.
- Allow the potatoes to cool until you can handle them.
- Make a slice lengthwise on each potato and use a fork to mash the insides. ( Doesn't have to be perfect).
- Top potatoes with shredded cheddar cheese and put back in the microwave for 1 minute or until cheese is melted.
- Top with bacon bits.
EASY CHEESY MICROWAVE POTATOES

- Peel and thinly slice potatoes.
- Coat bottom of 2 quart microwave dish with 3 tablespoons of butter.
- Layer 1/2 of potatoes, 1 cup cheese and 3 tablespoons of butter.
- Add next layer 1/2 potatoes and top with 1 cup cheese.
- Salt and pepper to taste.
- Add a thin layer of milk in bottom of dish, about 1/4".
- Cover dish with plastic wrap.
- Microwave on high for 10 minutes.
- Let sit 5 minutes before serving.

- Melt butter in 4 cup glass measuring cup.
- Blend in flour, salt, and pepper.
- Gradually add milk while stirring.
- Microwave 8 to 10 minutes stirring after 4 minutes.
- Hint- if you put a plate under the measuring cup it will not boil over during cooking.

Steps:
- Use a big pot.
- Saute chopped onions in margarine til soft but not browned.
- In small bowl, combine flour, salt and pepper.
- Stir flour mixture into onion mixture then add milk and half and half and stir and cook over medium heat until mixture begins to thicken (about 3 minutes).
- Turn off heat.
- Add 1 1/2 cups shredded cheddar to the sauce and stir til melted and smooth.
- Add sliced potatoes and stir well to combine.
- Pour mixture into a 9 by 13 casserole dish that you have sprayed with Pam.
- Cover with foil and bake at 350 for 35 minutes.
- Remove from oven, take foil off and sprinkle reserved 1/2 cup cheese over top (or more as desired).
- Return to oven to bake another 30 minutes or so or until potatoes are soft, cheese is melted and edges begin to lightly brown.
- Let stand a few minutes before serving to allow sauce to thicken.
