POSITANO PIZZA SANDWICHES

- Preheat the oven to 375 degrees F.
- Pierce each tomato with the tip of a pairing knife. On a small straight sides baking sheet toss together the tomatoes, olive oil, salt, garlic and basil. Toss to coat and roast for 30 minutes or until the tomatoes are beginning to blister. Remove from the oven and set aside to cool.
- Turn the oven up to 425 degrees F.
- On a lightly floured board, roll out the pizza dough to 1/4 inch thickness. Using a cookie cutter or the tip of a sharp knife cut 6 -5 inch hearts and place them on a straight sided baking sheet. Bake the heart for about 12 minutes or until lightly puffed and beginning to brown. Remove from the oven and let cool slightly. Split the hearts in half through the equator like you are making a sandwich. Divide the mozzarella and tomatoes evenly over the cut side of the bottom half. Sprinkle evenly with the parmesan and top with the other half of the dough. Brush the tops with olive oil and sprinkle with oregano. Bake for an additional 5 minutes or until the cheese is melted and the tops are golden. Serve warm drizzled with more olive oil if desired.

- Pierce each tomato with the tip of a pairing knife. On a small baking sheet, combine the tomatoes, garlic, basil, salt and 3 tablespoons olive oil. Toss to coat. Roast until the tomatoes begin to blister, 30 minutes. Set aside to cool.
- Increase the oven temperature to 425 degrees F.
- On a lightly floured board, roll out the pizza dough to a 1/4-inch thickness. With a cookie cutter or the tip of a sharp knife, cut out six 5-inch hearts. Transfer to a baking sheet, and bake until lightly puffed and starting to brown, 12 minutes. Let cool slightly.
- Slice the hearts in half horizontally, like a sandwich bun. Divide the mozzarella and the roasted tomato mixture among the bottom halves, and sprinkle with the Parmesan. Cover with the top halves. Brush the tops with 2 tablespoons olive oil, and sprinkle with the oregano.
- Bake until the cheese is melted and the tops are golden, 5 minutes. Serve warm, drizzled with additional olive oil if desired.

- Place flour in a large bowl. Whisk water, egg, yeast, and sugar together in a cup. Make a well in the flour and pour in yeast mixture. Stir until mixture forms a smooth dough, adding a small amount of flour or water if needed. Cover bowl with a towel; set aside to rise until doubled in size, about 30 minutes.
- Preheat oven to 425 degrees F (220 degrees C). Spread French fries in a single layer on a baking sheet.
- Bake fries in the preheated oven until golden, about 20 minutes. Reduce oven temperature to 350 degrees F (175 degrees C).
- Heat a large skillet over medium heat and fry bacon pieces until browned, about 5 minutes; remove to drain on a paper towel.
- Spray a round pizza pan with baking spray.
- Punch down dough, and flatten onto pizza pan. For a stuffed crust, sprinkle about 1/4 cup shredded Mexican cheese blend around the edge of the dough, roll dough inward over cheese, and pinch dough to seal.
- Spread a thin layer of pizza sauce over dough. Spread fries over dough; pour gravy over fries as needed to cover. Top with remaining Mexican cheese blend. Sprinkle bacon pieces evenly over pizza.
- Bake in the preheated oven until cheese is bubbly and crust is golden, about 20 minutes.
