1 C. Rice Flour
1/4 C. Tapioca Flour
1/2 Tbsp. Salt
1/2 Tsp. Sesame oil
1 1/2 C. Filtered Ice Water
12 oz. Medium spicy Portuguese Sausage minced
1/2 C. Minced round onion
1/2 C. Minced green onion
1 Tbp. Oil
1 clove garlic minced

Steps:

  • Mix batter well, and pour 9 Tbp in a 9x9 inch square nonstick pan with a coating of Pam.
  • Steam over medium high heat 6 to 7 minutes, set aside & continue steaming remaining batter until batter is all used up.
  • In a wok, fry up all ingredients, and then set aside.
  • Divide fried filling, and proceed to fill Luk Fun noodle sheets and roll tight as you can, and then plate it, and drizzle with soy sauce or your favorite sauce, garnish with green onions.

This is an easy and fun soup to make that is full of flavor from Portuguese linguica sausage. It's delicious served with warm, crusty bread!

2 tablespoons olive oil
3 medium Yukon Gold potatoes, diced
1 large sweet onion, chopped
½ cup diced carrots
½ cup diced celery
3 cloves garlic, chopped
salt and ground black pepper to taste
¼ teaspoon red pepper flakes, or more to taste
1 bunch kale, stems removed and leaves chopped
2 bay leaves
5 cups chicken broth
½ pound linguica sausage, diced
½ pound chorizo sausage, diced
1 (14 ounce) can diced tomatoes
1 (14 ounce) can garbanzo beans, with liquid

Steps:

  • Heat oil in a soup pot over medium heat until it sizzles, about 1 minute. Add potatoes, onion, carrots, and celery. Cook and stir for 3 to 4 minutes. Add garlic, salt, pepper, and red pepper flakes. Stir for another 2 to 3 minutes.
  • Add kale and bay leaves to the pot. Cover and let kale wilt for 2 to 3 minutes.
  • Add chicken broth, linguica, chorizo, tomatoes, and garbanzo beans with their juices to the pot and bring to a boil, about 5 minutes. Reduce heat to medium and simmer until veggies are tender, about 15 minutes more.

Portuguese Sausage Sandwiches with Peppers, Onions, and Olives image

3 tablespoons olive oil, divided
2 medium onions, thinly sliced
3 bell peppers (1 orange, 1 red, 1 green), thinly sliced into strips
1 teaspoon sugar
1/2 teaspoon sweet paprika
1 pound fully cooked sausage, such as linguiça or kielbasa, cut in half lengthwise and crosswise into 6-inch-long pieces
1 cup dry red wine
2/3 cup Kalamata olives, pitted
1 baguette, halved lengthwise, cut crosswise into quarters

Steps:

  • Heat 2 tablespoons oil in large skillet over medium-high heat. Add onions and sauté until soft, about 5 minutes. Add peppers and sauté until lightly browned, about 6 minutes. Sprinkle mixture with sugar and paprika and sauté 1 minute. Using slotted spoon, transfer mixture to plate; leave drippings in skillet.
  • Add remaining 1 tablespoon oil to drippings in skillet. Add sausage and cook over medium heat until browned and heated through, turning occasionally, about 5 minutes. Transfer sausage to plate with pepper mixture.
  • Add wine to skillet; boil until reduced by half, scraping up browned bits, about 3 minutes. Return sausage and pepper mixture to skillet; stir in olives. Cook until heated through, about 2 minutes.
  • Place baguette quarters on each of 4 plates; fill with sausage mixture, spooning juices over each, and serve.
