Recipezaar already has 11 recipes for piri piri (sauce, dressing, oil, spice) and 10 recipes using it, so why add another? First, piri piri is in the cuisines of Africa, Portugal, South America and the Caribbean, so there are variations to the ingredients, heat and form. Second, all of the versions currently posted are "quick", i.e., whether the ingredients are raw or cooked, you can prepare them and use them the same day -- this version is the more authentic marinated and pickled version (Warning: from the time you start to make this until the time you can use it is 5 weeks!! I didn't count this in the prep time). Finally, I've had this version, love the taste and know how reliable the recipe source is. With credit to Elisabeth Luard's "The Food of Spain and Portugal: A Regional Celebration", here is piri piri as made in the Algarve ... Recipe provided for Zaar World Tour 5 (2009).

8 ounces hot red chili peppers, fresh, seeds and veins removed, roughly sliced
8 ounces mild red peppers, seeded and roughly sliced
1/4 cup coarse salt
2/3 cup white wine vinegar

Steps:

  • For chiles, the authentic variety is malagueta, but I've used jalopeno or habanero.
  • Pack the chiles and peppers into a sterilized jar with the salt.
  • Seal and leave for 4 weeks.
  • After 4 weeks, put in a food processor, add the vinegar and blend.
  • Put in a bottle, keep in a cool, dark place and let the flavors meld for a week.
  • Enjoy!

2 to 6 chili peppers, depending upon their hotness
1 teaspoon kosher or coarse salt
1 cup olive oil
1/3 cup cider vinegar

Steps:

  • Stem the peppers and coarsely chop (include the seeds); place in a 1-pint shaker jar along with the salt, olive oil, and vinegar. Cover tight, shake well, then store at room termperature. The sauce will keep well for about a month. Shake the sauce every time you use it. Note: For mellower flavor, roast the peppers uncovered for 15 minutes at low oven heat (300 degrees F.), cool until easy to handle, then slip off the skins. Otherwise, prepare as directed.

This spicy hot marinade can be used on any meat you grill - chicken, beef, shrimp or prawns (I've even tried it with fish!).. 'Aging' the marinade by storing it in an airtight container and refrigerated for a few days allows the flavour to intensify. A word of caution: habanero chillies are HOT, so please handle them with care! Use gloves or oil your hands before touching them so that the chilli 'oil' does not penetrate into the pores of your skin. The serving size is a guess-timate - this 1 batch of marinade is enough to marinate 6-8 chicken drumsticks or about 30 shrimps or prawns.

4 -5 fresh red habanero peppers (stemmed and deseeded)
2 -3 garlic cloves
4 tablespoons lemon juice or 4 tablespoons lime juice
1 teaspoon sea salt (to taste)
1 teaspoon dried oregano
4 -5 tablespoons olive oil

Steps:

  • If using a grinder, combine all ingredients, grind and mix the ingredients into a smooth paste.
  • If you are using a mortar and pestle, start off with the chillies and garlic - grind them into a smooth paste.
  • Then add in the dried oregano and grind it in for another minute.
  • Add in the rest of the ingredients and give it a thorough mix.
  • You may leave the marinade refrigerated to infuse or use it up straight away.
  • Rub marinade onto meat and allow to marinate in a bowl for at least thirty minutes (or overnight if possible) before cooking.

I love churrasqueira chicken and have been looking for a recipe to make it myself. I found this on Breakfast Television Toronto's web site. They got the recipe from Roasty Chicken Churrasqueira which is in the town of Maple just north of Toronto. A friend told me that she's used this sauce for fish and shrimp, too. I've tried it on shrimp and it's wonderful. Simply marinate the shrimp for an hour and then drain the shrimp, discard the sauce and grill the shrimp on the barbie.

4 tablespoons lemon juice
5 tablespoons olive oil
1/4 cup vinegar (balsamic gives an excellent flavour)
1 tablespoon cayenne pepper
1 tablespoon garlic, minced
1 tablespoon paprika
1 teaspoon salt
1 tablespoon chili flakes

Steps:

  • Add all ingredients to a bowl and whisk together.
  • Brush on chicken before barbecuing (or baking in oven @ 350 °F for 1.25 hours WITHOUT opening the door during during entire cooking process.) It helps the flavour if you marinate the chicken for a few hours prior to cooking!
