Time 59m

Yield 8

Number Of Ingredients 11

3 eggs
1 cup milk
2 tablespoons vegetable oil
1 ½ teaspoons salt, divided
¾ cup all-purpose flour, sifted
1 (16 ounce) package dry small curd cottage cheese
3 ½ tablespoons white sugar
3 tablespoons sour cream
1 egg yolk
¼ teaspoon ground cinnamon
¼ cup butter, or as needed, divided

Steps:

  • Beat eggs in a bowl. Add milk, oil, and 1/2 teaspoon salt. Beat in flour using an electric mixer until well blended. Let batter stand for 15 to 30 minutes.
  • Mix the remaining 1 teaspoon salt, cottage cheese, sugar, sour cream, egg yolk, and cinnamon together in a bowl to make the filling.
  • Melt butter in a 6- to 7-inch skillet. Spoon a portion of the batter onto the skillet; cook until lightly browned on the bottom, about 3 minutes. Turn out onto a tea towel. Repeat with the remaining batter, thinning with small amounts of water if necessary and greasing the pan after every 2 to 3 blintzes.
  • Preheat oven to 400 degrees F (200 degrees C). Grease a baking sheet.
  • Melt the remaining butter in the skillet over low heat, about 1 minute.
  • Place a blintz on a clean work surface with the uncooked side up. Add 1 tablespoon filling and roll up, completely covering the filling. Place on the prepared baking sheet. Repeat with the remaining blintzes. Brush filled blintzes with melted butter.
  • Bake in the preheated oven until brown, 15 to 20 minutes.

POTATO BLINIS

Potato Blinis image

These potato blinis are inspired by a Thomas Keller recipe. They're the ideal base for caviar.

Provided by Claire Saffitz

Categories     Bon Appétit     Pancake     Potato     Sour Cream     Hors D'Oeuvre     Appetizer     New Year's Eve

Yield Makes about 30

Number Of Ingredients 12

1 pound Yukon Gold potatoes, scrubbed
3 large egg yolks, room temperature
1 large egg, room temperature
1/2 cup sour cream, room temperature
1/4 cup all-purpose flour
1 1/2 teaspoon kosher salt
1/2 teaspoon finely ground black pepper
1/4 teaspoon baking soda
1/4 teaspoon ground nutmeg
2 tablespoons unsalted butter, melted, slightly cooled
Special Equipment
A food mill or potato ricer

Steps:

  • Preheat oven to 425°F. Prick potatoes all over with a fork and bake on a rimmed baking sheet until very tender and a knife slides easily through flesh, 60-70 minutes. Let cool slightly. Reduce oven temperature to 200°F.
  • Meanwhile, whisk egg yolks, egg, and sour cream in a medium bowl to combine; set sour cream mixture aside.
  • Cut potatoes in half lengthwise and scoop flesh from skins; discard skins. Pass flesh through food mill or ricer fitted with the small-hole disk into a large bowl. Working quickly, sprinkle flour, salt, pepper, baking soda, and nutmeg over potatoes; toss lightly with a fork to distribute ingredients, fluff potatoes, and break up any clumps. Make a well in the center and pour in reserved sour cream mixture. Whisk in a circular motion, working from the center out to incorporate, just until smooth (it should look like a thick pancake batter). Cover; let sit 10 minutes.
  • Heat a large skillet, preferably nonstick or cast iron, over medium-low. Brush skillet with a thin layer of butter. Spoon scant tablespoonfuls of batter into skillet, spacing about 1" apart. Cook blinis until undersides are golden brown and surfaces look matte and bubbles form on top, about 90 seconds. Gently flip and cook until other sides are golden brown, about 1 minute. Transfer to a wire rack set inside a rimmed baking sheet and keep warm until ready to serve (up to 1 hour before). Repeat with remaining batter, wiping out skillet between batches and brushing with more butter.

From idahopotato.com
  • While the potatoes are boiling, heat 4 tablespoons butter in a large skillet and add the onion. Cook until the onion is golden brown and very soft, about 15 minutes.
  • Mash the potatoes with a potato masher or fork; it's okay if there are some lumps. Add the cooked onions, salt and pepper. Mix well, taste, and adjust seasoning if necessary. Set filling aside.
  • Heat a small (7-inch) nonstick skillet over medium heat. Melt a little knob of butter in the pan and swirl it around so the bottom of the skillet is lightly coated with the melted butter. When the butter stops foaming, ladle in about 2 Tablespoons of the batter, swirling the pan around so the batter coats the bottom of the skillet evenly. Cook the pancake about 45 seconds, until the edges are starting to curl up. Do not flip the pancake - you're cooking it on one side only. Slide the pancake onto a plate, cutting board or cooling rack. Repeat with the remaining batter until all the pancakes are made. Wait to stack the pancakes until they are fully cooled or they will stick together.
  • Dollop about 2 Tablespoons of the potato filling in a rectangular shape in the middle of the pancake.

POTATO BLINTZES FROM HEALTHY JEWISH COOKING BY STEVEN RAICHLEN
My wife prefers the smooth texture and earthy flavor of a potato blintz. The sour cream in the filling isn’t traditional, but I like the tangy finish it gives the potatoes.
