SLOPPY JOE BAKED POTATOES
These Sloppy Joe baked potatoes are from a recipe that was given to me, and I made some changes to suit my family. Quick, hearty, and easy!

Steps:
- Prick potatoes several times with a fork and place onto a microwave-safe plate. Microwave for 8 minutes. Turn potatoes over and microwave until tender, about 7 minutes more.
- While the potatoes are cooking, heat olive oil in a large skillet over medium heat. Add onion, bell pepper, and garlic; cook, stirring occasionally until vegetables are tender, about 7 minutes. Add ground beef, salt, and pepper. Cook, breaking up the meat with a wooden spoon, until no longer pink on the surface, about 6 minutes.
- Stir in the ketchup, chili sauce, chili powder, and garlic powder; continue cooking until the ground beef is cooked through, 3 to 5 minutes.
- Split the baked potatoes open lengthwise and gently fluff the flesh with a fork. Top with the hot beef mixture and sprinkle with Cheddar cheese.

- Heat oven to 325°F. In large skillet, brown ground beef, onion and bell pepper over medium-high heat until beef is thoroughly cooked, stirring frequently. Drain.
- Add sandwich sauce and corn; mix well. Reduce heat; simmer 4 to 6 minutes or until thoroughly heated and corn is crisp-tender, stirring occasionally.
- Meanwhile, in medium saucepan, bring water and garlic salt to a boil. Remove saucepan from heat; stir in potato flakes until well blended. Add sour cream and egg; mix well.
- Spoon beef mixture into ungreased shallow 2-quart casserole. Spoon potato mixture in circle around edges of casserole. Sprinkle potatoes with cheese.
- Bake at 325°F. for 25 to 30 minutes or until potatoes are set. If desired, sprinkle potatoes with chopped fresh parsley.

LOADED CHEESY POTATO CASSEROLE
Cheesy potato casserole is a gooey, creamy, potato side dish made with diced hash brown potatoes slathered with cheesy, cream sauce, bacon, and green onions.

- Preheat oven to 350° and grease a 9x13 casserole dish.
- Preheat a large sauce pot over medium heat and saute 1/2 lb of diced bacon until most of the fat is rendered and it starts to crisp.
- Add diced onion and saute until softened. Press garlic and stir it into the bacon and onion mixture.
- Sprinkle flour all over bacon and onions and stir until completely incorporated throughout.
- Slowly pour in chicken stock while stirring and mix until flour is incorporated.
- Pour in milk and let it cook until sauce starts to thicken. Season with salt and pepper and add cream cheese and sour cream.
- Stir until cream cheese is incorporated and add shredded cheese. Keep stirring slowly until cheese is melted and take off heat.
- Stir in diced green onions.
- In a separate cooking pan, saute remaining diced bacon for the topping. (Don't make it too crispy because it will continue to cook on top of the casserole.)
- Pour diced hash browns into a large mixing bowl and add the cheesy sauce. Mix it together until evenly incorporated throughout.
- Pour potato mixture into a greased 9×13 baking dish.
- Spread more cheese over the top and cooked bacon pieces over cheese. Bake for about 40 minutes.

- Mix together all ingredients. Cover and keep chilled until ready to serve.
- Brown the beef, breaking it apart with a spatula as it begins to cook.
- Stir in the onion, garlic, and bell pepper. Saute until softened, about 3-5 minutes, stirring occasionally.
- Add the tomato paste, ketchup, broth, and diced tomatoes. Bring the mixture to a simmer.
- Stir in the cumin, chili powder, garlic powder, and salt. Cook together for about 5-8 more minutes or until thickened slightly. If you need to thin it out, add a little liquid from the canned tomatoes or beef broth, one tablespoon at a time.
- Spoon the mixture into bowls. Serve with baked potatoes or fries and top with a dollop of the sour cream.

- In a large frying pan brown your ground beef. You want to cook it until the juices run clear and it's browning. But don't overcook it. Nothing worse than overcooked ground beef, it won't absorb sauces well like that. Make sure you stir it often and break it up into little pieces.
- Once the ground beef is cooked to perfection you can add both cans of the Manwich. Let it get to a nice bubble, then turn it down to a simmer.
