Poutine originated from rural Québec province in the 1950s. I would say poutine is not second to any other food in Canada. I order poutine when I go to diners, but I also buy fresh cheese curd to make my own at home. Homemade gravy is really easy and quick to make. The only rule I don't follow for authentic poutine is that I don't fry my French fries; I bake them in the oven. Be careful. This is very addictive!

1 (14 ounce) package frozen French fries
2 tablespoons butter
2 tablespoons all-purpose flour
1 ½ cups beef broth
salt and ground black pepper to taste
1 ½ cups cheese curds

Steps:

  • Preheat an oven to 450 degrees F (230 degrees C). Grease a baking sheet.
  • Spread fries in a single layer over prepared baking sheet.
  • Bake in the preheated oven until light brown, about 15 minutes.
  • Melt butter in a saucepan over medium-high heat. Whisk in flour vigorously. When mixture bubbles, reduce heat to low; cook and stir until the mixture thins, about 2 minutes. Whisk in beef broth. Bring to a boil; reduce heat and simmer, stirring occasionally, until gravy has thickened, about 5 minutes. Season with salt and pepper.
  • Place fries on a serving plate or in individual bowls. Distribute the cheese curds over the fries; pour hot gravy over the fries and curds. Serve immediately.

3 large russet potatoes, scrubbed
3 tablespoons olive oil
1 ½ teaspoons salt, divided
1 teaspoon pepper, divided
6 tablespoons unsalted butter, 3/4 stick
¼ cup all-purpose flour
2 ½ cups beef stock
2 teaspoons worcestershire sauce
3 tablespoons cornstarch
2 tablespoons water
1 ½ cups cheese curd

Steps:

  • Preheat the oven to 450˚F (230˚C). Line 2 baking sheets with parchment paper.
  • On a cutting board, slice the potatoes into matchsticks by quartering lengthwise. Cut the quarters lengthwise into ¼-inch slices, then cut into ¼-inch (6 mm) matchsticks.
  • Place the potatoes in a large bowl. Drizzle with the olive oil and sprinkle with 1 teaspoon of salt and ½ teaspoon of pepper. Toss to coat.
  • Arrange the fries evenly in 2 rows on each baking sheet so they are not touching.
  • Bake for 25 minutes, flipping halfway through, until golden brown.
  • In a medium saucepan over medium heat, add the butter and flour. Whisk until the mixture is a golden brown. Add the beef stock, Worcestershire, remaining ½ teaspoon of salt and remaining ½ teaspoon of pepper. Bring to a boil, whisking continuously.
  • Add the water to the cornstarch in a small bowl and mix until dissolved. Add the cornstarch slurry to the gravy and stir until thickened. Remove from the heat and cover to keep the gravy hot.
  • Transfer the baked fries to a large bowl, add the cheese curds, and pour the hot gravy over the top. Toss to coat.
  • Transfer to a dish and serve immediately.
  • Enjoy!

6 to 8 large Yukon gold potatoes
1 tablespoon vegetable oil
1 shallot, minced
1 small clove garlic, minced
4 cups veal stock
2 tablespoons ketchup
1 tablespoon cider vinegar
1 tablespoon whole green peppercorns
1/2 teaspoon Worcestershire sauce
2 tablespoons butter
2 tablespoons flour
2 cups Cheddar cheese curds* (See Cook's Note)
Salt and freshly ground black pepper, to taste
Vegetable oil, for frying

Steps:

  • Clean and peel potatoes. Using a French fry cutter, cut the potatoes into fries or, alternatively, cut the potatoes into desired size. Place the fries in a large bowl filled with cold water and let sit for 1 hour and up to 24 hours for extra-crispy fries.
  • In a saucepan, heat the vegetable oil on medium heat and saute the shallots and garlic until translucent, about 3 minutes. Add the veal stock, ketchup, cider vinegar, peppercorns, and Worcestershire sauce and bring to a boil.
  • Meanwhile, in a separate saucepan on medium-high heat, melt the butter. Add the flour and stir for 2 to 3 minutes, making a roux. Allow to brown slightly. Whip the roux mixture into the stock and let simmer for about 20 minutes, until reduced by half and thickened. Season the sauce with salt and pepper. Keep warm.
  • In a deep-fryer set to 250 degrees F, blanch the fries in oil for about 2 minutes. Remove the fries and let them rest for about 5 minutes. Then, fry them again for about 2 minutes or until golden brown. Place on a paper towel-lined baking tray to absorb the excess oil. Salt and pepper the fries while hot. Remove the sauce from the stovetop and strain. Plate the fries in a shallow bowl, pour sauce on top and garnish with cheese curds.

Authentic Poutine is French fries topped with fresh cheddar cheese curds covered with gravy. This is serious eats! You can tell cheese curds are really fresh because they squeak when you bite into them. For this recipe I've made a Poutin-inspired decadent one dish meal. I added some vegies and shrimp to the basic recipe, with Simply Potatoes as the platform. If you don't have time to clean and chop the veg, grab some from the salad bar at the grocery store. Ready, set, cook! Yum!

3 tablespoons peanut oil
1 (20 ounce) bag Simply Potatoes® Shredded Hash Browns
1 cup shredded carrot
1 cup finely sliced red bell pepper
1 cup finely chopped onion
3 tablespoons butter
3 tablespoons flour
2 cups chicken broth
salt and pepper
1/2 lb cooked shrimp, peeled and deveined, tails off
1 tablespoon butter
1/4 cup green onion, white and light green only, finely sliced
1/3 lb fresh cheddar cheese curds

Steps:

  • In a large mixing bowl, toss together the hashbrowns, carrots, red bell pepper, and onions. In a 12 inch non-stick skillet heat 2 T. oil over medium heat until very hot. Pour the vegetable mix into the pan, spread out and press down. Salt and pepper to taste. Cook, uncovered, for 10 - 12 minutes. Shake the pan every few minutes.
  • Meanwhile, to make the gravy, in a medium saucepan over medium high heat melt the butter. Add the flour and stir until smooth and golden. Whisk in the chicken broth. Continue to cook and whisk until it starts to bubble and thicken. Taste for seasoning and add salt and pepper if needed. Set aside on low heat until the potatoes are ready.
  • When the hashbrown mixture is toasty brown on the bottom, drizzle with the remaining Tablespoon of oil and carefully turn over section by section and continue to cook for 8-10 minutes more.
  • In a small non-stick skillet, melt the remaining Tablespoon of butter over medium low heat. Add the green onions and shrimp. Sauté until fragrant and warmed through.
  • To serve, slide the potato mixture onto a serving plate. Scatter the shrimp and cheese curds over the top and then pour on the gravy. Let it sit for five minutes so the cheese curds get gooey, then serve.

1 quart vegetable oil for frying
1 (10.25 ounce) can beef gravy
5 medium potatoes, cut into fries
2 cups cheese curds

Steps:

  • Heat oil in a deep fryer or deep heavy skillet to 365 degrees F (185 degrees C). While the oil is heating, you can begin to warm your gravy.
  • Place the fries into the hot oil, and cook until light brown, about 5 minutes. Make the fries in batches if necessary to allow them room to move a little in the oil. Remove to a paper towel lined plate to drain.
  • Place the fries on a serving platter, and sprinkle the cheese over them. Ladle gravy over the fries and cheese, and serve immediately.

Tuck into Canadian comfort food - chips, gravy and cheese curds. We've tweaked the traditional recipe with gooey, stringy mozzarella

125g pack mozzarella or 140g/5oz cheese curd, torn or cut into small chunks
400g chicken wings
5 tbsp plain flour
1 tbsp sunflower oil
50g butter
1 onion , finely diced
1 carrot , chopped
1 bay leaf
500ml chicken stock
500ml beef stock
4 garlic cloves , crushed
1 ½kg floury potatoes (we used Maris Piper)
sunflower oil , for deep frying

Steps:

  • For the gravy, toss the chicken wings in 1 tbsp of the flour, then heat the oil and butter in a large pan. Fry the chicken wings until well browned on all sides. Remove with a slotted spoon and set aside. Add the onion to the pan and cook for 8-10 mins until soft and turning brown at the edges.
  • When the onions are cooked, add the remaining flour and stir well. Put the chicken wings back in the pan, then add the carrot, bay leaf, stocks and garlic.
  • Bring to the boil and cook for 15 mins. Strain the mixture through a sieve into another pan and simmer for another 10 mins or until thick, seasoning to taste.
  • For the chips, scrub the potatoes but leave the skins on. Chop into chunky chips and put them in a bowl filled with cold water.
  • Pour sunflower oil into a large pan until it is just less than half full, then heat until it reaches 125C. Drain the chips from the water and pat dry with a clean tea towel. When the oil is ready, carefully lower 1/4 of the chips into the pan. Fry for 12 mins, then remove with the slotted spoon and lay on a wire rack covered with kitchen paper. Repeat the process with the remaining chips. When they have all had their first fry, increase the temperature to 190C and fry the chips in small batches again, this time for 5 mins or until golden brown. Sprinkle the chips with salt once done, keeping them warm on a wire rack or grill tray in a low oven while you fry the rest.
  • To finish the dish, pile the chips into deep bowls, warm the gravy and pour it over the chips. Top with pieces of cheese and serve immediately.
