These Sloppy Joe baked potatoes are from a recipe that was given to me, and I made some changes to suit my family. Quick, hearty, and easy!

4 russet potatoes, scrubbed
1 tablespoon olive oil
1 small onion, finely chopped
½ green bell pepper, finely chopped
1 teaspoon minced garlic
1 pound ground beef
¼ teaspoon kosher salt
¼ teaspoon freshly ground black pepper
⅔ cup ketchup
½ cup sweet chili sauce
1 tablespoon chili powder
¼ teaspoon garlic powder
1 cup shredded Cheddar cheese

Steps:

  • Prick potatoes several times with a fork and place onto a microwave-safe plate. Microwave for 8 minutes. Turn potatoes over and microwave until tender, about 7 minutes more.
  • While the potatoes are cooking, heat olive oil in a large skillet over medium heat. Add onion, bell pepper, and garlic; cook, stirring occasionally until vegetables are tender, about 7 minutes. Add ground beef, salt, and pepper. Cook, breaking up the meat with a wooden spoon, until no longer pink on the surface, about 6 minutes.
  • Stir in the ketchup, chili sauce, chili powder, and garlic powder; continue cooking until the ground beef is cooked through, 3 to 5 minutes.
  • Split the baked potatoes open lengthwise and gently fluff the flesh with a fork. Top with the hot beef mixture and sprinkle with Cheddar cheese.

1 lb. lean ground beef
1/2 cup chopped onion
1/2 cup chopped green bell pepper
1 (15.5-oz.) can sloppy Joe sandwich sauce
1 1/2 cups frozen corn
2 cups water
1/4 teaspoon garlic salt
2 cups mashed potato flakes
1/4 cup sour cream
1 egg, beaten
2 oz. (1/2 cup) shredded Cheddar cheese

Steps:

  • Heat oven to 325°F. In large skillet, brown ground beef, onion and bell pepper over medium-high heat until beef is thoroughly cooked, stirring frequently. Drain.
  • Add sandwich sauce and corn; mix well. Reduce heat; simmer 4 to 6 minutes or until thoroughly heated and corn is crisp-tender, stirring occasionally.
  • Meanwhile, in medium saucepan, bring water and garlic salt to a boil. Remove saucepan from heat; stir in potato flakes until well blended. Add sour cream and egg; mix well.
  • Spoon beef mixture into ungreased shallow 2-quart casserole. Spoon potato mixture in circle around edges of casserole. Sprinkle potatoes with cheese.
  • Bake at 325°F. for 25 to 30 minutes or until potatoes are set. If desired, sprinkle potatoes with chopped fresh parsley.

Cheesy potato casserole is a gooey, creamy, potato side dish made with diced hash brown potatoes slathered with cheesy, cream sauce, bacon, and green onions.

32 oz diced hash browns (thawed)
1/2 lb raw bacon (diced)
1 yellow onion
4 garlic cloves
1/4 cup flour
1 cup chicken stock
2 cups whole milk (can use 2%)
4 oz cream cheese
1/2 cup sour cream
1/3 cup diced green onion
8 oz shredded sharp cheddar cheese
salt
cracked black pepper
1/2 lb raw bacon (diced)
6 oz shredded sharp cheddar cheese
2-3 tbsp diced green onion

Steps:

  • Preheat oven to 350° and grease a 9x13 casserole dish.
  • Preheat a large sauce pot over medium heat and saute 1/2 lb of diced bacon until most of the fat is rendered and it starts to crisp.
  • Add diced onion and saute until softened. Press garlic and stir it into the bacon and onion mixture.
  • Sprinkle flour all over bacon and onions and stir until completely incorporated throughout.
  • Slowly pour in chicken stock while stirring and mix until flour is incorporated.
  • Pour in milk and let it cook until sauce starts to thicken. Season with salt and pepper and add cream cheese and sour cream.
  • Stir until cream cheese is incorporated and add shredded cheese. Keep stirring slowly until cheese is melted and take off heat.
  • Stir in diced green onions.
  • In a separate cooking pan, saute remaining diced bacon for the topping. (Don't make it too crispy because it will continue to cook on top of the casserole.)
  • Pour diced hash browns into a large mixing bowl and add the cheesy sauce. Mix it together until evenly incorporated throughout.
  • Pour potato mixture into a greased 9×13 baking dish.
  • Spread more cheese over the top and cooked bacon pieces over cheese. Bake for about 40 minutes.

These homemade Sloppy Joe recipe is made with just a few simple household staples as ingredients. They're Whole30 and Paleo compatible, and best of all, your whole family will love them! Serve on baked potatoes or with crispy potato wedges.

1 lb. ground beef ((I use 85%))
1/2 cup red bell pepper, diced
2 cloves garlic
3 Tablespoons minced red onion (about 1/4 medium onion)
1/4 cup ketchup
1/8 cup beef or vegetable broth
1/4 cup canned diced tomatoes
1.5 Tablespoons tomato paste
1 teaspoon Salt
1.25 teaspoon cumin
1.25 teaspoons Chili powder
¼ teaspoons Garlic powder
¼ cup full fat coconut milk (chilled (use the creamy/thick part and save the liquid for another time))
1 Tablespoon lime juice
Salt and pepper to taste

Steps:

  • Mix together all ingredients. Cover and keep chilled until ready to serve.
  • Brown the beef, breaking it apart with a spatula as it begins to cook.
  • Stir in the onion, garlic, and bell pepper. Saute until softened, about 3-5 minutes, stirring occasionally.
  • Add the tomato paste, ketchup, broth, and diced tomatoes. Bring the mixture to a simmer.
  • Stir in the cumin, chili powder, garlic powder, and salt. Cook together for about 5-8 more minutes or until thickened slightly. If you need to thin it out, add a little liquid from the canned tomatoes or beef broth, one tablespoon at a time.
  • Spoon the mixture into bowls. Serve with baked potatoes or fries and top with a dollop of the sour cream.
