1 cup panko (Japanese bread crumbs)
1/2 cup finely grated Parmesan
2 large eggs
6 boneless pork loin chops, pounded thin to 1/3 inch-thick (1 1/2 pounds total)
Salt and freshly ground black pepper
1/4 cup plus 3 tablespoons olive oil
6 lemon wedges

Steps:

  • Preheat the oven to 200 degrees F.
  • Coarsely crush the panko into a large shallow bowl. Stir the cheese into the panko. Lightly beat the eggs in another large shallow bowl. Sprinkle the pork generously with salt and pepper. Dip the pork, 1 piece at a time, in the egg, allowing the excess to drip off, then dredge the pork in the crumb mixture, patting to coat completely. Place the pork on a small baking sheet.
  • Heat 1/4 cup of oil in a heavy large skillet over medium-high heat. Add half of the pork to the hot oil and cook until golden brown and just cooked through, about 3 minutes per side. Transfer to paper towels to drain, then transfer them to a clean baking sheet and keep them warm in the oven. Add the remaining 3 tablespoons of oil to the skillet and fry the remaining pork.
  • Transfer the pork to plates and serve with lemon wedges.

1 large pork tenderloin (1 1/4 to 1 1/2 pounds), trimmed
3 tablespoons extra-virgin olive oil
Kosher salt and freshly ground pepper
1/2 cup roughly chopped fresh parsley
2 teaspoons fennel seeds, finely chopped
1 clove garlic, minced
1 pint grape or cherry tomatoes, halved
1/4 cup golden raisins
1/4 cup pine nuts
1 cup low-sodium chicken broth
1/4 cup grated pecorino romano cheese, plus more for topping
8 ounces spaghetti

Steps:

  • Preheat the oven to 425 degrees F. Brush the pork with 1 tablespoon olive oil; season with 1/2 teaspoon salt and a few grinds of pepper. Sprinkle with 2 tablespoons parsley and the fennel seeds, pressing to adhere.
  • Heat the remaining 2 tablespoons olive oil in a large ovenproof nonstick skillet over medium-high heat. Add the pork and cook, turning, until browned on all sides, 8 to 10 minutes. Scatter the garlic, tomatoes, raisins and pine nuts around the pork. Cook, stirring, until the tomatoes are slightly softened, about 1 minute. Add the broth and bring to a simmer. Sprinkle the cheese over the pork, then transfer the skillet to the oven. Roast until a thermometer inserted into the center of the pork registers 145 degrees F, 15 to 20 minutes. Remove to a cutting board and let rest; reserve the tomato mixture in the pan.
  • Meanwhile, bring a large pot of salted water to a boil. Add the pasta and cook as the label directs. Drain, then add to the tomato mixture along with the remaining 6 tablespoons parsley; season with salt and toss. Top with cheese. Slice the pork and serve with the pasta.

1 tablespoon soy sauce

1 bay leaf
3 ounces tomato paste
1 package (6 ounces) frozen peas
1 can (3 to 4 ounces) pimientos, sliced
Salt to taste

Steps:

  • Heat oil in large skillet. Saute garlic, onions and pork until browned. Add soy sauce, patis, water and bay leaf. Bring to a boil, reduce heat and simmer until pork is tender, about 5-7 minutes. Add tomato paste, peas and pimientos. Simmer for 5 more minutes. Salt to taste.

1 1/2 tablespoons peanut oil
2 cloves garlic, chopped finely
3 tablespoons coarsely chopped fresh coriander
1 tablespoon dark soy sauce
2 teaspoons sugar
8 ounces pineapple, chopped,fresh or tinned
1 finely chopped green chili pepper (optional)
2 teaspoons light soy sauce
2 teaspoons rice wine or 2 teaspoons dry sherry
1 teaspoon sesame oil
2 teaspoons cornflour
1/4 cup chopped fresh coriander

Steps:

  • Cut the pork into thin strips about 5cm/2in long.
  • In a medium bowl, combine the marinade ingredients.
  • Add the pork, mix well and leave to marinate at room temperature while you prepare the other ingredients.
  • Drain, discarding the marinade.
  • Heat a wok over a high heat until it is hot, add the oil, and when it is very hot and slightly smoking, add the garlic and stir-fry for 15 seconds or until golden brown.
  • Add the pork and stir-fry for 3 minutes.
  • Finally, add the pineapple, coriander, chili if using, soy sauce and sugar and continue to stir-fry for 3 minutes.
  • Sprinkle with the chopped coriander and serve.

1 (4-5-pound) skin-on, boneless pork belly
Kosher salt
1 tablespoon vegetable oil
1 (12-ounce) bottle unseasoned rice vinegar
12 garlic cloves, chopped
6-12 green Thai chiles, lightly crushed but left whole
2 serrano chiles, torn into small pieces
4 (12-oz.) bottles hard apple cider
2 tablespoons honey

Steps:

  • Season pork generously with salt. Set, skin side up, on a wire rack set inside a rimmed baking sheet. Chill at least 12 hours and up to 2 days.
  • Preheat oven to 350°F. Pour 4 cups water into baking sheet with pork. Rub pork skin with oil; season with more salt. Roast, adding more water to pan as needed, until skin is golden brown and an instant-read thermometer inserted into thickest part of pork registers 195°F-200°F, 1 1/2-1 3/4 hours.
  • Meanwhile, pour out 1/2 cup vinegar from bottle (save for another use). Remove pouring spout from bottle and add garlic, chiles, and a large pinch of salt. Cover and shake to distribute; let sit until ready to serve. (Or, combine in a glass jar or bowl).
  • Bring hard cider and honey to a boil in a large saucepan; cook until thickened and very syrupy, 30-45 minutes.
  • Increase oven temperature to 450°F. Continue to roast pork until skin is browned and puffed, 15-20 minutes (add a few more splashes of water to baking sheet if juices are scorching). Transfer rack with pork to a cutting board; let rest 20 minutes.
  • Pour off fat from baking sheet and add 1/2 cup water, scraping up browned bits. Return baking sheet to oven for a few minutes if needed to help loosen browned bits. Stir into reduced cider mixture.
  • Remove skin from pork, using the tip of a knife to get it started (it should come off in 1 large piece with a little help). Slice pork lengthwise into 2"-wide strips, then crosswise into 1/2"-thick pieces. Transfer to a platter and drizzle with reduced cider mixture. Break skin into large pieces and arrange on top; place a few chiles from vinegar around. Serve with chile vinegar.

  • Chile vinegar can be made 1 week ahead. Store at room temperature.

2-1/2 cups shredded cabbage

  • Break vermicelli in half; cook according to package directions. Drain., Meanwhile, in a bowl, toss pork with 2 tablespoons oil, garlic and 1/2 teaspoon salt. 1 boneless whole pork loin roast (4 pounds)
1 cup water

2 tablespoons diced green pepper
2 tablespoons cider vinegar
1 teaspoon ground ginger

Steps:

  • Rub 1/2 teaspoon salt and pepper over roast. Place on a rack in a shallow roasting pan. Bake, uncovered, at 350° for 1 hour., Meanwhile, in a small saucepan, combine the water, pineapple, tomato paste, brown sugar, onion, green pepper, vinegar, ginger and remaining salt; bring to a boil. This dish reminds me of my days growing up in Cebu City - Philippines. Most Filipino-Chinese restaurants have patatim included in their chef's specials. This dish is fork-tender, fall-off-the-bone pork knuckles stewed on soy sauce, oyster sauce, and rice wine. Best eaten with rice or steamed bao buns.

3 -4 lbs pork legs (the pork pata i got from our asian market was already pre-cut)
2 pieces star anise (or anise extract)
1/2 cup soy sauce
2 tablespoons hoisin sauce (optional)
oyster sauce (optional)
6 cups water
1 cup brown sugar
1/2 cup rice wine (optional)
sake (optional)
1 teaspoon peppercorn
1 teaspoon sesame oil
1 tablespoon cornstarch
5 pieces baby bok choy
8 pieces dried shiitake mushrooms

Steps:

  • bake pork pata in oven at 450 until the skin turns brown. this is what prevents the skin from breaking when it is stewing. while the pork pata is baking, soak the shitake mushrooms in hot water.
  • when done, place pata in a casserole. add the 6 cups of water, soy sauce, hoysin sauce, brown sugar, pepper corns and bring to a boil.
  • add the star anise (or anise extract) and sesame oil. simmer for an hour, or until pork is tender that the meat almost falls off the bone.
  • mix constarch in 1/4 cup cold water, and add to the pot. continue to let it simmer until sauce thickens.
  • blanch the bokchoy in boiling water seasoned with garlic salt. do not overcook the veg to retain its bright green color.
  • to serve, take out the pata and place them in the middle of a serving dish surrounded by the strained blanched bokchoy. pour the sauce over the pata and vegetables.
  • enjoy.
  • ** optional - you can add hard-boiled eggs to the stew towards the end of the simmering process for sumptuous "humba eggs".

  • Add the tomato sauce and water. Stir, cover and cook on medium heat for 5 minutes, stirring occasionally.
  • Add the carrots, potato and bell pepper, and cook for 10 minutes. Add the green peas and raisins, and cook for another 5 minutes, or until the vegetables are tender. Season to taste with salt and pepper. Serve with steamed rice.
