I found this in a magazine a while back and have been using it since! Very good . Oprah's Classic Potatoes

Yield 10-12 cups

Number Of Ingredients 7

2 1/2 lbs red potatoes
2 1/2 lbs idaho potatoes
1 1/4 cups butter
1 1/4 cups creamy pureed horseradish
1 1/2 cups heavy cream
2 1/2 teaspoons kosher salt
1 1/2 teaspoons fresh black pepper, ground

Steps:

  • Wash potatoes well, leaving the skins on.
  • Cut the potatoes in half lengthwise. Place in a kettle and fill with enough water to cover potatoes.
  • Bring to a boil, reduce heat and simmer until potatoes are very tender.
  • Drain well and add butter while potatoes are hot. Begin to hand mash.
  • Add all remaining ingredients and mash well leaving them just slightly lumpy.
  • Makes about 10-12 cups or 6 to 8 servings.

I usually serve these colorful potatoes for breakfast but they're great as a tasty potato side dish for just about any meal. My family often asks me to prepare them instead of regular fried potatoes.-Nila Towler, Baird, Texas

Number Of Ingredients 8

1/2 cup chopped onion
1/2 cup chopped green pepper
1/2 cup chopped sweet red pepper
4 medium red potatoes, cubed
3 tablespoons canola oil
1/4 cup beef broth
1/2 teaspoon Worcestershire sauce
1 teaspoon salt

Steps:

  • In a large skillet, saute the onion, peppers and potatoes in oil for 4 minutes or until vegetables are crisp-tender. Meanwhile in a small bowl, combine the broth, Worcestershire sauce and salt; pour over vegetables. , Cover and cook for 10 minutes or until potatoes are tender, stirring occasionally. Uncover and cook until for 3-4 minutes or until liquid is absorbed.

I got this recipe many years ago, but I can't remember if it was on Oprah's TV show or published in a book. Not only is it delicious, but it has Vitamin A from the turnips.

Number Of Ingredients 5

12 ounces idaho potatoes, peeled and cut into 1-inch chunks, should be about 2 and 1/2 cups
8 ounces turnips, peeled and cut into 1-inch chunks, about 1 and 1/2 cups
1/2 cup chicken broth
6 tablespoons butter, divided
salt and fresh pepper

Steps:

  • In a 3 quart saucepan bring the vegetables, broth, and 4 Tbsp.butter to a boil. Reduce heat to low, cover and simmer 15 minutes or until vegetables are almost tender. Uncover and cook 8 to 10 minutes more until vegetables are tender and liquid has almost evaporated. Stir occasionally to prevent the vegetables from sticking. Remove from heat and mash. Add the remaining 2 tablespoons butter, and add salt and pepper to taste.

Mashed potatoes are Oprah's weakness-but made low-fat, without the butter, this dish is a healthy alternative. Yukon Gold potatoes add smooth buttery texture and horseradish a great zesty flavor with fewer calories.

1 1/2 lbs yukon gold potatoes, scrubbed
1 lb red potatoes, scrubbed
1 cup evaporated skim milk
1/2 cup chicken broth, defatted (To Defat Broth, Freeze broth for 30 mins until fat solidifies.)
2 tablespoons Butter Buds
1 tablespoon prepared white horseradish
1 tablespoon spike seasoning (salt substitute)
1/4-1/2 teaspoon fresh ground pepper

Steps:

  • Cut potatoes into 1 ½-inch piece.
  • Place potatoes and water to cover in large saucepan.
  • Bring to a boil then reduce heat to low.
  • Cover and simmer until potatoes are tender about 20 minutes.
  • Drain and return potatoes to saucepan.
  • Combine evaporated milk and broth in microwave-proof bowl and microwave on high for 1 minute.
  • Add to potatoes and mash until creamy but slightly lumpy.
  • Stir in remaining ingredients.
