- Preheat oven to 325 degrees F (165 degrees C). Grease a 10-inch tube pan with 2 tablespoons butter. Sprinkle pan with 1/4 cup sugar.
- Mix together 2 3/4 cups flour, baking powder and salt. Set aside.
- In a large bowl, cream together 1 cup butter and 2 cups sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla. Gradually beat in the flour mixture. Dredge blueberries with remaining 1/4 cup flour, then fold into batter.
- Pour batter into the prepared pan.
- Bake in the preheated oven for 70 to 80 minutes, or until a toothpick inserted into the center of the cake comes out clean. Let cool in pan for 10 minutes, then turn out onto a wire rack and cool completely.

- In a large bowl, cream butter and sugar until light and fluffy. Beat in extracts. Add eggs, one at a time, beating well after each addition. - 1. In a large bowl, cream sugar and butter, until fluffy. Beat in eggs, one at a time until fluffy. Add vanilla. Mix together the flour and cornstarch and beat into we ingredients.
- 2. Grease a loaf pan and spread batter evenly into it. Place in oven. ( DO NOT PREHEAT ) Bake for 1 hour at 350 degree F., or until pick inserted in center comes out clean. Mine took an extra 3 minutes this time.
- 3. Let cool for about 5 minutes, then carefully remove from pan to a serving platter.
- 4. Enjoy warm, with some warm blueberry sauce or cold with strawberries...that's how my Gram served her
- 5. Sauce: Place berries in a small saucepan, mix sugar, corn starch and cinnamon. Pour over berries. Pour the water over the berries and cook over med heat until thickened and juice is clear. May add more water as you go to thin out to your liking. Remove from heat and serve warm or cold. If gets too thick after cooking, just stir in some water.

- Preheat oven to 300. Can be made in a bundt pan, springform pan or loaf pan. Grease well and set aside.
- Mix juice of one lemon with heavy cream, set aside.
- Cream together butter and sugar. Add eggs one at a time, until well blended. Add vanilla and almond extract.
- Add lemon mixture alternately with flour to creamed mixture, folding after each addition, beginning and ending with flour.
- Fold in zest of one lemon.
- Bake at 300 for 1 hour and 15 minutes or until toothpick inserted in center comes out clean. Cool on a rack, then transfer to a serving plate.
- For glaze, whisk together melted butter, juice, zest and sugar until smooth.
- While cake is cooling, poke holes on top of cake and pour 4 oz. of Limoncello, then pour glaze over cake.
- For sauce, gently boil berries, sugar, port and cinnamon for about 15 minutes. Add the dissolved cornstarch and cook for additional minute. Cool and servce with cake.

- Beat eggs with 1-1/4 cups sugar in medium bowl with electric mixer on medium-high speed until eggs are pale and thick, about 5 minutes. Slowly beat in milk. Slowly add flour blended with baking powder and mix just until blended. Add 1 cup Bertolli® Extra Light™ Tasting Olive Oil and beat just until blended. Turn into prepared pan.
