- In a small bowl, combine brown sugar, smoked paprika, kosher salt, chili powder, onion powder and garlic powder.
- Trim the pork tenderloin of any excess fat and silverskin. Pat the pork dry, and then rub the spice mixture all over the meat.
- Allow pork to sit at room temperature while preparing the grill.
- Preheat grill to medium heat and brush the grates with vegetable oil (to prevent sticking).
- Place pork on the grill. Close the grill and cook 15-18 minutes, turning every few minutes to ensure even cooking. The meat is done when it reaches an internal temperature of 140-145 degrees F. You can baste with the barbecue sauce during the final 1-2 minutes, or just serve warm barbecue sauce alongside the pork for dipping.
- Remove the tenderloin to a cutting board and allow the meat to rest for about 5-10 minutes before slicing and serving.

EASY GRILLED PORK LOIN WITH SUGAR AND SPICE RUB AND GRILLED PEACHES
A super quick and easy meal that's healthy and delicious! Tender, juicy grilled pork tenderloin coated with a sweet, spicy rub served with delicious, juicy grilled peaches. It doesn't get much better than this!

- Using an outdoor grill, heat it to medium heat. While grill is heating, mix together your rub. In a small bowl, mix together the sugar, chili powder, cumin, salt, pepper and oil. Stir until everything is wet and it becomes a paste. Pat dry the pork loin with paper towels. On a pan, cover the pork with the rub on all sides. Prepare peaches by slicing in half and removing the pit.
- Before putting the pork down on the hot grill, add a little oil or non-stick grilling spray to the grill grates. Grill the pork loin, on each side for approximately 10 minutes, or until internal temp of the pork reaches 145 degrees. (FYI - this is a new recommendation for pork, versus the old school 160.) Slightly pink is okay. The peaches only need 10 minutes to cook on the grill, so hold off putting them on until you flip the pork loin for its second side. Place peaches cut side down on the grill and remove after 10 minutes.
- After the pork is done grilling, let it rest for 3-5 minutes to seal in the juices before cutting. Serve with the grilled peaches.

- Trim the pork tenderloin of any excess fat and silver skin.
- Place the lime zest, lime juice, honey, salt, and garlic powder in a small, lidded jar and shake to combine. Pour half of the marinade mixture into a 1-gallon resealable bag, add the chipotle pepper, and move around to combine. Add the pork tenderloin to the bag and seal, removing as much air as possible and place in a container to catch any leaks. Marinate in the refrigerator for 6 to 24 hours, rotating the bag halfway through the time. Place the remaining marinade in a covered container and refrigerate until ready to use.
- Remove the tenderloin from the bag and allow to sit at room temperature while preparing the grill. Remove the reserved marinade from the refrigerator.
- Fill a large chimney starter with natural lump charcoal and light. Once the charcoal is ashy and white, approximately 30 minutes, dump the hot charcoal onto the lowest grate of the grill and spread into an even layer using extra-long tongs. Place the cooking grate back on the grill and cover with the lid; heat the grate to medium heat for 2 to 3 minutes.
- Brush the grill with vegetable oil. Remove the tenderloin from the bag and place in the center of grate. Discard bag with marinade. Cover and cook for 12 to 15 minutes, turning every 1 1/2 to 2 minutes, until the tenderloin reaches an internal temperature of 140 degrees F.
- Remove the tenderloin from the grill and place on a large piece of heavy-duty aluminum foil folded at the edges to create a basket, and pour on the reserved marinade. Wrap tightly and rest for 10 minutes. Remove to a cutting board and slice. Garnish with cilantro and serve.

- In a medium heavy-bottomed saucepan over medium heat, simmer wine until it is reduced by half, 20 to 30 minutes; adjust heat to low and continue to cook down to 2 tablespoons. Cool completely.
- In a food processor combine salt, thyme leaves, lemon zest and wine reduction. Pulse 2 or 3 times. Add sugar and pulse again until mixture has the consistency of damp sand. If your mixture is moister, spread it evenly on a sheet pan and leave it out on the counter for several hours or overnight.
- Place pork in a baking pan. Spread about 1/2 cup of the salt rub all over the pork (reserve remaining rub for another use; it will keep for a month in the fridge). Cover tightly with plastic wrap and refrigerate for at least 3 hours or overnight.
- Light the grill for high-heat indirect cooking, piling charcoal on one side of the grill and leaving other side unlighted. (For gas grills, turn on the heat on one side of the grill only.) Spread a piece of foil or place a disposable metal roasting pan underneath grill on the unlighted side to catch any drips. Place pork on the grill over the foil. Cover grill and cook, turning every half hour until meat reaches 140 degrees, from 1 hour to 90 minutes. Transfer to a cutting board and let rest 10 minutes before carving.

- Cut a horizontal slit in the pork tenderloin, leaving the halves attached. Rub tenderloin with olive oil.

- Combine rub ingredients in small bowl. Set aside.
- Rinse tenderloins under cold water and pat dry with paper towels. Rub with spice mixture and let stand at room temperature for 30 minutes.
- Meanwhile combine glaze ingredients in small saucepan and simmer over low heat until sugar dissolves, about 5 minutes. Brush glaze over tenderloins.

- Using a sharp knife, remove the layer of fat and all of the silver skin from the pork loin. The silver skin is usually a thin membrane right under the fat (hint, it is silver in color). If not removed, it can make the meat tough due to it's tendency to turn to what seems like leather when cooked.
- Preheat your grill to medium high, indirect heat. Once we get a nice sear over the hot part of the grill, we are going to want to move it to a cool side and use the grill as an oven to grill the pork loin to doneness.
- Combine all of the dry rub ingredients in a bowl. Be sure to break up that brown sugar, it can be kind of a pain to get it to play well with the other ingredients.
