HOMEMADE PREGO SPAGHETTI SAUCE



Homemade Prego Spaghetti Sauce image

Excellent result with this recipe and it tastes just like my favorite Prego!

4 T. olive oil
2 large Garlic minced
1 onion very finely chopped
2 tsp. dried basil
2 tsp. dried parsley
1 tsp. ground black pepper
1 tsp. dried oregano
2 tsp. salt
7 cups Tomatoes (or 56 oz. canned crushed toms)
1 (28 oz.) can tomato paste
1 (28 oz.) can tomato sauce
1/4 cup granulated sugar

Steps:

  • Heat oil over medium low heat. Add garlic. Stir and cook until golden brown. Be careful not to burn garlic. Add onion and cook until soft and golden, stirring frequently. Add seasonings and tomatoes. Slowly bring to a boil on medium high heat. Let boil for 10 minutes, covered. Reduce to lowest heat. Cover and simmer 1 hour, stirring occasionally. Yield: 12 cups or 3 quarts canned Canning: Fill hot sauce in hot jars and process in pressure canner for 25 minutes. Note: I simmered my fresh tomatoes for 20 minutes but I'm not sure it would matter especially if you are canning the sauce as well.

I never have enough sauce from just a jar alone. I also like the taste of fresh ingredients. I like to combine both in this recipe! The red wine makes all the difference. Serve on favorite noodles with mozzarella cheese and mushrooms on top.

2 tablespoons butter
1 tablespoon extra-virgin olive oil
1 (8 ounce) package sliced fresh mushrooms
1 cup red wine, divided
1 pound ground beef
1 cup diced yellow onion
1 cup diced tomatoes
½ cup chopped red bell pepper
½ cup chopped green bell pepper
¼ cup minced garlic
2 tablespoons oregano
2 tablespoons basil
1 tablespoon rosemary
1 (6 ounce) can tomato paste
1 (28 ounce) jar spaghetti sauce

Steps:

  • Melt butter with olive oil in a small skillet over medium-high heat. Cook and stir mushrooms in butter mixture until softened, 2 to 3 minutes. Add 1/4 cup red wine; bring to a simmer, reduce heat to medium-low, and cook until the mushrooms are very dark and shrunken in size, about 20 minutes.
  • Heat a large pot over medium heat. Cook and stir ground beef, yellow onion, diced tomatoes, red bell pepper, green bell pepper, and garlic together until the beef is completely browned, about 10 minutes; season with oregano, basil, and rosemary. Stir 3/4 cup red wine and tomato paste into the beef mixture. Pour spaghetti sauce into the pot; stir. Return mixture to a simmer and continue cooking until the flavors blend, 10 to 30 minutes.

Steps:

  • Heat oil over medium-low heat, and add garlic. Stir and cook until golden brown. Be careful not to burn the garlic. Add onion and cook until soft and golden stirring frequently. Add seasonings and tomato products. Slowly bring to the boil at a medium-high heat. Let boil for 10 minutes, covered. Reduce to lowest heat, cover loosely, and simmer 1 hour, stirring occasionally. This recipe yields about six cups.

1/2 teaspoon black pepper
1 (28 ounce) can crushed tomatoes
1 (29 ounce) can tomato puree
4 tablespoons sugar
parmesan cheese (optional)

Steps:

  • Brown meat and onion in large skillet, drain. Combine all other ingredients in crock pot, add the meat and onion and parmesan cheese if desired. Cook on low for 6-8 hours. This makes quite a bit but the excess freezes very well.
