During summer, when you have more basil than you know what to do with, make your own pesto. You can freeze pesto in ice cube trays for a real treat in the winter. And go ahead and pick one of those fresh tomatoes in your garden to slice down for this sandwich.

4 slices lightly toasted bread, divided
2 tablespoons basil pesto
1 tomato, sliced
salt and ground black pepper to taste
2 teaspoons light mayonnaise

Steps:

  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until crisp, about 10 minutes. Set aside on a paper towel to drain.
  • Spread 1 tablespoon pesto on the bottom slice of toast. Layer tomato slices and 3 slices bacon over each. Season with salt and pepper. Spread 1 teaspoon mayonnaise on remaining bread slices and place on top of the sandwiches. Cut sandwiches in half to serve.

2 large boneless, skinless chicken breasts
4 Roma tomatoes
1/3 cup flour
2 eggs, beaten
1/2 cup Parmesan cheese
1 cup Panko bread crumbs
Microgreens
4 bread rolls
Mayonnaise, as much as you want
1 cup mint leaves
1/3 cup roasted, salted, shelled pistachios
1 small clove garlic
1/4 teaspoon salt
1/4 cup extra virgin olive oil
1/4 lime, juiced

Steps:

  • Preheat oven to 400 degrees. Cut tomatoes in half lengthwise, arrange on parchment lined baking sheet and roast in oven for 45 minutes, checking after 30 minutes. While the tomatoes are roasting, make the pesto. Put the mint leave, pistachios, garlic and salt into a small food processor and process until coarsely ground. In a steady stream, add the oil and lime juice until it is a consistency you like. Mix pesto and mayonnaise together in a bowl and set aside. This will be used when you layer your sandwiches. Trim chicken breasts and slice in half horizontally. Place chicken between sheets of plastic wrap and pound lightly until they're about 1/2 inch thick. Set up three dishes; one for flour, one for beaten eggs and one for the Parmesan cheese and Panko, mixed together. Season chicken breasts with salt and pepper, dredge in flour, dip in beaten egg and coat with Panko/Parmesan mixture. Set chicken aside on wire racks until ready to cook. Heat olive oil in a skillet over high heat. Add chicken breasts to the pan and immediately reduce the heat to medium-low. Cook chicken for three minutes on each side, or until it's juicy, but not pink. Assemble sandwiches: bread, chicken, tomatoes, microgreens, pesto mayonnaise, bread. Eat and enjoy!

This is an Italian twist on the classic BLT--I call it BPT (Bacon Pesto Tomato). I came up with this recipe one day by just throwing a sandwich together with things I had leftover in my fridge. It was unexpected how delicious it was!

½ cup shelled, salted whole pistachios
1 lime, juiced
1 bunch fresh cilantro
3 cloves garlic
½ cup olive oil
salt and ground black pepper to taste
2 slices turkey bacon
2 slices whole wheat sandwich bread
olive oil, or as needed, divided
4 slices Roma tomato
salt and pepper to taste
½ cup shredded Parmesan cheese

Steps:

  • Combine pistachio nuts, lime juice, cilantro, and garlic in the bowl of a food processor; pulse until blended. Pour olive oil in slowly, with the processor running, until pesto is smooth. Season with salt and pepper; set aside.
  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until crisp, about 10 minutes. Remove bacon from pan and drain on paper towels. When cool enough to handle, tear each strip of bacon in 1/2 so you have 4 pieces.
  • Brush both sides of bread slices with 1 tablespoon olive oil. Place remaining olive oil in the skillet. Cook bread in the skillet over medium heat, turning as necessary, until both sides are browned, 3 to 4 minutes. Remove bread from pan.
  • Meanwhile, season tomato slices liberally with salt and pepper.

Steps:

  • In a small saucepan cook garlic in oil over moderately low heat, stirring, until softened and cool. In a small food processor or blender purée tomatoes, basil, oil mixture, and vinegar until pesto is smooth.
  • In a bowl toss steak with half of pesto and spread remaining pesto on bread. Divide steak among 4 bread slices and top with remaining 4 slices.

8 slices thick-cut bacon
1/2 cup pine nuts
4 garlic cloves (see Cook?s Note)
2 cups lightly packed basil leaves, stems removed
1/2 cup plus 2 tablespoons olive oil
1 1/2 cups grated Parmesan, plus more for sprinkling
Kosher salt and freshly ground black pepper
4 croissants or your favorite bread
4 large eggs
Nonstick cooking spray

Steps:

  • Preheat the broiler. Line a broiler pan or baking sheet with aluminum foil.
  • Place the bacon on the pan and broil until the bacon begins to brown and shrivel, 3 to 5 minutes. Flip the bacon, and continue to cook until crispy, about 3 to 5 minutes depending on how hot your broiler is. Transfer the bacon to a paper towel-lined plate to drain.
  • Meanwhile, lightly toast the pine nuts by heating them in a medium dry skillet set over medium heat, shaking the pan frequently, until they just begin to turn golden, 3 to 4 minutes. Keep an eye on them, because they toast pretty quickly.
  • Combine the toasted pine nuts and garlic in a food processor or blender until a paste forms. Add the basil and continue processing until a creamy, green paste has formed. With the motor running, slowly pour in 1/2 cup olive oil, processing until the oil is fully incorporated. Transfer the paste to a bowl and fold in 1 cup Parmesan with a rubber spatula. Season to taste with salt and pepper. Set aside.
  • Split the croissants and broil on a baking sheet until golden, 1 to 2 minutes. Set aside.
  • Heat the remaining 2 tablespoons oil in a large skillet over medium heat. Spray 4 egg rings with cooking spray. Put the rings in the skillet and crack 1 egg into each rings. Cover the skillet to trap the steam and cook until the eggs set, 2 to 3 minutes. Season with salt and pepper.
  • Spread the pesto on the cut sides of each croissant. Place 2 slices of bacon on each croissant, top with an egg and sprinkle with more Parmesan. Enjoy!
