Roasted Potatoes with Greens image

Roasted potatoes mingle with fresh spinach in a sauce of garlic, butter, sea salt and fresh rosemary. Finish with a drizzle of olive oil and/or a good shredded hard cheese like Parmesan or Pecorino if you like.

6 small red potatoes, quartered
2 tablespoons butter
2 cloves garlic, minced
1 tablespoon fresh rosemary, chopped
sea salt and ground black pepper to taste
1 cup fresh spinach leaves

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Place the potatoes in a single layer in a ceramic casserole dish. Melt the butter in a skillet over medium heat. Add garlic, and cook until golden. Stir in the rosemary, and cook just until fragrant. Pour over the potatoes in the dish. Season with sea salt and pepper.
  • Roast uncovered for about 30 minutes in the preheated oven, until the potatoes are fork tender. Remove from the oven, and toss with the spinach leaves. Return to the oven for 1 to 2 minutes, until the spinach has wilted.

Martha's recipe was inspired by a potato puree from the restaurant Eleven Madison Park.

Yield Makes 4 cups

Number Of Ingredients 8

3 pounds Russet potatoes, peeled and cut into 2-inch pieces
1 1/2 sticks unsalted butter
4 sprigs fresh thyme
2 cloves garlic, peeled and crushed
1 1/2 cups heavy cream
1/2 cup milk
2 teaspoons sea salt
Freshly ground white pepper

Steps:

  • Fill a large pot with about 2 inches water. Set steamer basket in pot (water should not come through the holes). Bring to a boil, and then reduce to a rapid simmer.
  • Add potatoes to steamer basket and steam until tender when pierced with a knife, 25 to 30 minutes.
  • Meanwhile, melt the butter in a medium saucepan over medium heat. Simmer, whisking occasionally, until the butter is deep golden brown, 5 to 10 minutes. Place the thyme and garlic in a fine mesh sieve lined with cheesecloth. Strain the butter over the garlic and thyme into a medium bowl, add cream, and whisk to combine.
  • Remove potatoes from steamer basket. Drain, and immediately press through a medium mesh sieve into a large bowl using a rubber spatula. Fold the cream mixture into the potatoes. Press mixture through a fine mesh sieve. Season with salt and pepper and serve immediately.

1 1/2 lbs Yukon potato peeled & cubed
1 tablespoon curry powder
1 tablespoon ground cumin
1 tablespoon mustard seeds
1 tablespoon salt
1/2 cup chopped flat leafed parsley
1/2 cup chopped fresh spinach
1/2 cup chopped roasted red pepper (from a jar or roasted over flame and peeled)
1 small onion chopped fine
1 fresh jalapeno, chopped fine (optional)
1/2 cup chopped cucumber
1/2 cup plain yogurt
1/3 cup fresh lemon juice
salt and pepper to taste
2 tablespoons lemon zest and parsley leaves (for garnish)

Steps:

  • Place in potatoes, curry powder, cumin, mustard seeds and salt in boiling water for about 10 min. till potatoes are just done. Let drained potatoes cool.
  • Add the parsley, spinach, red pepper, onion, jalapeno, and cucumber and mix. Blend the dressing to taste and add to the salad. Mix and garnish with lemon zest and parsley.

2 tablespoons unsalted butter
1 medium yellow onion, roughly chopped
2 garlic cloves, minced
1 ounce fresh ginger, peeled and thinly sliced (1/2-inch chunk)
1/4 teaspoon ground cardamom
1/2 fresh jalapeno, seeds and ribs removed, and left whole
2 lbs sweet potatoes, peeled and cut into 1-inch cubes (about 4 medium)
chicken broth
1 teaspoon kosher salt, more to taste
1/2 cup heavy cream (optional)
1 tablespoon fresh lime juice
1 tablespoon light brown sugar
fresh ground white pepper
1/2 cup plain yogurt (nonfat or low-fat)
1/2 apple, peeled, cored, and finely diced (such as Gala or Pink Lady)
1/4 cup chopped of fresh mint
1/2 teaspoon finely minced fresh jalapeno, more to taste
kosher salt & freshly ground black pepper

Steps:

  • Make the soup: Melt the butter in a soup pot over low heat. Cook the onion in the butter, stirring occasionally, until very soft but not browned, 10 to 13 minutes. Add the garlic, ginger, and cardamom and cook for another minute. Increase the heat to high and add the jalapeno, sweet potatoes, 4 cups of the broth, and the salt. Bring to a boil, reduce the heat to medium low, cover, and simmer until the potatoes are very soft, 15 to 20 minutes.
  • In a blender, purée the soup in batches until very smooth. Rinse and dry the pot and return the puréed soup to it. Add the remaining broth and the cream, if using, and bring to a simmer over medium-low heat. Add the lime juice and brown sugar, and season with salt and white pepper to taste.
  • Make the raita: While the soup is simmering, combine the yogurt, apple, mint, and jalapeño in a small bowl. Season with salt and pepper to taste. Refrigerate until ready to serve.
  • To serve: Ladle the soup into individual bowls and add a dollop of the raita.

1/2 red red bell pepper, finely chopped

Steps:

  • 1. Boil the potato in lightly slated water to cover until tender, then peel it, and chop it finely. Then, place the cumin and black peppercorns in a small nonstick saucepan and dry-roast over medium-high heat until they are fragrant and a few shades darker, about 2 minutes. Let cool, then grind coarsely in a mortar and pestle or a spice grinder. 2. Place the yogurt in a serving bowl, mix in the potato, salt, and half the ground cumin-pepper mixture. 3. Add the chives and swirl lightly to mix, with a few of them as a garnish.
