EASY PORTUGUESE COOKIES



Easy Portuguese Cookies image

This crisp little sugar cookie is a family recipe from the island of St. Michael in the Azores.

2 tablespoons cornstarch
1 cup white sugar
3 tablespoons butter
2 eggs
2 ½ cups all-purpose flour
2 teaspoons baking powder

Steps:

  • Preheat the oven to 325 degrees F (165 degrees C).
  • In a medium bowl, stir together the cornstarch and white sugar. Add the butter and cream well. Add eggs, one at a time, mixing well after each addition. Combine the flour and baking powder; stir into the sugar mixture until a dough forms. On a lightly floured surface, roll the dough out to 1/4 inch thickness and cut into desired shapes with cookie cutters. Place cookies 1 inch apart onto an unprepared cookie sheet.
  • Bake for 8 to 10 minutes in the preheated oven, until cookies are golden brown at the edges. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.

My Portuguese friend use to make coffee for us but all I actually saw was that she whipped it before serving. I went hunting for her recipe which was very strong and also sweet. I found this one by Joao Luis Vieira Leitao....I do think this is IT! So very simple and quick too!

1 teaspoon instant coffee
1 teaspoon sugar
hot water

Steps:

  • Into a mug, place the coffee and sugar. Mix in a couple of drops of tepid water and stir until the mixture looks like black cake dough. Keep mixing until it turns white, or yellow, then fill with boiling water.
  • By oxygenating the coffee, you end up with a creamy yellow drink with foam on top.
