Use an ice cream scoop to get the perfect serving of mashed potatoes to put on top of your meatloaf in this recipe from Food Network.

Provided by Food Network

Categories     main-dish

Time 1h35m

Yield 8 servings

Number Of Ingredients 27

Nonstick cooking spray
1 cup crumbled butter crackers
1 cup oats
15 ounces ground chuck
15 ounces ground pork
2/3 cup diced onion
2/3 cup whole milk
1/2 cup chopped fresh parsley
1/2 cup diced celery
1/3 cup ketchup
1/4 cup diced green pepper
2 tablespoons Worcestershire sauce
1 teaspoon kosher salt
1 teaspoon freshly ground black pepper
1 teaspoon paprika
1 teaspoon yellow mustard
1/2 teaspoon dried marjoram
1/2 teaspoon dried thyme
1/2 teaspoon seasoned salt
2 eggs, lightly beaten
2 pounds potatoes
Salt
2 tablespoons milk
2 tablespoons sour cream
2 ounces unsalted butter, softened
Freshly ground black pepper
Your favorite gravy, for serving

Steps:

  • For the meatloaf: Preheat the oven to 350 degrees F. Grease a muffin pan with nonstick cooking spray.
  • Combine the cracker crumbs, oats and milk to soften in a medium bowl. Combine the ground chuck, ground pork, onions, milk, parsley, celery, ketchup, green peppers, Worcestershire sauce, salt, pepper, paprika, mustard, marjoram, thyme, seasoned salt and eggs in a large bowl. Add the oats mixture and mix well, but do not over-mix.
  • Portion the meat mixture into eight 8-ounce cupcakes and place into the prepared muffin pan. Smooth the tops of each portion. Bake until the internal temperature reaches 165 degrees F, about 30 minutes. Unmold and set on paper towels to absorb any additional liquid. (The meatloaf can also be cooked in a loaf pan.)
  • For the mashed potatoes: Peel the potatoes and cut into 1-inch pieces. Place in a pot covered with cold salted water and bring to a boil. Cook until the potatoes are fork tender, 15 to 20 minutes. Drain well. Place the potatoes, milk, sour cream and butter in a mixing bowl and mash until smooth. Season with salt and pepper.
  • For immediate enjoyment, using ice cream scoop, scoop the potatoes on top of a meatloaf cupcake. Serve with your favorite gravy.

BACON WRAPPED MEATLOAF CUPCAKES WITH MASHED POTATO TOPPING RECIPE - (4.3/5)

Bacon Wrapped Meatloaf Cupcakes with Mashed Potato Topping Recipe - (4.3/5) image

Provided by PineyCook

Number Of Ingredients 16

1 1/2 pounds ground beef
1 cup bread crumbs
1 onion, finely diced
1 egg, lightly beaten
1 1/2 teaspoon salt
1/2 teaspoon pepper
1 (8 ounce) can tomato paste
2 tablespoons brown sugar
1 1/2 tablespoons Dijon mustard
1 1/2 tablespoons Worcestershire sauce
12 slices bacon
5 potatoes
1/4 cup Cheddar cheese, shredded
2 tablespoons butter
1/4 cup milk
1/2 teaspoon salt

Steps:

  • Preheat oven to 350 degrees F. MEATLOAF: Line your muffin tin with the bacon so that each tin is circled by one strip. Mix together the beef, bread crumbs, onion, egg, salt, pepper, tomato paste, sugar, mustard, and Worcestershire sauce. Form the meat into 12 equally sized balls and place them into the bacon-lined muffin tins. Fold the top of the bacon over, if needed. Pop them into the oven for 45 minutes to 1 hour, or until the meat is cooked through and the bacon is crisp. POTATOES: While the meatloaf is cooking, prepare your mashed potatoes. Dice up the potatoes and boil them in salted water until they're soft. Drain the potatoes, pop them into a mixing bowl, and mash them with a fork until they're completely smooth. Add your butter, cheese, milk, salt, etc and mix until fully combined. Move your mashed potatoes into a piping bag (or a zip-lock with an edge cut off) and save it until the meatloaf is ready. CUPCAKE: Once the meatloaf is ready, take them out of the oven, and pipe them with the mashed potatoes! After they're all piped, pop them back into the oven, and turn your heat up to 400-500 degrees F. Heat until the tops of the potatoes are golden brown (it should be very quick - no more than 5-6 minutes). Remove them from the oven, let cool for a bit, and enjoy!

Provided by Betsy Carter

Categories     Lunch

Time 50m

Yield 12 meatloafs

Number Of Ingredients 12

1 tablespoon olive oil, plus more for greasing
1 small yellow onion, diced
1 clove garlic, minced
¾ cup panko breadcrumbs
½ cup whole milk
1 lb ground beef
1 large egg, beaten
¼ cup fresh parsley, finely chopped
1 teaspoon worcestershire sauce
2 teaspoons kosher salt
½ teaspoon freshly ground black pepper
2 tablespoons ketchup

Steps:

  • Preheat the oven to 350°F (180°C). Grease a standard muffin tin with olive oil.
  • Heat the olive oil in a large pan over medium-high heat. Once the oil begins to shimmer, add the onion and cook, stirring often, until softened and golden brown, about 7 minutes. Add the garlic and cook, stirring constantly, until aromatic, about 1 minute. Remove the pan from the heat and let cool to room temperature.
  • In a large bowl, stir together the panko and milk. Add the ground beef, egg, parsley, Worcestershire sauce, salt, pepper, and onion mixture and use your hands to combine.
  • Divide the meat mixture evenly between the greased muffin cups, making sure not to overfill. Brush the tops with ketchup.
  • Bake until the tops are browned and the internal temperature reaches 160°F (70°C), about 30 minutes.
  • Serve warm, or, if not serving immediately, let the meatloaves cool completely, then store in an airtight container in the refrigerator for up to 3 days, or in the freezer for up to 3 months.
  • Enjoy!
